Steps:
- Preheat the oven to fan 180C/ conventional 200C/gas 6. Wash the potatoes, but don't bother to peel them. Cut into thickish slices then cook in boiling water for 6-8 minutes until almost tender; drain. Slice the tomatoes to the same thickness. Chop the garlic, then strip the rosemary from its stalks and chop the leaves fairly finely.
- Drizzle a little olive oil in the base of a shallow ovenproof dish wide enough to take the chops in one layer. Arrange rows of potatoes and tomatoes across the dish, seasoning with salt and pepper as you go and sprinkling with half the rosemary and all the garlic.
- Drizzle a couple more tablespoons of olive oil over the vegetables and bake for 15 minutes, then sit the pork on top, season and sprinkle with the remaining rosemary. Return to the oven for 35-45 minutes, until the pork and potatoes are tender.

LEFTOVER PULLED PORK STEW
A little too hearty to be called a soup, this recipe is a great way to use leftover pulled pork. Such a crowd pleaser, I can't keep it in my house! Great eaten with sour cream and crackers or your favorite tortilla chips.

PORK AND POTATO STEW

Steps:
- In a large skillet heat the oil over medium heat. When the oil is hot enough, add the chopped onion and cook until onion is translucent, do not burn it.
- Chop the pork meat into 1 inch cubes. Add the pork and garlic to the onion. For this stew I used these gorgeous baby yellow potatoes, which I just cleaned really well and peeled, however, you may use any potato you like. Add the potatoes and red pepper to the skillet.
- At this point we just want to cook the meat until it's done, but we do not want to burn the potatoes, so about 10 minutes.
- Add the tomatoes, hot sauce, paprika, cumin, salt and pepper and water to the skillet and stir. Once it's boiling turn down the heat and cover with a lid and let simmer for about 30 to 45 minutes, or until the potatoes are cooked through.
- Garnish with chopped parsley and sour cream if preferred.

SUMMER SHRIMP SCAMPI WITH TOMATOES AND CORN
Shrimp get along well with garlic, butter and lemon, and so do tomatoes and corn. Combine them, and you get a summery shrimp scampi that comes together in one skillet. A searing hot pan helps the tomatoes blister and the corn caramelize before they are coated in a garlic-lemon butter sauce. This is a meal in and of itself, but if you want to serve it with pasta or bread, they'd be welcome additions.

Steps:
- Pat the shrimp very dry and season with salt and pepper. In a large (12-inch) skillet, heat the olive oil over medium-high. Add the shrimp and cook until pink and lightly golden in spots, 1 to 2 minutes per side. Use a slotted spoon to transfer the shrimp to a plate.
- Add the tomatoes to the skillet, season with salt and pepper, and cook, stirring just once or twice, until they start to blister in spots, 3 to 4 minutes. Add the corn, season with salt and pepper, and cook, stirring just once or twice, until the tomatoes burst and the corn is golden in spots, 3 to 4 minutes.
- Add the garlic and red-pepper flakes and cook, stirring, until you smell garlic, about 1 minute.
- Reduce heat to medium, and add the wine and lemon juice, scraping any brown bits from the bottom of the pan. Cook until nearly evaporated, then add the butter and stir until melted. Add the shrimp and its juices and stir until warmed through. (If the sauce breaks and looks greasy, add 1 or 2 teaspoons of water and stir until emulsified.)
- Remove from heat, add the herbs, season to taste with salt and pepper, and serve with extra lemon for squeezing over, if you like.

- Using a sharp paring knife, carefully remove the bones from your rib-eye chops, making sure to cut as close to the bone as possible to conserve the meat. Cut the meat into 1-inch cubes and reserve the bones. If you've got time, crank your oven to 425°F (232°C), set the bones in a shallow baking sheet, and roast them until the edges start to caramelize -- about 20 minutes. If you don't have time, just set them aside raw for later in the recipe.
- Heat olive oil in a small saucepan over medium-low heat. Add shallots, cooking until they are tender and just beginning to brown, about 8-10 minutes, stirring occasionally to keep them from burning. Add garlic and cook for 1 minute, stirring constantly. Remove from heat.
- Heat a Dutch oven over medium-high flame and sear pork cubes on all sides. Remove pork from the Dutch oven and pour in white wine. Lower heat to medium-low and cook for 1 minute, scraping up all the good meaty bits on the bottom with a spatula.

- Sprinkle the pork with 1 teaspoon of kosher salt. Heat the oil in the pressure cooker pot over medium-high heat until shimmering. Add the pork to the pan in two or three batches, depending on the size of your pressure cooker. Brown the pork well on one side, about 4 minutes per batch, then remove the pork to a bowl with a slotted spoon, leaving as much fat behind as possible.
- Add the onion, garlic, and jalapeno to the pot, stir to coat with oil, then sprinkle with 1/2 teaspoon of salt. Saute the aromatics until they soften, about 5 minutes.
- Pour the pork (and any juices in the bowl) into the pressure cooker pot, add the chicken stock, and stir to combine, scraping the bottom of the pot to loosen any browned onions. Lock the lid on the pressure cooker, increase the heat to high, and bring the cooker up to high pressure, and adjust the heat to maintain high pressure. (Check your pressure cooker manual for specific instructions). Reduce the heat to maintain high pressure and cook the pork at high pressure for 15 minutes (18 minutes in an electric PC), then quick release the pressure in the pot.
- Remove the lid from the pressure cooker, tilting the lid away from you to protect you from the scalding hot steam. Pour the zucchini, squash, beans, tomatoes, and corn on top of the pork in the pot, but do not stir – the vegetables should float on top while they cook. Lock the lid, increase the heat to high, and bring the cooker back up to high pressure. Reduce the heat to maintain high pressure and cook the stew at high pressure for 5 minutes (6 minutes in an electric PC), then quick release the pressure in the pot.
