SUNKEN EGGS IN A SPINACH NEST
It's a German tradition to have spinach and eggs for Maundy Thursday. My mom used to make it with frozen spinach, a can of mushroom soup and sliced hard-boiled eggs. This version has some of the same ingredients, but baked eggs, not boiled and added potatoes. Don't skip the nutmeg - it really adds authenticity!!

Steps:
- 1. Heat oil in skillet or pot large enough to hold all the spinach. Cook onion until softened, add garlic, cook for another minute.
- 2. Leave a little water clinging to the spinach when you wash it! Add spinach and stir to combine with onion and garlic. Cover pot, lower heat and steam spinach until wilted -about 3 minutes. Stir occasionally. Stir in 2/3 of the milk, remove from heat. (If too liquid, keep on heat and stir until somewhat reduced.)
- 3. In an oven-proof dish, spray with Pam or similar, and spread out the sliced potatoes. Season with salt and pepper. Cover with the spinach mixture. Using a spoon, make 4 egg-sized indentations in the spinach. Carefully crack an egg into each indentation. Sprinkle with nutmeg, salt and pepper. Pour the remaining milk over the spinach and add shredded cheese, being careful that the eggs are not covered.
- 4. Bake at 350ºF for 20-30 minutes, depending on how set you like your eggs. (NOTE: I baked mine for about 25 minutes and the eggs were completely cooked. If you like runny yolks, cook for less time.)

- 1. Preheat the oven to 350° F
- 2. Place the egg whites in a bowl of electric mixer and beat on high speed until stiff peaks form, about 5 minutes (well-beaten egg white should not fall from the spoon when it is turned upside down).
- 3. With a rubber spatula, carefully fold spinach, cheese, salt and pepper into beaten egg whites. Be careful not to over-mix.
- 4. Place slices of bread on a baking sheet and top each with a half of the beaten egg white mixture. Push the egg whites to the sides, creating a hole in the middle of each bread slice for the egg yolk. Carefully pour the egg yolks into the holes. Place the baking sheet in the oven on the middle oven rack, and bake it for 10 minutes, or until the egg whites are completely set and the yolks begin to thicken but are not hard. Serve warm.

- Preheat oven to 400°F.
- Cook onion in butter in a 10-inch heavy skillet over moderate heat, stirring, until softened, about 5 minutes. Add spinach and cook, covered, stirring 2 or 3 times, until wilted, 2 to 3 minutes. Remove lid and cook, stirring, until excess liquid is evaporated, 2 to 4 minutes. Add cream, salt, and pepper and simmer, stirring occasionally, until slightly thickened, 3 to 4 minutes.
- Arrange buttered ramekins in a shallow baking pan and divide spinach among them. Make an indentation in center of each and carefully crack an egg into each indentation. Bake in middle of oven until whites are just set, about 15 minutes.
- Serve eggs in ramekins with bacon and toast.
LEMONY EGG IN A SPINACH-CHICKPEA NEST

- Heat 1 tablespoon olive oil in a medium saute pan over medium heat. Add the spinach along with a pinch of salt and pepper and saute, stirring occasionally, until wilted, about 1 minute.
- Add chickpeas and lemon zest. Carefully smash the chickpeas with a fork while combining the ingredients.
- With a wooden spoon, shape the mixture into a "wreath" with a hole in the middle. Drizzle the remaining teaspoon of olive oil into the hole, and then crack the egg into the hole.
- Cover pan with a lid and cook until egg has cooked through to desired doneness (for me, that's about 3 minutes).
- Use a large spatula to transfer the egg and "nest" to a plate. Some of the edges of the nest may fall off; just put it back into position on the plate.
- Top egg with a little additional salt and pepper, if desired, and squeeze a little fresh lemon juice over the top. Serve.
BIRD'S NEST BREAKFAST CUPS
I got the basics of this recipe from a friend of mine and thought it was a great idea since these little nests can be made ahead, which I love. They are delicious, easy to make, and can be customized to your own tastes. - Preheat oven to 425 degrees F (220 degrees C). Grease 24 muffin cups.
- Mix hash brown potatoes, salt, black pepper, olive oil, and 2/3 cup shredded Cheddar cheese in a bowl. Divide mixture between prepared muffin cups and use your fingers to shape potato mixture into nests with hollows in the middle.
- Bake in the preheated oven until hash browns are browned on the edges and cheese has melted, 15 to 18 minutes. Remove hash brown nests.
- Reduce oven temperature to 350 degrees F (175 degrees C).
- Whisk eggs and water in a bowl until thoroughly combined; season with salt and black pepper. Pour equal amount of egg mixture into each nest; sprinkle with bacon crumbles and 1 teaspoon Cheddar cheese.
- Bake in the oven until eggs are set, 13 to 16 minutes. Let cool in pans and remove by sliding a knife between potato crust and muffin cup.

- Preheat oven to 200d Celsius Lightly grease 4 ramekins (about 9cm diameter) and place on a baking tray.
- Heat a medium sized fry pan over a moderate heat and add the oil to the pan, then add the spinach and season with salt and pepper.
- Cook until the leaves are just softened.
- Drain the spinach in a colander and as soon as spinach is cool enough to handle, squeeze out excess liquid.
- Divide the spinach between the ramekins and break two eggs on top of the spinach.
- Pour one tablespoon of cream over the eggs and sprinkle with one tablespoon of parmesan.
- Bake for 10-12 minutes or until the eggs are set and puffed up.
- Serve immediately with toast.
