SUGAR FREE/WHEAT FREE/NO FAKE SWEETENERS CHEESECAKE
Another one from Binah Magazine. This one intrigues me because it is made without sugar and wheat, and, more important, without those sugar substitutes. Hoping to try it soon.

Steps:
- For the Crust: Toast all ingredients (except the butter) in a pan at 350F for 15-20 minutes, until golden.
- Process the mixture in a blender or food processor until finely chopped.
- Separate the mixture into two 8" pans. Add 3 tbl melter butter to each pan and mix well.
- Press into pan to form the crust.
- For the filling: Soften the cream cheese, and then whip with a beater until smooth.
- Add eggs, banana, vanilla, and beat until smooth and creamy.
- Pour cheese mixture into the crust lined pans, dividing equally.
- Bake at 375F for 30 minutes.
- For the topping: Stir together all the topping ingredients. Spread over baked cheese filling, dividing equally.
- Bake at 375F for another 20 minutes.

NO BAKE SUGAR FREE CHEESE CAKE
This recipe has no added sugar so it is great for Diabetics. It is a favorite in our house. I first tried this recipe as a regular dessert and later tried it without sugar and found it to be just as good.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool.
- Dissolve lemon gelatin in boiling water. Let cool until thickened, but not set. In a large bowl, beat cream cheese and vanilla until smooth. Blend in lemon gelatin. Fold in whipped topping.
- Pour filling into crust. Sprinkle top with graham cracker crumbs. Refrigerate over night.

One of my dad's favourites. Sweetened with stevia and honey or maple syrup. Can be topped with fruit or sauce of choice.

- Mix ingredients together and press into a 9x9 pan.
- Bake at 350 degrees for 10 minutes. Turn oven off and leave in for 1/2 hour. Cool.
- Filling:.
- With mixer, beat together cream cheese and honey or maple syrup.
- Add cream and vanilla. Combine well, spread over cooled base and refrigerate.

- Preheat oven to 400°F In medium bowl, mix crust ingredients together and then press into a 10 inch spring form pan.
- Bake in oven for 10 minutes and then remove and cool to room temperature.
- Reset oven to 325°F
- In large bowl, beat cream cheese, sugar substitute and flour together until well mixed and smooth.
- Add vanilla (and lemon extract or peel if desired).
- Mix.
- Add one egg at a time, beating well after each addition.
- Add milk and mix until smooth.
- Pour filling over crust and bake 45-55 minutes or until slightly firm to the touch.
- Turn off oven, open oven door slightly and allow to cool in oven (this helps prevent cracking).
- After it had cooled for about 35- 40 minutes cover and refrigerate 4-6 hours.
