LOW CARB CRANBERRY SALAD



Low Carb Cranberry Salad image

Atkins South Beach Diet friendly Cranberry Salad. Great for holiday get togethers.

Number Of Ingredients 8

1 12-oz can Crushed pineapple unsweetened
1 package Cherry gelatin sugar free
1 tablespoon Lemon juice
1/4 cup Splenda
1 cup Fresh cranberries chopped fine
1 small Orange peeled, chopped
1 cup Celery chopped
1/2 cup Walnuts chopped fine

Steps:

  • Drain pineapple and save juice. Set pineapple aside for later use. Combine pineapple juice with water to equal 2 cups liquid. Prepare gelatin according to package label using juice-water mixture for the liquid. Once gelatin is dissolved, stir in lemon juice. Chill until partially set. In a separate bowl, combine the pineapple, sugar substitute, cranberries, orange, celery and nuts. Add this mixture to the partially set gelatin and stir until blended. Pour into large mold or individual molds. Chill until firm. Do not use fresh or frozen pineapple in this recipe! It will not allow the gelatin to jell.

6 Tbsp all purpose flour
2 c med or sharp grated cheddar cheese
1/2 c splenda sweetner
2 Lg can(s) pineapple, crushed (with splenda) - drained
1 stick margerine or butter melted (do not use spread)
1 pkg ritz crackers ... crushed ( that is 1 sleeve )

Steps:

  • 1. Mix first 4 ingredients,just enough to combine ... put in casserole dish pour melted butter over top, sprinkle crushed RITZ on top of everything.
  • 2. Bake @ 425 F for 25 minutes. ENJOY!!

1/2 cup butter, melted
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 cup fat-free sour cream
1 can (20 ounces) unsweetened crushed pineapple, drained
Sugar substitute equivalent to 2 teaspoons sugar

Steps:

  • Combine crumbs and butter; press into bottom and up the sides of a 9-in. pie plate. Bake at 350° for 8-10 minutes; cool. In a bowl, combine pudding mix and sour cream; mix well. Stir in pineapple and sweetener. Spread into crust. Chill at least 3 hours.
