All you need are a few simple ingredients for these Homemade S'mores Brownies. A fast and easy family dessert.

1 cup butter
8 Tablespoons cocoa powder
2 cups sugar
4 eggs
1 teaspoon vanilla
2 1/2 cups flour
pinch salt
2 cups mini marshmallows
4 graham cracker sheets
3 (1.55) ounce Hershey Chocolate Candy Bars

Steps:

  • Preheat oven to 325 degrees
  • Grease a 9 x 13 inch baking pan.
  • In a small saucepan over medium heat, melt butter. Once butter is melted, stir in cocoa until smooth. Pour into a mixing bowl.
  • Then add in sugar and eggs to the mixing bowl and stir together.
  • Add in vanilla, flour, and salt and beat together well.
  • Spoon batter into prepared pan.
  • Bake 25 to 28 minutes, or until cooked through.
  • Remove pan from oven and top with marshmallows, graham crackers, and candy bar pieces. Place pan back in oven and cook for 2-3 more minutes or until marshmallows start to puff up and chocolate pieces start to melt.
  • Allow brownies to cool completely, then cut into squares and serve.

Frozen treat that could be described as a combination of cheesecake, brownies, and a popsicle. Great on a hot day! I came up with it during the spring a couple years ago on a hot day. I was fooling around with chocolate because my whole family are big fans, and after a while messing around, this is what came out :). The way below is just a guideline, and how my family and I prefer it. Please experiment and tweak this recipe to your own tastes, it is very flexible!

16 Oreo cookies
1/2 cup whipping cream or 1/2 cup buttermilk
4 ounces chocolate pudding (I use Jello or Swiss Miss pudding packs, they happen to be 4 oz.)
3 tablespoons whipping cream
1 tablespoon confectioners' sugar
2 teaspoons vanilla
2 (1/2 ounce) packets hot chocolate powder (I use Swiss Miss) or 1/4 cup cocoa powder

Steps:

  • Crust: Crush Oreos until either crumbly, or powdery, depending on how you like your crust.
  • Once the Oreos are to a consistency to your liking, mix in the cream or buttermilk, and mix thoroughly. I advise against using a beater or electric mixer as this may result in a crust more firm than desired.
  • Spread along inside of glass or aluminum bread pan. I personally use a glassware bread pan, as it fits well and is easy to serve.
  • Filling: Mix all ingredients thoroughly. Here using an electric mixer or beater is okay, and may give you a lighter result depending on your personal preference.
  • Final touches: Pour the filling into the crust, either in it, like a pie, or on top, if you want a two layer, brownie style result.
  • If you want to make it into a pie, double the crust, triple the filling, and use a standard pie tin.
  • After it has set flat, put it in the freezer for at least 1-2 hours.
  • Enjoy frozen or let it defrost slightly when you take it out!

Here's what you need: unsalted butter, good-quality semisweet chocolate, unsweetened dutch process cocoa powder, espresso powder, granulated sugar, dark brown sugar, vanilla extract, kosher salt, large eggs, all-purpose flour, flaky sea salt

2 ½ sticks unsalted butter, plus more, softened, for greasing
8 oz good-quality semisweet chocolate, or bittersweet chocolate, 60-70% cacao, roughly chopped
¾ cup unsweetened dutch process cocoa powder, divided
1 tablespoon espresso powder
2 cups granulated sugar
½ cup dark brown sugar, packed
2 teaspoons vanilla extract
2 teaspoons kosher salt
6 large eggs
1 cup all-purpose flour
flaky sea salt, for sprinkling

Steps:

  • Grease a 9x13-inch (23x33-cm) dark metal pan with softened butter, then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.
  • Combine the chopped chocolate, ¼ cup (30 g) of cocoa powder, and espresso powder in a heatproof liquid measuring cup or medium bowl and set aside.
  • Add the butter to a small saucepan over medium heat and cook until the butter just comes to a vigorous simmer, about 5 minutes, swirling the pan occasionally. Immediately pour the hot butter over the chocolate mixture and let sit for 2 minutes. Whisk until the chocolate is completely smooth and melted, then set aside.
  • Combine the granulated sugar, brown sugar, vanilla extract, salt, and eggs in a large bowl. Beat with an electric hand mixer on high speed until light and fluffy, about 10 minutes. It will be similar to the texture of very thick pancake batter.
  • With the mixer on, pour in the slightly cooled chocolate and butter mixture and blend until smooth.
  • Position a rack in the middle of the oven and preheat to 350°F (180°C).
  • Sift in the flour and remaining cocoa powder and use a rubber spatula to gently fold until just combined.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake until lightly puffed on top, about 20 minutes.
  • Remove the baking pan from the oven using oven mitts or kitchen towels, then lightly drop the pan on a flat surface 1-2 times until the brownies deflate slightly. Sprinkle with flaky sea salt.
  • Return the pan to the oven and bake until a wooden skewer inserted into the center of the brownies comes out fudgy but the edges look cooked through, about 20 minutes more. The center of the brownies will seem under-baked, but the brownies will continue to set as they cool.
  • Set the brownies on a cooling rack and cool completely in the pan.
  • Use the parchment paper to lift the cooled brownies out of the pan. Cut into 24 bars and serve immediately.

These brownies are not cake-like. They are more moist and gooey. I always undercook them a bit because we like them very moist.

1/2 cup vegetable oil
1 cup sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon baking powder
1/3 cup cocoa powder
1/4 teaspoon salt
1/2 cup flour

Steps:

  • Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
  • Mix oil and sugar until well blended.
  • Add eggs and vanilla; stir just until blended.
  • Mix all dry ingredients in a separate bowl.
  • Stir dry ingredients into the oil/sugar mixture.
  • Pour into greased 9 x 9 square pan.
  • Bake for 20 minutes or until sides just starts to pull away from the pan.
  • Cool completely before cutting.
  • Note: I usually double the recipe and bake in a 9 x 13 pan. If you double the recipe, you will need to cook longer than 20 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.
