DATE SHAKES

Steps:

• For each date shake, place 1/4 cup coarsely chopped pitted dates, a handful, in a blender. Add 1 cup cold skim milk and 2 big scoops of French vanilla ice cream. Grate 1/4 teaspoon of fresh nutmeg into blender and blend date shake until smooth.

SUNDAE DATE BOATS

Steps:

• Place banana halves in a dessert boat. Add 2 large scoops ice cream. Remove the lid from the dessert topping jar and heat in microwave for 20 to 30 seconds. Pour warm sauce over ice cream. Top each scoop of ice cream with a big swirl of whipped cream and a cherry. Add 2 spoons and a special someone and this dessert makes a sweet end (or beginning) to a great date night, at home!

GRILLED ZUCCHINI PIZZA BOATS

Steps:

• Preheat a grill for medium heat.
• Slice the zucchinis in half lengthwise. Score the cut side of the zucchinis in a cross-hatch pattern to create 1/2-inch squares across the surface, making sure not to cut through the skin.
• Mix the olive oil with the Italian seasoning, garlic powder, 1 teaspoon salt and red pepper flakes if using. Spread 1 teaspoon oil mix on the cut side of each zucchini, dividing any extra between the zucchinis.
• Lightly oil the grill grates with olive oil. Place the zucchini halves cut-side up on the grill. Close the lid and grill until the skin side has dark grill marks, 5 to 6 minutes.
• Reduce the grill heat to medium-low and flip the zucchini cut-side down. Grill, covered, until softened, marked by the grill and golden brown, about 6 minutes. Flip the zucchinis again so they are cut-side up. Spread 1 tablespoon of pizza sauce onto each zucchini, then sprinkle each with about 2 tablespoons mozzarella and a few pepperonis. Cover and grill until mozzarella is melted, bubbling and starting to brown at the edges, 5 to 6 minutes. Sprinkle with more salt and Italian seasoning.

PINA COLADA SUNDAE

Steps:

• In a small saucepan, heat the butter. Add the sugar and ginger. Stir together until the sugar dissolves. Continue to stir until the sugar starts turning light brown, about 3 to 4 minutes. Add the pineapple chunks, toss to coat, and saute for 2 to 3 minutes to warm the pineapple through.
• Scoop ice cream into each of 4 ice cream dishes.
• Remove the pan from the heat, and add the rum. Using a kitchen torch or igniter, flame the rum, tossing pineapple quickly to extinguish the flames.
• Pour the pineapple flambe over the ice cream, garnish with a maraschino cherry and a ginger cookie.
