Strawberry and Lemon Sugar-Free Popsicles image

This Strawberry and Lemon Sugar-Free Popsicle recipe is the best healthy homemade frozen fruit ice pop. This dessert is made using a handful of ingredients and is refined-sugar-free.

1/2 cup fresh squeezed lemon juice
1 1/2 cup water
1/2 cup Confectioner's Sweetener (Taste repeatedly and adjust to taste.)
1 pound fresh or frozen strawberries

Steps:

  • Add all of ingredients to a blender.
  • Blend for 45-60 seconds until smooth.
  • Pour the blended mixture into the popsicle mold.
  • Place the lid on the mold and add the popsicle sticks.
  • Freeze for 4 hours.
  • Remove the popsicle mold from the freezer and run the bottom and side of the mold under water to loosen the popsicles.
  • Remove the popsicles from the mold and serve.

1 lb fresh or frozen fruit of your choice (thawed if frozen)
2-4 Tbsp liquid of your choice

Steps:

  • Combine the ingredients in a blender and blend until there are no chunks in the mixture. The consistency should resemble thin pancake batter, so use the tips above to adjust the thickness as desired.
  • Using a funnel, pour the mixture into the reusable plastic tubes or silicone molds. Seal and freeze for at least 6 hours, or overnight.

3-ounce package any flavor jello (or sugar-free jello)
1/3 cup sugar (if using sugar-free omit the sugar)
2 cups boiling water
2 cups cold water
Optional: sub fruit puree for 1 cup of water, sub half wine and half cold water, sub half liqueur, (of choice) half cold water

Steps:

  • Boil the water adding the sugar and jello mix for 2 minutes, stir to dissolve.
  • Stir in the cold water.
  • Pour into Popsicle molds.
  • You can also use dixie cups, however, set your timer for 2 hours, freeze in the cups then add sticks to the partially frozen pops so they will stand up.
  • Proceed with adding the Popsicle sticks to your molds and freeze until solid around 8 hours or overnight.
  • Optional Ideas for Adults:
  • Adult version: you can substitute 1 cup of red or white wine with any flavor jello in this recipe omitting 1 cup of the water. (or use 1/2 cup water 1/2 liquor of choice)
  • Bomb Pops for Kids Note: you can also make layered colored pops (bomb pops) layering the colors and freezing them every two hours with each color in between.

  • Place warm strawberry sauce and lemon juice in blender until smooth.
  • Combine with water in large bowl.
  • Pour liquid into popsicle molds or freezer pop bags.
