Date Balls image

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

1 (8 ounce) package chopped pitted dates
1 cup white sugar
½ cup margarine
3 cups crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup confectioners' sugar, or as needed

Steps:

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
  • Grease your hands with margarine. Roll date mixture into 1-inch balls.
  • Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

1 cup brown sugar

1 egg, slightly beaten
3 cups Rice Krispies
1 cup coconut
1/4 cup chopped maraschino cherry
1 teaspoon good vanilla
powdered sugar

Steps:

  • In heavy-bottomed,lg.
  • saucepan or pot,melt butter.
  • Stir in brown sugar and dates.
  • Cook til sugar is melted.
  • Remove from heat and QUICKLY stir in egg well.
  • Return to med.
  • heat, stirring constantly, til boiling.
  • Boil and stir 1 minute.
  • Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
  • Roll into balls, about 1" or so, roll in powdered sugar to coat.
  • Store airtight.
  • (Can chill if desired, but serve room temp.).

Good-for-you energy bites (perfect for snacking!) that are loaded with flavor and only take minutes to make - naturally sweetened with dried apricots, coconut, and dates.

7 7/8 ounces (1 1/2 cups) dried apricots (use unsweetened to make this recipe refined sugar free)
5 1/2 ounces (1 cup) pitted and halved medjool dates
3 1/2 ounces (1 cup) sliced almonds
2 1/8 ounces (1 cup) unsweetened coconut flakes
1 ounce (1/8 cup) water
1/2 teaspoon almond extract
shredded unsweetened coconut (or fine coconut flakes*), for rolling

Steps:

  • In a food processor fitted with the steel blade attachment, process apricots, dates, almonds, and coconut flakes until texture is fine (similar to gravel). Add water and almond extract and pulse in to incorporate. Mixture should be moist enough to clump together.
  • Coat a small bowl or plate with shredded coconut or coconut flakes for rolling. Roll "dough" into 1 ounce balls (about the size of a ping pong ball) and roll each in coconut to coat. Transfer to an airtight container and keep refrigerated.

1/2 cup raw nuts (cashews, walnuts, almonds, pecans, etc.)
pinch of sea salt

Steps:

  • Process: Add dates, nuts and salt in a food processor fitted with the S-shaped blade. Process until mixture is well combined and sticking together.
  • Form balls: Scoop dough from food processor with your hands (or a cookie scoop) and form into small balls using your hands. Enjoy right away or store for later.
  • To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to 3 months.

10-12 medjool dates
2 cups pecans
Pinch sea salt
¼ cup desiccated coconut

Steps:

  • Pit the medjool dates and soak them in warm water for 10 minutes until they soften
  • Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
  • Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
  • Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.
