Steps:
- NOT FINISHED - WORK IN PROGRESS The Wings: Chop off the tip of each chicken wings, and discard it. Chop the wing in half (cutting at the joint) to make 2 pieces. Season lightly. Heat the oil over high heat in a deep skillet, Dutch oven, or deep-fat fryer until it starts to pop and sizzle (around 400 degrees F). Add the chicken wings and cook until they're golden and crisp, stirring or shaking occasionally. Season again half way through frying. When done, remove them to drain on paper towels. Sauce: Blend togeter.... Melt the butter or margarine over medium heat in a heavy saucepan, add the blended mixture and the 1 tablespoon of wine vinegar. Stir well and remove from the flame immediately. Place the chicken on a warm serving platter, pour the sauce on top, and serve.

- The Sauce: This makes enough for about 30 "wingettes." Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted. Stir occasionally.
- The Wings: Fry the wings in a deep fryer set at 375 degrees F using vegetable or peanut oil. Fry 15 wings at a time for 12 to 15 minutes. Drain the wings for a few minutes then put them in a bowl. After all the wings have been fried, pour the sauce over them, cover the bowl, and shake to completely coat the wings.
- They can be eaten now, or you can put them on a baking sheet and bake them for a few minutes to get an extra-crispy coating.

PAT'S FAMOUS HOT WINGS

- For the dipping sauce:
- In a small bowl, mash the blue cheese into the buttermilk and sour cream. Mix in the sugar and the apple cider vinegar, and season with salt and pepper, to taste.
- For the seasoning:
- Mix the dry rub, salt, and cayenne together in a small bowl.
- Preheat deep-fryer with peanut oil to 350 degrees F.
- For the wings:
- Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.
- Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.
- Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.
- Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.
- Add fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Serve immediately after tossing the wings with the sauce. Serve with the blue cheese dipping sauce and celery and carrot sticks.
5 ALARM SAUCE
Steps:
- Combine the hot sauce, margarine or butter, cayenne pepper, chile flakes, horseradish, jalapenoes, habaneros, cumin, garlic, onion and black pepper in a food processor and mix on medium speed until all the ingredients are well mixed. Reserve the hot sauce to toss with chicken wings.
- Cook's Note: Be sure to wear gloves when cutting the jalapeno and habanero and do not touch your face after handling the seeds or cut up peppers to avoid irritation!
DEATH BY WINGS
I found this and changed it up to add more heat. Be very careful when working with peppers; DO WEAR GLOVES. Last time I made these, even after filtering the oil, the fries I made the next day were also fairly hot.

- In a blender puree all ingredients, except chicken wings, being VERY careful of the hot peppers.
- Place chicken wings in a bowl and pour mixture on top, marinate overnight.
- Heat deep fryer with oil to 350 degrees Fahrenheit.
- Remove wings from bowl and gently place them in the hot oil.
- Fry wings until golden brown and crisp, about 8 to 10 minutes.
- Meanwhile take the leftover marinade and place in a small saucepan on stove and bring to a hard boil.
- After the sauce is heated throughout put sauce in large bowl, add wings and toss until coated.
- When handling wings use either tongs or wear gloves.

- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
- Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

"CALL THE FIRE DEPARTMENT" HOT WINGS
My family loves hot wings! After several attempts of trying to re-create the restaurant hot wings, I finally came up with this recipe which my whole family seems to approve. My husband thinks they could be hotter, but then again, he adds red pepper flakes to most of his food. The kids and I think they are hot enough, but add even more Tabasco if you wish!

Steps:
- In a bowl, combine flour, cayenne pepper, paprika, salt and pepper; mix.
- Rinse off wings and coat in flour mixture.
- Spray a large baking sheet with non-stick cooking spray and place wings on baking sheet.
- Preheat oven to 375°F.
- Bake wings for 40 minutes, turning once 1/2 way through cooking.
- While wings are baking, combine butter, Frank's hot sauce, and Tabasco in a plastic bowl with lid.
- Once wings are finished baking, place 8-10 wings in the bowl.
- Cover and shake to coat.
- Serve with Ranch Dressing!
