1 (16 ounce) package bulk breakfast sausage
1 green onion, chopped
1 (16 ounce) package hash brown potatoes
2 cups shredded Cheddar cheese
6 eggs, lightly beaten
1 cup milk
1 (2.64 ounce) package country gravy mix
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x11-inch baking dish.
  • Cook and stir breakfast sausage in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Mix green onion into sausage and spread mixture over bottom of the prepared baking dish. Spread hash brown potatoes in a layer over sausage; top with Cheddar cheese.
  • Whisk eggs, milk, and gravy mix together in a bowl until smooth; pour over casserole. Season with paprika.
  • Bake in the preheated oven until a knife inserted into the center of the casserole comes out clean, about 1 hour. Let stand 10 minutes to firm up before serving.

8 ounces spicy or sweet turkey sausage links, casings removed, meat crumbled
2 scallions, sliced
6 large eggs and 6 large egg whites
1 3/4 cups 1-percent milk
Kosher salt and freshly ground black pepper
One 9-ounce package frozen chopped spinach, thawed and drained of excess liquid
3/4 cup shredded Cheddar
1/2 cup grated Parmesan
1/2 whole wheat baguette, cut into 3/4-inch cubes (about 4 cups)
Cooking spray

Steps:

  • Heat a large nonstick skillet over medium heat. Add the turkey and scallions and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes. Remove from heat and let cool slightly.
  • Whisk the eggs, egg whites, milk and 1/2 teaspoon each salt and pepper in a large bowl until combined. Add the cooked sausage, spinach, cheeses and bread and toss to distribute the ingredients evenly.
  • Spray a 3-quart casserole dish with cooking spray. Spread the egg mixture evenly in the dish. Cover and refrigerate for at least 6 hours or preferably overnight.
  • Preheat the oven to 350 degrees F. Bake the casserole, uncovered, until set and lightly browned on top, about 30 minutes.

1/2 medium yellow onion, chopped
6 baby bella or button mushrooms, chopped
1/2 bell pepper, chopped
8 oz cream cheese
1 crescent roll sheet or crescent roll can
2 cups colby jack or cheddar cheese, shredded
Optional garnish - 3 green onions, chopped

Steps:

  • Preheat oven according to crescent sheet or crescent roll directions.
  • Brown sausage and veggies in pan on medium heat.
  • Spread and press crescent sheet into 13×9 pan. DO NOT grease or spray pan!
  • Bake crescent sheet for 10 minutes.
  • Once sausage mixture is finished cooking, add in the cream cheese.
  • Allow cream cheese to melt, and mix thoroughly.
  • Once crescent sheet is finished baking, add sausage mixture to crescent sheet.
  • Top sausage casserole with shredded cheese.
  • Place casserole back in oven, and bake for another 5-7 minutes. Or until cheese is melted, and crust is golden.
  • Allow the sausage breakfast casserole to rest for about 5 minutes.
  • Cut into 12 slices, and garnish with green onions.

10 eggs, lightly beaten
3 cups milk
1 teaspoon salt
6 cups cubed bread*
2 cups shredded sharp Cheddar cheese
1/2 teaspoon black pepper
1/2 cup diced red pepper, optional
sliced green onion, optional

Steps:

  • Butter a 9 x 13 x 2 inch casserole dish.
  • In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
  • In large bowl, whisk together eggs, milk, and salt until thoroughly combined.
  • Evenly distribute half the bread into the prepared casserole dish. Sprinkle with half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat layers.
  • Pour egg mixture evenly over casserole.
  • Cover and refrigerate overnight, or bake immediately.
  • When you're ready to bake the casserole, preheat oven to 325 F. Bake uncovered for 55-60 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.

2 slices white bread (I used leftover french bread from dinner the night before. If there is any way you can do this I highly recommend it!)
1 pound breakfast sausage
1 1/2 cups thinly sliced cooked, unpeeled red potatoes
1 1/2 cups mixed cheddar & Monterey Jack cheese, shredded
6 large eggs, lightly beaten
2 cups whole milk
1 teaspoon mustard powder
1/2 teaspoon salt
Black pepper, to taste

Steps:

  • Grease a 2.5-3 quart baking dish (attractive enough to bring to the table) with butter, oil, or cooking spray. Cube the bread and place in the dish in a single even layer. In a large skillet, cook the sausage, breaking it up with a spoon, until it's almost cooked through, about 5 minutes. Drain off the fat. Layer the sausage over the bread, and top with potatoes. Sprinkle the cheese on top. In a medium bowl, whisk together the eggs, milk, mustard powder, salt, and black pepper to taste. Pour the egg mixture over the sausage and potatoes in the casserole. Cover with plastic wrap and refrigerate overnight. When ready to cook the casserole, preheat the oven to 350 degrees fahrenheit. Bake the casserole until set and golden about 30 minutes. Serve hot.

