BASIL BURGERS WITH SUN-DRIED TOMATO MAYONNAISE
I often end up with a bumper crop of herbs-and here's one of my favorite basil recipes. These burgers feature great Italian flavor. The gooey, cheesy centers and scrumptious topping are irresistible. -Virginia Kochis, Springfield, Virginia

- In a small bowl, combine tomatoes and water. Let stand for 5 minutes; drain. In a food processor, combine mayonnaise and tomatoes; cover and process until blended. Chill until serving., In a large bowl, combine the Worcestershire sauce, basil, Italian seasoning, garlic, pepper and salt. Crumble beef over mixture and mix well. Shape into 12 thin patties. Place 2 tablespoons cheese on six patties; top with remaining patties and press edges firmly to seal., On a greased grill, cook burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with mayonnaise mixture and, if desired, additional basil.

This is so easy to make and so good. It can be served with fresh vegetables, any type of cracker, or, my personal favorite, pita chips.

- In a food processor, mix the sun-dried tomatoes, cream cheese, sour cream, mayonnaise, garlic, hot pepper sauce, salt, and pepper. Process until well-blended. Add basil, and continue processing until smooth. Chill at least 1 hour in the refrigerator before serving.

- Cut the salmon into 1-1/2-inch cubes. Place 2 or 3 of them in the work bowl of a food processor. Add the egg, garlic, shallot, lemon juice, parsley, 1/2 teaspoon salt and a few grinds of black pepper. Pulse until the salmon is pureed and the mixture is the consistency of a thick paste.
- Add the remaining salmon along with the panko crumbs and pulse until the salmon is chopped into small chunks (about 1/2-inch). Do not over process. Transfer the mixture to a bowl.
- Coat the inside of a 1/2-cup measure with nonstick spray and spoon a portion of the salmon mixture into it. Level it off and tap the mixture out onto a large plastic wrap-lined plate.
- Repeat with the remaining salmon. You should get 4 patties. Using the back of a spatula, gently flatten each patty to a thickness of about 5/8-inch.
