DATE BALLS
A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- Remove seeds from dates and soak in hot water for 5 minutes. Drain off any water using a strainer and press out excess moisture from dates. (this is important otherwise the bliss balls will be too wet)
- Add the oats to a food processor or high speed blender and blitz for a couple minutes until it turns into a coarse powder.
- Add the cocoa powder, peanut butter and dates to the food processor and blitz until combined (about 1 – 2 mins)

- Add all of the ingredients to the bowl of your food processor and blend until the nuts are well chopped and a thick “dough” starts to form, about 3-5 minutes of processing. If the ingredients are chopped into super small pieces but the dough isn’t coming together, try adding a teaspoon of water at a time (up to a tablespoon or two) to encourage everything to come together.

- In a large food processor fitted with an "S" blade, process the walnuts and coconut until crumbly.
- Add in the dates, vanilla and sea salt and process again until a sticky, uniform batter is formed. (You can add a tablespoon of coconut oil, only if needed to help the mixture come together.) You don't want to over process, or the batter will become oily, so process until crumbly, but sticky when pressed between your fingers.
- Scoop the dough by heaping tablespoons, then roll between your hands to form balls. Arrange them on a baking sheet lined with parchment paper, then place in the fridge or freezer to set for at least 30 minutes before serving. Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life. (I prefer them frozen, myself!)