I made this on Sunday for brunch and was able to take a small slice to work for breakfast each day this week. Reheats in the microwave in just 1 minute.

8 - large eggs
1 pound(s) breakfast sausage
1 - red bell pepper
1 - medium yellow onion
16 ounce(s) shredded mozzarella cheese
1/2 cup(s) cream or milk
2 1/2 cup(s) shredded potatoes (hash browns)
- salt
- black pepper
2 tablespoon(s) fresh parsley (for garnish)

Steps:

  • Cook sausage, onion, and red bell pepper in a skillet on the stovetop over med/med-high heat until the sausage is browned and veggies are cooked. Season with a little salt and pepper. Remove from heat.
  • In another skillet, cook hash brown (shredded potatoes) as listed on the package. If you are using fresh potatoes that you have shredded, add 2 Tbsp of vegetable oil to the hot skillet and add potatoes. Spread out potatoes so that they cover the bottom of the skillet. Let them cook until crispy then flip over and crisp up the other side. Remove from heat.
  • In a medium bowl, crack the 8 eggs into the bowl. Add the cream or milk and a little salt and pepper. Beat with a fork until light and fluffy.
  • Spray a 9"x13" baking pan with non-stick butter-flavored cooking spray. Spread cooked hash brown potatoes over the bottom of the baking dish.
  • Next, add the sausage and veggies over the top of the potatoes.
  • Sprinkle 1/2 of the mozzarella cheese over the sausage and veggies.
  • Pour the egg mixture over the top of the casserole.
  • Then add the remaining mozzarella cheese. Sprinkle fresh parsley over the top of the casserole.
  • Bake at 375 for 30-45 minutes until knife inserted comes out clean (casserole will look "set" and edges will be slightly browned and pulling away from edges of baking pan/dish).
  • Let casserole stand for 5-10 minutes. Then cut into 9 pieces. I served this with fresh sliced summer tomatoes.

1lb sausage
1 c diced ham (any kind)
4 medium potatoes, cut into small cubes
1 medium onion, diced
3 mini peppers, diced
2 c shredded cheddar cheese
1 Tbsp minced garlic
1 tsp pepper

Steps:

  • 1. Beat eggs together and set aside.
  • 2. In a large frying pan cook up the sausage. Drain fat.
  • 3. Add the rest of the ingredients to the pan. Cook for 8 minutes.
  • 4. Transfer frying pan ingredients to 13 x 9 casserole dish. Cover with egg mixture top with cheese.
  • 5. Cook at 420 degrees for 25 minutes.

I found this recipe on the Trader Joe's website, but since it didn't exactly fit my family's tastes, I changed it just a litte bit. Also, Sunday is the beginning of the work/school week here in Israel, so this is usually reserved for Friday morning, which is the start of our weekend. Actually, we have this more often for supper on a Thursday night. But I never heard Lionel Ritchie sing Easy Like Thursday Night, so Sunday morning it is.

1 loaf crusty bread, torn to bits
6 eggs
1/4 cup milk
salt and pepper
sweet paprika
1 cup vegetarian sausage, sliced into 1/2 inch thick rounds
1 cup cheddar cheese, grated

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a baking pan (I use olive oil).
  • Distribute the bread pieces evenly in the pan. In my house this means tossing to bowl into the pan and just patting everything into place.
  • Beat the eggs with the milk. Add the salt, pepper, paprika and any other spices and herbs that float your boat. Beat again.
  • Pour this over the bread. Aim for an even distribution.
  • Toss the sausage pieces over the bread. Try to be fair and cover the whole dish evenly.
  • Sprinkle the cheese over the whole thing. Again, aim for an even distribution.
  • Bake for 25 minutes or until the top is golden brown. Stick a knife in the center. If it comes out clean, your breakfast is done.
  • Let cool for about 5 minutes until serving.
