Steps:
- Put oil in large pan (or stirring style popper) with 3-4 kernels. Cover with a lid.
- Shake the pan back and forth a few times (or stir the popcorn with the popper's crank handle) to combine.
- When the first kernel pops, put the rest of the ingredients (sweetener and salt and the remainder of the popcorn) in the pan / popper.
- Shake the pan (or turn the crank handle) continuously until the popping stops.
- Put the popcorn in large (non plastic) bowl and let cool.
- In the unlikely event that there is leftover kettle corn, store in an airtight container.

Steps:
- In a large pot set on medium heat, place your oil along with two kernels of the popcorn. Caution: Be sure to wear protective covering as when the popcorn kernels pop, it will most likely pop out of the pot.
- When the two popcorn kernels pop, add your remaining kernels, sugar alternative and salt to the pot.
- Cover the pot with a lid and give it a quick shake from side to side.
- While the popcorn is heating up, make sure that you have a large bowl nearby as you will quickly need to pour the popcorn into it. also, you will need to use pot holders or mitts as you shake the popcorn and move the pot.
- Shake your popcorn pot from side to side every minute and a half to two minutes. Once it starts to pop consistently and sounds like the pot is half full, you can remove the pot from the heat or turn the heat off.
- Continue to shake the pot back and forth to avoid burning the popcorn.
- When the popcorn reaches the top of the pot, use a pot holder to remove the lid- do not stand over the pot as the popcorn will still be popping most likely. As a result of removing the lid, the popping kernel can jump out of the pot.
- Dump the popcorn into the large bowl. Remember, the pot will be hot so take precautions.
KETTLE CORN
Take a trip to the county fair with a bowl of old-fashioned Kettle Corn. Your family will never want plain popcorn again! If you use white sugar, it will taste like popcorn balls and if you use brown sugar, it will taste like caramel corn.

Steps:
- Combine all of the ingredients in a brown paper lunch bag. Fold down the top 3 times and microwave on high for 1:30-1:45 seconds. You can add more cook time in 15 increments if necessary, but be sure to keep a close eye on the maple sugar as it will start to burn if it gets too hot.
- Once the bag is removed from the microwave give it a good shake, flip it over so that all of the melted sugars from the bottom of the bag drizzle down over the popped kernels, then serve.

- Prepare all the ingredients near your stove and place the pot lid on the side. Prepare a baking sheet lined with parchment paper.
- Add the butter and vegetable oil to a 3-quart (2.8-liter) heavy duty deep pot. Heat over medium heat until the butter has melted. Add 3 to 4 popcorn kernels.
- When the kernels pop, add the rest of the kernels. Sprinkle with sugar and chili flakes (if using). Swirl in the soy sauce and immediately cover the pot (*Footnote 2). Remove the pot from the stove and set a timer for 30 seconds. (*Footnote 3)
- Turn to a medium-low heat. Put the pot back on the stove when the timer is up. Shake the pot a few times so the corns spread in an even layer. Once the kernels start to pop, shake the pot constantly to prevent the sugar sticking to the bottom and burning. Keep the lid slightly ajar to release the steam so the popcorn will be crispier (*Footnote 4). You should see a wisp of smoke coming from the gap. If you see too much smoke coming from the gap, remove the pot from the stove to let it cool off. Once the popping slows down, about a few seconds between pops, remove the pot from the heat. Uncover the pot and spread the popcorn onto the lined baking sheet. (*Footnote 5)

- You can use any method of popping popcorn for this recipe. My favorite way is air-popping, since it has no added oil or butter. You can also use microwave popcorn, but I suggest buying reduced fat, less butter, or the 100 calorie bags (regular microwave popcorn is NOT skinny).
- Toss with melted coconut oil or butter spread (if you're using air-popped or freshly popped popcorn). Omit this step if you're using microwave popcorn that has butter flavoring.
- Sprinkle abut 1/2 to 1 packet of splenda over your popcorn, to taste. You can also use your favorite sweetener in place of the splenda.

- To a large, heavy-bottomed pot, add oil and 3 kernels of popcorn. Cover and heat over medium-high heat (medium if your stove runs hot). When you hear all three kernels pop, add remaining popcorn and salt. Shake pan for a few seconds to coat the kernels in oil and then pour sugar and salt over the top. Return lid to the pot, leaving a small crack to allow steam to escape.
- Shake every few seconds until popcorn starts popping, and then shake continuously. Pull the pan from heat when there are between 1 and 2 seconds between pops. Immediately transfer popcorn to your prepared bowl, shaking the pan as you go.
