GRILLED PESTO SHRIMP

- Thread the shrimp onto skewers, if desired. (I usually don't bother, unless the shrimp are on the smaller side, in which case they might slip through the grill grates.)
- In a food processor or blender, combine the olive oil, basil, garlic, red pepper flakes, salt, Parmigiano-Reggiano and walnuts. Process until the mixture is well blended. Reserve two tablespoons of the pesto in a bowl large enough to hold all of the shrimp and set aside. Pour the remaining pesto over the shrimp and let sit at room temperature for about 30 minutes to marinate.
- Preheat the grill to medium-high heat. Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated. Place the shrimp on the grill and cook until plump and slightly charred, a few minutes per side. Transfer the cooked shrimp to the bowl with the reserved pesto and toss to coat evenly. Serve immediately.

- In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, about 1 minute. Add shrimp and squeeze in half the lemon juice. Season with salt and pepper and cook until shrimp are pink, about 2 minutes per side. Transfer to a plate.
- Deglaze pan with remaining lemon juice. Add chicken broth and linguine and bring to a boil. Cook until most chicken broth is absorbed and pasta al dente, about 10 minutes.
- Remove from heat and toss in pesto, Parmesan, lemon zest, and cooked shrimp. Top with more Parmesan and red pepper flakes and serve.

- If necessary, thaw the shrimp.
- Pat the shrimp dry.
- In a large skillet, heat the olive oil on medium high heat. Add the shrimp and salt. Cook the shrimp for 1 to 2 minutes per side until almost opaque, turning them with tongs.
- Just before shrimp are fully cooked, add the 1/4 cup pesto and continue cooking for 30 seconds, stirring continuously.

SHRIMP AND FRESH PESTO PASTA RECIPE

- Gather your ingredients and start by making the pesto.
- Place the basil and garlic into a food processor and pulse several times.
- With the motor running continuously, slowly add the olive oil through the top funnel to form a thick (but not oily) paste. You may need less olive oil than the recipe states.
- Add the Pecorino and Parmesan and pulse two or three times.
- Finally, add the pine nuts (pignoli) and stir. Taste and add a tiny pinch of salt if needed. Scoop the pesto into a bowl, cover with a tea cloth, and put to one side.
- Cook the tagliatelle according to the packet instructions in a large volume of boiling lightly salted water (approximately 8 to 10 minutes). The pasta should be slightly firm (al dente).
- While the pasta is cooking, check over the shrimp to make sure they are clean and there is no black vein remaining down the back. If there is, wipe with a paper towel.
- Heat the oil in a non-stick skillet to hot, but not smoking. Add the shrimp and fry until the shrimp are pink through to the middle. Remove from the pan and keep warm.
- Add the halved cherry tomatoes to the pan you cooked the shrimp in, sprinkle with a tiny pinch of salt, and cook over a medium for 3 to 4 minutes to soften the tomatoes. Keep warm.
- Drain the pasta reserving a cup of the cooking water.
- Toss the pasta in a large warmed bowl. Stir the pesto through one tablespoon at a time until you have the strength of taste you want; pesto is a very strong flavoured, so be careful not to drown the pasta. If the pasta feels a little dry, add a bit of the cooking water and stir through.
- Add the shrimp and cherry tomatoes, stir again.
- Serve immediately in warmed pasta bowls. The shrimp pesto is also good cold and served as a summer salad.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes; drain.

This is "preppy" because it's pink and green. It's a summer recipe because home gardeners end up with too much basil and too many zucchini in July and August. I like to serve the pesto on the side because it is very potent and this way each person can control the potency.

- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and set aside.
- Add basil leaves, olive oil, lemon juice, garlic, salt, and pepper to a blender. Pulse and stir down. Drizzle in tiny amounts of water and continue to pulse and stir down, then blend to desired consistency.
- Melt butter in the empty pasta pot. Saute shrimp over medium heat until bright pink and opaque, 3 to 5 minutes. Be careful not to overcook. Set aside.
- Add white and light green parts of scallions to the pot and saute over medium heat for about 2 minutes. Add garlic; saute for 1 minute more. Add sliced zucchini and saute over medium-high heat, stirring and turning occasionally, until starting to brown, about 5 minutes. Adjust the heat so zucchini starts to caramelize, but don't cook to mush.
- Quickly stir in 1 to 2 tablespoons water to scrape up the browned bits from the bottom of the pot. Cook for 30 seconds to reduce the liquid, then remove from heat. Stir in shrimp.
- Spoon shrimp and zucchini over the pasta. Garnish with green onion tops. Serve with pesto on the side.

- Boil bowtie pasta in salted water until al dente. Drain pasta and place in a large mixing bowl. Toss pasta in olive oil.
- While the pasta boils, steam shrimp in a steamer basket over boiling water. Time will depend on the size of the shrimp, but you will know they are cooked through when the shrimp is pink and makes a C shape.
- Slice steamed shrimp into bite size pieces and cut cherry tomatoes into quarters. Add them to the mixing bowl with the cooked pasta and basil ribbons.
- In a small mixing bowl whisk together pesto, white balsamic vinegar, salt, pepper, and crushed red pepper. Pour pesto mixture into the large mixing bowl with the rest of the ingredients.
- Toss to combine fully. Top with extra basil and freshly grated parmesan to serve.

- To the bowl of a food processor, add the minced garlic, and roasted almonds. Pulse until the nuts have broken down a little. Add the grated Parmesan cheese and pulse until small chunks remain (careful not to turn it into a paste). Add the herbs, spinach or arugula, lemon juice, salt and pepper. Pulse until the herbs have broken down into small bits, about 1 minute – scrape down sides as needed. Stream in the olive oil while the food processor is running. The pesto should be thick and creamy, yet a little chunky (see photo in post). Either transfer to a bowl to use later with the pasta if making the pasta right away. Or transfer the pesto to a jar an add a thin layer of olive oil over the top of the pesto to keep the herbs from turning brown. Store in the fridge for up to 2 days.
- Before getting started prepare all your ingredients as instructed above. Peal the shrimp, if needed. Cut the mushrooms and zucchini. And get a large pot of water started boiling for your pasta. If the water comes to a boil before you’re ready to use it then turn off the heat, keep the lid on and it will reach a boil really quickly, once you’re ready to cook the pasta.
- Begin heating a large skillet over medium heat. Pat the shrimp dry and season generously with salt and pepper. Once the pan is heated up add the avocado oil, enough to coat the pan well. Add the shrimp in single layer and cook about 2 minutes, on one side, or until the shrimp starts curling in on itself. Flip the shrimp with tongs and cook on the other side for another minute, or until the shrimp is pink, opaque and has curled in on itself. Remove from the pan, to bowl to set aside.
- To the same pan that the shrimp was cooked in add the butter, ghee, or avocado oil. Add the mushrooms and cook over medium low heat, stirring occasionally. Cook for about 5 minutes, or until the mushrooms have gotten nice and tender. Remove the mushrooms from the pan to a dish and set aside. Add the zucchini, and a bit of salt to release the liquid. Cook the zucchini about 3 to 5 minutes, or until the zucchini is tender, yet still crunchy.

- In a large skillet, melt 3 tablespoons olive oil, 2 tablespoons butter over medium heat.
