Steps:
- Combine the first seven ingredients; pat into a bowl lined with plastic wrap. Cover with the wrap and chill. Invert onto a serving platter and sprinkle with parsley. Serve with crackers.

STACY'S SAUSAGE QUICHE
Got this recipe years ago from a former boyfriend. So good (and so rich) I like to make it for my birthday dinner. It makes plenty so invite your friends.

Steps:
- Prick the crusts liberally with a fork, and bake in a 450°F oven 1 or 2 minutes until lightly browned.
- Brown the sausage in a skillet, remove from skillet, drain, and set aside.
- In the same skillet, sauté the onion in butter.
- Add the mushrooms and sauté.
- Return the sausage to pan, add the wine, garlic powder and oregano and mix together with the onion and mushrooms.
- Mix the cheeses together.
- Spread 1/4 of the cheese in the bottom of each crust.
- Spread 1/2 of the sausage mixture over the cheese in each pie.
- Cover with the rest of the cheese.
- Beat the eggs with the half and half and pour into the pies until each is filled to the rim.
- If desired sprinkle liberally with more oregano and/or cinnamon and/or cayenne.
- Bake at 450°F for 15 minutes.
- Lower the oven to 350° and bake 10-15 minutes more until a knife, inserted into the quiche, comes out clean.

BEEF SUMMER SAUSAGE
This is a ground beef summer sausage you can make at home. It takes a while, but have you seen the prices of store bought summer sausage?! This recipe is well worth the wait. You can also wrap them in foil and freeze them.

Steps:
- In a large bowl, combine the beef, meat tenderizer, cayenne pepper, ground black pepper, garlic powder, brown sugar, mustard powder and peppercorns and mix well. Pour the liquid smoke over the mixture, but do not mix. Cover and place in the refrigerator for at least 24 hours.
- Preheat oven to 150 degrees F (65 degrees C).
- Remove the beef mixture from refrigerator and mix well. Roll into 1 1/2x9 inch logs and place in a 9x13 inch baking dish.
- Bake at 150 degrees F (65 degrees C) for 4 hours. Remove from oven and let cool.

SWISS SAUSAGE STRATA
This strata is beautiful and tasty: layers of bread, sausage, red and green peppers, and cheese are baked in a custard of eggs and milk.

- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set sausage aside.
- Using the same pan, cook mushrooms, onion, and bell peppers in olive oil until tender.
- Spread half of the bread cubes in a 7x11 inch baking pan. Add a layer of sausage, and then a layer of vegetables over the bread. Top with half of the cheese, and then spread another layer of bread cubes over the cheese. Top with remaining cheese.
- In a bowl, beat together the eggs, egg substitute, milk, half-and-half, and mustard. Pour the egg mixture over everything in the pan. Cover, and refrigerate at least 8 hours or overnight.
- Remove the casserole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
- Bake 50 to 60 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

- Preheat oven to 425¡F. Heat oil in heavy large skillet over medium-high heat. Add onion and caraway seeds and sauté until onion just begins to brown, about 7 minutes. Transfer onion mixture to large bowl. Mix in sauerkraut and 1 tablespoon sauerkraut juice. Cool to lukewarm, then mix in cheese. Season generously with pepper.
- Place pizza crust on baking sheet. Spread with Dijon mustard and top with sausage, then sauerkraut mixture.
- Bake pizza until cheese melts, topping begins to brown and crust is crisp, about 15 minutes. Transfer pizza to work surface; cut into wedges and serve.
