3/4 cup Splenda sugar substitute
1/3 cup butter or 1/3 cup margarine
2 eggs
1 (8 ounce) can crushed unsweetened pineapple or 1 (8 ounce) can pineapple in juice, undrained
1 teaspoon vanilla extract
1 cup chopped walnuts or 1 cup pecans
2 1/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon Splenda sugar substitute
1/4 teaspoon cinnamon
1/4 cup chopped pecans or 1/4 cup walnuts

Steps:

  • Preheat oven to 350°F.
  • Cream the butter or margarine until soft; add eggs and beat just until blended.
  • Stir in pineapple, vanilla and 1 cup chopped nuts.
  • Sift together flour, baking powder, soda, Splenda and salt; stir sifted mixture into pineapple mixture just until blended.
  • Spoon batter into a well buttered loaf pan.
  • Combine topping ingredients and sprinkle over batter.
  • Bake for about 1 hour; To test for doneness, stick a toothpick into the center of the loaf, bread is done when it comes out clean; start checking after 45 minutes as cooking time can be less or more than 1 hour depending on liquid content of the pineapple which will vary.

¾ cup brown sugar
3 tablespoons butter, softened
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon baking soda
1 (8.5 ounce) can crushed pineapple
¾ cup chopped pecans
½ cup raisins
2 tablespoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch loaf pan.
  • Beat brown sugar and butter with an electric mixer in a large bowl until light and fluffy. Add eggs one at a time, blending the first into the brown sugar mixture before adding the other.
  • Sift flour, baking powder, salt, and baking soda together in a separate bowl. Stir about half the flour mixture into the brown sugar mixture. Pour pineapple with its juice into the brown sugar mixture and stir; add remaining flour mixture and stir just until a batter forms. Fold pecans and raisins into the batter; pour into prepared loaf pan.
  • Mix white sugar and cinnamon together in a small bowl; sprinkle over the batter in the loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Modified recipe from Paula Deen's Zuchini Bread recipe. It rose well which is great for gluten free bread. My husband loved it with Honey Nut cream cheese on top. Maneca corn flour can be found at your local Hispanic grocery and the other day I saw it in the standard grocery.

1 cup cornflour (Maneca)
1/2 cup tapioca flour
1/8 cup cornstarch
1/2 teaspoon nutmeg
1 teaspoon baking soda
2 teaspoons xanthan gum
1/2 teaspoon cinnamon
1 cup Splenda granular
1/2 cup vegetable oil
2 eggs, beaten
1/3 cup water (or substitute pineapple juice)
1 cup crushed pineapple, drained
1 teaspoon apple cider vinegar
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Mix dry ingredients except nuts in a large bowl.
  • In a seperate bowl mix the wet ingredients and fold into dry.
  • Fold in nuts.
  • Spray pan with non stick spray and spread in loaf pan.
  • Bake for one hour - check at 50 minutes.

4 eggs
1 cup sugar
1/2 cup oil
1/4 cup pineapple juice
1/2 cup crushed pineapple in juice
1 tablespoon baking powder
3 cups flour
1/2 cup macadamia nuts, chopped

Steps:

  • Combine eggs, sugar, oil, juice and pineapple. Mix well.
  • Sift together baking powder and flour and mix into pineapple mixtures. Fold in nuts. Pour into greased and wax paper lined 9 x 5 inch loaf pan and bake at 350 degrees until toothpick inserted comes out clean, about 50 minutes. Or fill greased muffin cups 3/4 full and bake at 350 degrees for 25 minutes.

1 cup all-bran cereal (All-Bran preferred)
3/4 cup walnuts, chopped
12 ounces crushed pineapple, undrained
1 egg, well beaten
3 tablespoons butter

Steps:

  • Preheat oven to 350F and grease a 9 x 4" loaf pan.
  • Sift first five ingredients together; stir in remaining ingredients.
  • Pour into prepared pan and bake for 1 1/4 hours or until bread tests done.

1 3/4 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup coarsely chopped macadamia nuts
3/4 cup brown sugar, firmly packed
3 tablespoons soft butter or 3 tablespoons margarine
2 eggs
1 cup finely chopped fresh pineapple (packed firmly, with pineapple bits and juice)

Steps:

  • Sift together the first four ingredients.
  • Add nuts to the dry mixture.
  • Cream together sugar, butter and eggs until fluffy.
  • Stir in half the flour mixture.
  • Add pineapple.
  • Blend in the remaining flour mixture and pour onto a well greased 9x5x3 inch pan.
  • Combine 2 tbsp sugar and 1/2 tsp cinnamon and sprinkle on top of the bread mixture.
  • Bake at 350 degrees for one hour.
