Easy Fruit Pizza Crust Ingredients:
1 cup flour
1/4 cup powdered sugar
1/2 cup (1 stick, butter, cold and cut into cubes)
Easy Fruit Pizza Filling Ingredients:
1 brick (8 oz, cream cheese, softened)
1/3 cup white sugar
1 teaspoon vanilla
3 mandarin oranges (skins removed and segments separated, OR use 1 small can, mandarin oranges, drained)
3 kiwifruit (skin removed and cut into slices)
1 small can (8 oz, pineapple slices, juice drained and reserved and slices cut into 8 pieces each)
1 small jar (12 oz, maraschino cherries, drained)
Easy Fruit Pizza Glaze Ingredients:
pineapple juice (reserved from can)
water
1 tablespoon white sugar
1 teaspoon lemon juice
1/4 cup cornstarch

Steps:

  • Easy Fruit Pizza Crust Directions:
  • Preheat oven to 350.
  • Add flour and powdered sugar together in a mixing bowl.
  • Add butter and used a pastry blender to cut in the butter. This takes a little time. And will give you an arm workout! Dough will seem like it's not coming together but you can easily press it into the pan.
  • Bake for 10-12 minutes or until just browned. Remove from oven and cool completely.
  • Easy Fruit Pizza Filling Directions:
  • Beat cream cheese, sugar and vanilla together with a mixer. Spread over crust. Top with fresh fruit.
  • Easy Fruit Pizza Glaze Directions:
  • Add pineapple juice to a 1 cup measuring cup. Add water to fill to 1 cup of liquid. Add cornstarch, sugar and lemon juice and mix well. Heat over medium heat, stirring constantly until boiling on the edges. Continue to stir for 1 minute. Remove from heat and let cool slightly. Drizzle over top of fruit.
  • Cut your Easy Fruit Pizza into slices and serve or refrigerate, covered before serving. Store any leftovers covered in the refrigerator.

SUMMERTIME COLD VEGGIE "PIZZA"

Summertime Cold Veggie

The only thing that resembles pizza with this is it has a crust! PERFECT for pot-lucks, holiday picnics and Saturday afternoon lunches.

Provided by Nancy Gregory

Categories     Vegetable Appetizers

Time 40m

Number Of Ingredients 6

2 tube(s) refrigerated crescent rolls
1 pkg ranch style dressing mix
1 pkg 8 ounce, cream cheese, softened
1 c sour cream, fat-free
2 c various raw veggies (see below)
1 c finely shredded cheddar cheese

Steps:

  • 1. PREP, part one: Preheat oven to 350* Lightly grease/spray jelly roll sized pan. Pat out the two rolls of refrigerated crescent rolls, sealing the perforations as you go. Bake until golden brown, 10-12 minutes.
  • 2. PREP, part two: Thinly slice various raw veggies (I like them nearly paper thin, if possible). I use: sweet purple or Vidalia onions, sweet yellow or orange peppers, broccoli, shredded carrots, cherry tomatoes (just cut in half) and every now and then, mushrooms and black olives.
  • 3. While the crust is cooling, whip the softened cream cheese, then add the sour cream and ranch dressing mix. Mix until thoroughly blended and slightly "airy". **NOTE: You can add a couple of tablespoons of already-prepared ranch dressing or mayo to make it easier to spread, if needed.**
  • 4. When the crust is cooled, spread the cream cheese mixture evenly over the crust. Arrange the sliced veggies over the crust and cream cheese mixture. Sprinkle the finely shredded cheddar over top. Serve within one hour as the crust will begin to get soggy. This is SO refreshing at picnics (Memorial Day and Independence Day are my favorites for this) along with a watermelon filled with cut up fruit!

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the softened butter for about 1 minute on medium speed. Get it nice and smooth, then add the sugar and beat on medium speed until fluffy and light in color. Beat in egg and vanilla. Scrape down the sides as needed.
  • In a medium bowl, whisk the flour, salt, baking powder, baking soda, and cornstarch together. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients. Once completely combined, cover the dough tightly and chill in the refrigerator for 30 minutes and up to 1 day. Without chilling, your cookie dough may spread over the sides of the pan.
  • Preheat oven to 350°F (177°C). Grease a 12-inch pizza pan. Remove chilled cookie dough from the refrigerator and press onto the pizza pan in an even flat circle, as pictured above. Bake for 18-20 minutes or until the edges are very lightly browned. Overbaking will lend a hard crust. Allow crust to cool completely before decorating. I put the crust in the refrigerator after 10 minutes of cooling at room temperature – this sped up the process.

  • Start by making the crust. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a stand-up mixer, beat together the softened butter and sugar until light and fluffy, scraping the sides as needed. Add the non-dairy milk and vanilla extract, mixing until fully incorporated. Slowly add the flour mixture to the butter/sugar mixture and mix until a uniform dough forms.Spread the cookie dough evenly into the prepared pizza pan. Poke a few holes in the crust with a fork and bake the crust for 12-15 minutes, until the edges are golden brown and the cookie is baked in the middle. Remove from the oven and place in the refrigerator or freezer to chill.
  • Make the Cream Cheese Filling. To make the filling, scoop out the solids from the coconut milk (top 1/2 of the can) into a medium-sized bowl. Add vegan cream cheeze style spread, sugar, and vanilla and blend with a hand mixer until completely smooth. Refrigerate until ready to use.
  • Assemble the Pizza. Once the cookie has chilled, topped it with the cream cheeze filling, spreading it even with an offset spatula. Return the pizza to the refrigerator to let the filling set up while you prepare the fruit. Slice the strawberries and kiwi. Cut the grapes in half. Top the chilled pizza with fresh berries, decorating them in concentric circles. Brush simple syrup over the berries to give them a shine.
