- In a small bowl, cream butter and sugar until light and fluffy. Beat in egg and extracts. Combine flour, baking powder, baking soda and salt; add to creamed mixture and beat well. Cover and refrigerate for 30 minutes. , Press dough into a greased 12- to 14-in. pizza pan. Bake at 350° for 12-14 minutes or until light golden brown. Cool completely on a wire rack. , For glaze, combine sugar and cornstarch in a small saucepan. Stir in the water and orange juice until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Cool to room temperature, about 30 minutes., For topping, in a small bowl, beat cream cheese and confectioners' sugar until smooth. Add whipped topping; mix well. Spread over crust. Arrange fruit on top. Brush glaze over fruit. Store in the refrigerator.

- Easy Fruit Pizza Crust Directions:
- Preheat oven to 350.
- Add flour and powdered sugar together in a mixing bowl.
- Add butter and used a pastry blender to cut in the butter. This takes a little time. And will give you an arm workout! Dough will seem like it's not coming together but you can easily press it into the pan.
- Bake for 10-12 minutes or until just browned. Remove from oven and cool completely.
- Easy Fruit Pizza Filling Directions:
- Beat cream cheese, sugar and vanilla together with a mixer. Spread over crust. Top with fresh fruit.
- Easy Fruit Pizza Glaze Directions:
- Add pineapple juice to a 1 cup measuring cup. Add water to fill to 1 cup of liquid. Add cornstarch, sugar and lemon juice and mix well. Heat over medium heat, stirring constantly until boiling on the edges. Continue to stir for 1 minute. Remove from heat and let cool slightly. Drizzle over top of fruit.
- Cut your Easy Fruit Pizza into slices and serve or refrigerate, covered before serving. Store any leftovers covered in the refrigerator.
SUMMERTIME COLD VEGGIE "PIZZA"
The only thing that resembles pizza with this is it has a crust! PERFECT for pot-lucks, holiday picnics and Saturday afternoon lunches.

- 1. PREP, part one: Preheat oven to 350* Lightly grease/spray jelly roll sized pan. Pat out the two rolls of refrigerated crescent rolls, sealing the perforations as you go. Bake until golden brown, 10-12 minutes.
- 2. PREP, part two: Thinly slice various raw veggies (I like them nearly paper thin, if possible). I use: sweet purple or Vidalia onions, sweet yellow or orange peppers, broccoli, shredded carrots, cherry tomatoes (just cut in half) and every now and then, mushrooms and black olives.
- 3. While the crust is cooling, whip the softened cream cheese, then add the sour cream and ranch dressing mix. Mix until thoroughly blended and slightly "airy". **NOTE: You can add a couple of tablespoons of already-prepared ranch dressing or mayo to make it easier to spread, if needed.**
- 4. When the crust is cooled, spread the cream cheese mixture evenly over the crust. Arrange the sliced veggies over the crust and cream cheese mixture. Sprinkle the finely shredded cheddar over top. Serve within one hour as the crust will begin to get soggy. This is SO refreshing at picnics (Memorial Day and Independence Day are my favorites for this) along with a watermelon filled with cut up fruit!

- 1. Crust-Combine graham cracker crumbs, sugar and butter. Press into bottom and up sides of spring-form pan forming a 1/2 "edge. Bake at 350 for 10 minutes and cool.
- 2. Sauce-Cream sauce ingredients and spread on cooled crust.
- 3. Topping-Cover sauce in favorite fruits, (bananas, kiwi, strawberries, pineapple, grapes, blueberries, your choice. I do used canned pinapple and reserve the juice for my glaze.
