4 tilapia fillets (1 lb.)
1/4 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
1 Tbsp. CLASSICO Traditional Basil Pesto Sauce and Spread
1 yellow pepper, chopped
1 zucchini, cut lengthwise, then crosswise into slices
1 cup grape tomatoes
3 Tbsp. thinly sliced fresh basil

Steps:

  • Brush fish with 2 Tbsp. dressing; cook in skillet on medium heat 3 to 4 min. on each side or until fish flakes easily with fork. Transfer to plate; cover to keep warm.
  • Add remaining dressing, pesto, vegetables and tomatoes to skillet; cook 5 min. or until heated through, stirring frequently. Spoon over fish.
  • Top with basil.

2 pounds cod or any other fish you like
enough oil for frying
1/2 cup all purpose flour
salt and pepper to taste

Steps:

  • Pat dry the fish with paper towels, especially if you use fish that was frozen.
  • Place the flour on a large plate and add salt and pepper to your taste. Mix well.
  • Pour approximately 2 inches of vegetable oil into a large skillet and set the skillet on the stove on medium high heat.
  • Cover each piece of fish with the flour and shake well to remove excess.
  • Make sure the oil is hot. The fish should sizzle when touches the oil.
  • Gently set coated fish in your skillet and fry it for about 5 minutes on each side until golden brown.
  • When the fish is done remove and drain on paper towels.
  • Serve with lemon wedges.

3 tablespoons extra-virgin olive oil
2/3 cup finely chopped onion
1/2 cup finely chopped sweet red pepper
3 cups cooked fish, bones removed
1/2 cup mayonnaise, preferably nonfat
1 tablespoon fresh lemon juice
1 tablespoon finely minced parsley
Salt and cayenne pepper to taste
1 egg
3/4 cup dry bread crumbs
Tarta sauce or a mild red salsa

Steps:

  • Heat one tablespoon of the oil in a skillet, add the onion and pepper and saute until tender but not brown.
  • Break the fish into small chunks in a bowl. Fold in the onion and pepper, then fold in the mayonnaise, lemon juice, parsley and salt and pepper to taste. Form the mixture into eight cakes.
  • Beat the egg in a shallow bowl. Put the bread crumbs on a plate. Dip each fish cake first into the egg to coat, then into the bread crumbs, spooning them over the fish cake to coat it. Handle the fish cakes gently because they are fragile. Put the fish cakes in the refrigerator for one hour.
  • Heat the remaining oil in a nonstick skillet. Saute the fish cakes in the oil over medium-low heat until golden, turning them once. Serve with tartar sauce or salsa on the side.
