SPICY OVEN-ROASTED PLUMS



Spicy Oven-Roasted Plums image

Several years ago I was looking for a recipe to take advantage of our bumper crop of plums, and came across a recipe similar to this. After tweaking a bit, I have come up with a very versatile version that my family and friends love. Season with ground white pepper and use it as a side dish for pork or chicken. Sprinkle with toasted almonds and spoon it over vanilla bean ice cream, angel food, or pound cake for dessert! Play around with the spice combination by adding cloves, allspice, or cayenne. Be adventurous!

4 plums, halved and pitted
½ cup orange juice
2 tablespoons packed brown sugar
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
⅛ teaspoon cumin
⅛ teaspoon ground cardamom
¼ cup toasted slivered almonds

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a shallow baking dish with cooking spray.
  • Place the plums, cut-side up, in a single layer in the baking dish.
  • Whisk together the orange juice, brown sugar, cinnamon, nutmeg, cumin, and cardamom in a bowl; drizzle over the plums.
  • Bake in preheated oven for 20 minutes, or until plums are hot and the sauce is bubbly. Top with toasted almonds, if desired (see Cook's Note).

140g white granulated sugar
¼ tsp cinnamon
1 large egg white
12 red plums

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the sugar and cinnamon in a bowl. Whisk egg white, then roll the plums first in egg white and then the cinnamon sugar until very well coated in a sugary crust.
  • Space apart in a buttered baking dish, then bake for 15 mins or until the plums are crusty, cooked through and starting to be juicy. To test, poke in a cocktail stick; if it goes in easily, they are ready.

This is not even really a recipe but a technique. I use this with every sort of fruit imaginable. You can serve it warm over ice cream and cakes or cold over creme brulée (mmm). This is an easy, make ahead, whenever sort of dish. Use the fruits in season and you'll be pleasantly surprised. The recipe below is more exact but this is a recipe from the school of 'handfuls'. A handfull of fruit and a handful of sugar are all you need.

3 whole peaches
1/2 cup sugar
lemon juice, to taste

Steps:

  • Portion your fruits into the desired shapes, generally wedges.
  • In a bowl place your fruit and toss with sugar to *coat*.
  • This may require more or less sugar depending on the ripeness of your fruit.
  • You do NOT want lost of extra loose sugar.
  • Lay your fruit out on a pan (it doesn't have to be neat) and bake in an 350°F oven until fruit is soft and cooked through.
  • The sugar and juices will have combined to make a syrup.
  • *NOTE *Any fruit or berry can be used in this recipe.
  • Keep in mind than an apple will take longer than a berry, so adjust the times accordingly.
  • Mixing fruits can lead to pleasant surprises as the colour combine nicely and the flavour interactions are great (try blueberries and peaches)!

1/4 teaspoon cinnamon
6 plums*, cut in half and pitted
6 apricots*, cut in half and pitted
1 teaspoon pure vanilla extract
1/4 cup fresh orange juice

Steps:

  • Preheat the oven to 400 degrees F. In a small bowl, whisk together the sugar and cinnamon. In another bowl, toss the plums, apricots, vanilla extract, and orange juice together. In a roasting pan or oven-proof baking dish, arrange the fruit cut-side up pouring any extra juice in the baking dish. Sprinkle evenly with the cinnamon-sugar mixture. Roast for 15 to 20 minutes or until the fruit is fork tender.

6 strips orange zest (1/2 by 3 inches each), plus 1/4 cup fresh orange juice

Steps:

  • Preheat oven to 400 degrees. Arrange plums, cut side down, in a medium ovenproof skillet or baking dish. Sprinkle butter, sugar, orange zest, and pinch of salt over plums. Roast until very tender but still intact, 40 to 45 minutes. Pour orange juice over top; swirl to incorporate. Serve warm.

  • Arrange the whole plums on a baking tray and place in the middle of the oven. Bake for around 20 minutes or until the skins of the plums begin to split and the flesh softens.
