SUGAR-FREE APPLE STREUSEL PIE
This is a great substitute for those high-calorie apple pies and cobblers that abound. I like to serve it with a either a scoop of low-fat vanilla ice cream or a dallop of Cool Whip on top while it's still warm. Mmmm!

- *Tips: I soak my apples in a lemon juice and water mixture to keep them from turning brown as I slice them. Drain before adding the spices. You can substitute Egg Beaters for the egg whites.
- Preheat oven to 325 degrees. Spray a 9" pie plate with cooking spray (I use butter flavored) and set aside.
- To prepare the streusel, in a small bowl, mix the flour and brown sugar and cut the light butter into it until it forms small clumps. Set aside.
- In a large bowl, combine apple slices with cinnamon and nutmeg. Pour into the prepared pie plate and set aside.
- Whip the remaining ingredients together with a wire whisk and pour over the apples. Sprinkle the streusel evenly over the top of the pie.
- Bake for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Cool for five minutes. Cover and refrigerate any remaining pie.

- 1. In a medium bowl, mix the dry ingredients for the crust. Add the oil and use a pastry blender to work in. Add the ice water and stir with a fork just until the dough starts to come together.
- 2. Press the dough pieces in to a 9 inch pie pan using your fingers. Cover the pie crust with non-stick foil (non-stick side touching dough). Fill the foil covered crust with dry beans or pie weights.
- 3. Bake the crust in a 425 degree oven for 10 minutes. Reduce the heat to 375 degrees and bake 10 minutes longer. Remove from oven and cool a bit before carefully removing the foil and beans.
- 4. While the crust is baking, prepare the apples. In a large fry pan heat the 1 Tbsp oil (med/hi heat) and saute the apple slices for about 7 minutes. Stir often. Add the apple juice and cook 1 -2 more minutes and remove from heat. Fold in the sugar and other dry ingredients, which have been pre-mixed. Set aside.
- 5. For the streusel topping, mix the ingredients and set aside.
- 6. Assemble the pie by filling the cooled pie crust with the apple filling and using a fork to distribute the apples evenly. Sprinkle the streusel topping evenly over the apples. Cover the crust with a pie shield to protect from burning.
- 7. Bake pie in a 375 degree oven for 35 minutes. Reduce the heat to 325 degrees and bake an additional 20 minutes.
- 8. Remove pie from oven and cool on a rack for 20-30 minutes. Prepare the glaze by adding enough cold water to the powdered sugar to achieve just the right consistency to drizzle over the baked pie.
- 9. Cool pie completely (about 3 hours) before serving. This pie is perfect without whipped cream or ice cream.

- Preheat oven to 350°F.
- peel,core and slice apples(use as many as you like depending on dish size and how high you want your pie).
- add splenda, cornstarch, cinnamon and nutmeg to apples and mix well.
- Place bottom crust in pan and fill with apples. Put on top crust.
- Bake about 45 min or until crust is golden brown.(my oven tends to be off on time so make sure to watch your pie.).

- Whisk together the cornstarch, cinnamon and 1/4 of the apple juice.
- In a saucepan over medium heat, simmer the apples in the remaining apple juice until tender. Add the cornstarch mixture and stir until thickened.
- Pour into bottom crust and cover with top crust. Bake for 45 minutes.

In a large bowl, combine the first 3 ingredients; fold in apples. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake 35 minutes. - Mix all ingredients and cook over medium heat, bringing to a boil then reducing heat.
- Cook for 5 minutes, stirring to prevent sticking.
- Press one crust into the bottom of a prepared 9 inch pie pan, then pour the filling on top of the crust.
- Top with remaining crust.
- Bake at 425 degrees about 45 minutes until crust is golden and apples are tender.
