Summer Strawberry Salad with Feta image

An easy, beautiful strawberry salad recipe to make all summer long. Arugula greens, feta cheese, cucumber, cherry tomatoes and strawberries in a naturally-sweet vinaigrette with fresh strawberries and balsamic vinegar.

¼ cup sliced strawberries
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon chopped shallot
1 tablespoon fresh lemon juice
2 teaspoons honey or maple syrup
½ teaspoon salt
8-10 ounces arugula or spinach greens (or a 50/50 mixture)
½ cup Italian parsley leaves (tender stems are okay) or basil leaves
1 pound strawberries (hulled and quartered)
1 English (seedless) cucumber (sliced into 1/2-inch chunks, or 3 baby Persian cucumbers, sliced)
1 pint cherry tomatoes (any color) (sliced in half)
¼ cup sliced red onion
½ cup crumbled feta cheese

Steps:

  • Combine all ingredients in a blender or small food processor until smooth and creamy. Dressing will keep refrigerated up to 5 days.
  • Put the arugula in a large salad bowl or a large serving platter. Top with the remaining ingredients and drizzle with 3 tablespoons of the dressing. Toss together gently. Serve with additional dressing on the side.

I was asked to take a salad to a backyard get-together and didn't want to just take the same old thing, so I came up with this recipe, which combines features of several different salads I've had in the past. Look for my recipes for balsamic vinaigrette and creamy orange soy dressings on this site. Both are excellent with this salad.

1 ½ cups walnut pieces
1 pint strawberries, quartered
1 (10 ounce) bag iceberg salad
1 (5 ounce) bag baby spinach
1 (4 ounce) container crumbled feta cheese
1 small red onion, thinly sliced into rings
freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
  • Toast in preheated oven until walnuts start to turn golden brown and become fragrant, 5 to 7 minutes. Let cool, about 5 minutes.
  • Toss toasted walnuts, strawberries, iceberg salad, baby spinach, feta cheese, red onion, and black pepper together in a large bowl.

I love strawberry's. This recipe has all the best. I add candied walnuts, and homemade strawberry vinaigrette dressing. This salad is great for any occasion. My family loves it!! It is super easy and cam be made in just minutes. I also like serving this at brunches, because it is so beautiful. Enjoy!!

STRAWBERRY SALAD
spinach, fresh
blue cheese crumbles
strawberries roughly chopped
CANDIED WALNUTS
1/4 c walnuts, chopped
2 Tbsp brown sugar
1 Tbsp water
STRAWBERRY VINAIGRETTE
5-6 large strawberries, chopped
2 Tbsp balsamic vinegar
2 Tbsp olive oil, extra virgin
2 Tbsp honey
1 Tbsp lemon juice, fresh squeeze
pinch coarse sea salt

Steps:

  • 1. For the salad, add your fresh greens to your salad bowl. You can make this as one big salad or individual ones. I roughly chop the strawberry's and add to the greens. Sprinkle with blue cheese.
  • 2. For the candied walnuts, place the brown sugar in a sauté pan, slowly melt the sugar and add water. Once sugar melted add the walnuts (you can also use almonds) and sauté for a minute or so. Then remove from heat. Top your salad with these. FYI, if they sit they will harden.
  • 3. For the strawberry vinaigrette, add all ingredients to the blender and blend until smooth. Pour desired amount over salad and toss.
