3 tablespoons butter
½ teaspoon cornstarch
2 tablespoons honey

Steps:

  • Bring a large saucepan of salted water to a boil. Add carrots and cook until tender crisp, 10 to 12 minutes. Add pea pods and cook until tender crisp; drain and set aside.
  • Melt butter in the same pan and stir in cornstarch. Return carrots and peas to pan and stir in honey. Cook over medium heat, stirring occasionally, until heated through.

1/2 onion, diced
12 ounces sugar snap peas, trimmed
1 carrot, sliced
500 ml vegetable stock
1/2 teaspoon salt
100 ml heavy cream or 100 ml non-dairy milk substitute
1 dash mixed Italian herbs
1/2 teaspoon parsley, for topping (optional)

Steps:

  • In a medium soup pan, heat butter or olive oil and sauté onion until translucent.
  • Add carrot and peas and sauté 1 more minute.
  • Add vegetable stock and cook until vegetables are tender for about 10 minutes. Turn off the heat.
  • Using a hand blender or blender, purée the soup.
  • Add cream or non-dairy milk. Season with salt and Italian herbs to your taste.
  • Infuse love and serve with some parsley flakes on top (optional)!

Steps:

6 ounces soba noodles
2 cups frozen organic edamame
10 ounces (about 3-cups) sugar snap peas or snow peas
6 medium-sized carrots, peeled
1/2 cup cilantro, chopped fresh (about 2 handfuls)
1/4 cup sesame seeds
Ginger-sesame sauce
1/4 cup reduced-sodium tamari or soy sauce
2 tablespoons quality peanut oil or extra-virgin olive oil
1 small lime, juiced
1 tablespoon toasted sesame oil
1 tablespoon honey or agave nectar
1 tablespoon white miso*
2 teaspoons ginger, freshly grated
1 teaspoon chili garlic sauce or sriracha

Steps:

  • To prepare the vegetables: Use a chef's knife to slice the peas in half lengthwise (or just roughly chop them). Slice the carrots into long, thin strips with a julienne peeler, or slice them into ribbons with a vegetable peeler. To make the sauce: whisk together the ingredients in a small bowl until emulsified. Set aside. Bring two big pots of water to a boil. In the meantime, toast the sesame seeds: Pour the sesame seeds into a small pan. 2 teaspoons extra-virgin olive oil, optional

Steps:

  • Heat butter in a large skillet over medium-high heat. Once the butter melts and the pan is hot, add carrots and toss well. Spread the carrots out into a single layer and season with salt.
  • Add broth and cover, reducing heat to a low simmer. Cook for 5 to 6 minutes, depending on the thickness of your carrots.
  • Uncover and add garlic and snap peas on top of carrots. Cover and cook for 2 more minutes.
  • Uncover and turn up the heat to medium-high. Cook until all of the liquid cooks off and season again with salt to taste.
  • Remove from heat and top with fresh parsley and a drizzle of olive oil (if using).
  • Serve and enjoy!
