PROVENçAL-STYLE SUMMER VEGETABLE TIAN
This Provençal-style gratin is a dish of summery, simple vegetables cooked just long enough to soften without losing their fresh flavor. With a generous amount of parmesan, and olive oil the tian is both delicious and has an easy-to-execute upscale presentation. Look for veggies that are all around the same diameter and use a mandoline to get uniform slices. Pair this side dish with any classic American or French protein.

- Whisk together oil and garlic, and drizzle evenly over vegetables. Sprinkle with Parmesan. Bake in preheated oven until cheese is lightly golden, and vegetables are tender and begin to char on top, about 25 minutes.

- Preheat oven to 180°C. Place 80ml oil in a saucepan over low heat, add onion, garlic and thyme and cook gently, stirring often, until softened without colouring (20-25 minutes). Remove from pan. Add breadcrumbs and remaining olive oil to pan, increase heat to medium and fry until golden (7-8 minutes). Remove with a slotted spoon and drain on paper towels.
- Thinly slice vegetables into 3mm-4mm-thick rounds with a mandoline or a sharp knife. Spread onion in the base of an oiled 20cm x 30cm casserole, then, starting with zucchini and pressing firmly against the side of the dish, form rows of each vegetable across the dish, standing them up, overlapping and pressing in firmly. Season each row lightly with salt as you go and and tuck a few basil leaves between the layers.
- Drizzle tian with olive oil, then cover casserole with baking paper, then foil and bake until vegetables start to soften (35-45 minutes). Remove foil and paper, and gently press vegetables into the juice with a spatula (this prevents them drying out and compacts them so the tian is easier to slice). Increase oven to 200°C and bake until vegetables soften and juices thicken (20-30 minutes). Sprinkle with cheeses, scatter with reserved breadcrumbs and bake until cheese is melted and golden (10-15 minutes). Serve warm or at room temperature topped with basil and cheese.

- Preheat the oven to 400ºF. Dice the onion and mince the garlic. Sauté the onion and garlic with olive oil in a large skillet over medium heat until the onions are soft and transparent (about 5 minutes).
- While the onion and garlic are sautéing, slice the zucchini, yellow squash, tomato, and potato thinly (1/4-inch slices). Make sure the potatoes are very thin so that they soften quickly while in the oven.
- Coat the inside of an 8x8" casserole dish with non-stick spray. Spread the sautéed onion and garlic in the bottom of the dish. Arrange the other sliced vegetables, stacked vertically like dominos, in an alternating pattern. Season the top of the vegetables generously with salt, pepper, and dried thyme.
- Cover the dish with foil and bake in the preheated oven for 30 minutes. Remove the foil, top with the shredded cheese, and bake without the foil for an additional 15-20 minutes, or until the cheese is golden brown. Top with chopped fresh parsley for garnish, if desired.

- Heat oil and garlic in a small saucepan over medium-high heat until the garlic begins to sizzle, about 1 minute. Remove from heat and set aside.
- Slice tomatoes, onions, squash and zucchini into 1/8-inch-thick slices. Standing them up on their sides, alternate the tomato, onion, squash and zucchini slices in a circular pattern around the edge of a 9-inch deep-dish glass pie pan or similar-size round casserole dish. Make a second alternating circle in the center. Pack the vegetables tightly: they will shrink while baking.
- Discard the garlic, if desired, and drizzle the vegetables with the oil. Sprinkle with salt. Bake until the vegetables are tender and starting to brown, about 1 hour. Let cool for 10 minutes before serving.
