Oatmeal Breakfast Bars image

This soft, chewy oatmeal breakfast bar recipe has a hint of orange marmalade, so they're a fun change of pace from typical granola bars. They're so easy to put together and so delicious, you'll find yourself making them all the time. -Barbara Nowakowski, North Tonawanda, New York

Number Of Ingredients 7

4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon salt
1-1/2 cups chopped walnuts
1 cup sweetened shredded coconut
3/4 cup butter, melted
3/4 cup orange marmalade

Steps:

  • In a large bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients. Press into a greased 15x10x1-in. baking pan. Bake at 425° for 15-17 minutes or until golden brown. Cool on a wire rack.

1 3/4 cups oatmeal
1 cup spelt flour
1/2 cup flax seed, ground
1/4 cup pumpkin seeds (or ground nuts or dried fruit of your choice)
1/4 cup butter, melted
1/2 teaspoon maple extract (Mapeline for Canadians, or Vanilla extract)
1/2 cup agave nectar
1/2 cup water (or milk)

Steps:

  • In large bowl mix dry ingredients.
  • thoroughly mix melted butter into dry ingredients.
  • in measuring cup (or small bowl) mix wet ingredients
  • thoroughly mix with dry
  • spread into 8'X8" baking pan and bake at 375 F for approx 20 minutes.
  • cut into squares, cool and enjoy.
