COUNTRY SUNDAY BREAKFAST CASSEROLE
A one-dish casserole with all of your Sunday morning favorites.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 8x11-inch baking dish.
- Cook and stir breakfast sausage in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Mix green onion into sausage and spread mixture over bottom of the prepared baking dish. Spread hash brown potatoes in a layer over sausage; top with Cheddar cheese.
- Whisk eggs, milk, and gravy mix together in a bowl until smooth; pour over casserole. Season with paprika.
- Bake in the preheated oven until a knife inserted into the center of the casserole comes out clean, about 1 hour. Let stand 10 minutes to firm up before serving.

- Heat a large nonstick skillet over medium heat. Add the turkey and scallions and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes. Remove from heat and let cool slightly.
- Whisk the eggs, egg whites, milk and 1/2 teaspoon each salt and pepper in a large bowl until combined. Add the cooked sausage, spinach, cheeses and bread and toss to distribute the ingredients evenly.
- Spray a 3-quart casserole dish with cooking spray. Spread the egg mixture evenly in the dish. Cover and refrigerate for at least 6 hours or preferably overnight.
- Preheat the oven to 350 degrees F. Bake the casserole, uncovered, until set and lightly browned on top, about 30 minutes.

- Preheat oven according to crescent sheet or crescent roll directions.
- Brown sausage and veggies in pan on medium heat.
- Spread and press crescent sheet into 13×9 pan. DO NOT grease or spray pan!
- Bake crescent sheet for 10 minutes.
- Once sausage mixture is finished cooking, add in the cream cheese.
- Allow cream cheese to melt, and mix thoroughly.
- Once crescent sheet is finished baking, add sausage mixture to crescent sheet.
- Top sausage casserole with shredded cheese.
- Place casserole back in oven, and bake for another 5-7 minutes. Or until cheese is melted, and crust is golden.
- Allow the sausage breakfast casserole to rest for about 5 minutes.
- Cut into 12 slices, and garnish with green onions.

- Butter a 9 x 13 x 2 inch casserole dish.
- In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
- In large bowl, whisk together eggs, milk, and salt until thoroughly combined.
- Evenly distribute half the bread into the prepared casserole dish. Sprinkle with half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat layers.
- Pour egg mixture evenly over casserole.
- Cover and refrigerate overnight, or bake immediately.
- When you're ready to bake the casserole, preheat oven to 325 F. Bake uncovered for 55-60 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.
- If desired, sprinkle the casserole with sliced green onions. Serve warm.

- Grease a 2.5-3 quart baking dish (attractive enough to bring to the table) with butter, oil, or cooking spray. Cube the bread and place in the dish in a single even layer. In a large skillet, cook the sausage, breaking it up with a spoon, until it's almost cooked through, about 5 minutes. Drain off the fat. Layer the sausage over the bread, and top with potatoes. Sprinkle the cheese on top. In a medium bowl, whisk together the eggs, milk, mustard powder, salt, and black pepper to taste. Pour the egg mixture over the sausage and potatoes in the casserole. PANTRY BREAKFAST CASSEROLE
I made this on Sunday for brunch and was able to take a small slice to work for breakfast each day this week. Reheats in the microwave in just 1 minute.

- Cook sausage, onion, and red bell pepper in a skillet on the stovetop over med/med-high heat until the sausage is browned and veggies are cooked. Season with a little salt and pepper. Remove from heat.
- In another skillet, cook hash brown (shredded potatoes) as listed on the package. If you are using fresh potatoes that you have shredded, add 2 Tbsp of vegetable oil to the hot skillet and add potatoes. Spread out potatoes so that they cover the bottom of the skillet. Let them cook until crispy then flip over and crisp up the other side. Remove from heat.
- In a medium bowl, crack the 8 eggs into the bowl. Add the cream or milk and a little salt and pepper. Beat with a fork until light and fluffy.
- Spray a 9"x13" baking pan with non-stick butter-flavored cooking spray. Spread cooked hash brown potatoes over the bottom of the baking dish.
- Next, add the sausage and veggies over the top of the potatoes.
- Sprinkle 1/2 of the mozzarella cheese over the sausage and veggies.
- Pour the egg mixture over the top of the casserole.
- Then add the remaining mozzarella cheese. Sprinkle fresh parsley over the top of the casserole.
- Bake at 375 for 30-45 minutes until knife inserted comes out clean (casserole will look "set" and edges will be slightly browned and pulling away from edges of baking pan/dish).
- Let casserole stand for 5-10 minutes. Then cut into 9 pieces. I served this with fresh sliced summer tomatoes.

EASY LIKE SUNDAY MORNING BREAKFAST CASSEROLE
I found this recipe on the Trader Joe's website, but since it didn't exactly fit my family's tastes, I changed it just a litte bit. Also, Sunday is the beginning of the work/school week here in Israel, so this is usually reserved for Friday morning, which is the start of our weekend. Actually, we have this more often for supper on a Thursday night. But I never heard Lionel Ritchie sing Easy Like Thursday Night, so Sunday morning it is.

- Preheat the oven to 350 degrees F.
- Grease a baking pan (I use olive oil).
- Distribute the bread pieces evenly in the pan. In my house this means tossing to bowl into the pan and just patting everything into place.
- Beat the eggs with the milk. Add the salt, pepper, paprika and any other spices and herbs that float your boat. Beat again.
- Pour this over the bread. Aim for an even distribution.
- Toss the sausage pieces over the bread. Try to be fair and cover the whole dish evenly.
- Sprinkle the cheese over the whole thing. Again, aim for an even distribution.
- Bake for 25 minutes or until the top is golden brown. Stick a knife in the center. If it comes out clean, your breakfast is done.
- Let cool for about 5 minutes until serving.
