6 oz Tomato paste
1 cup Water
1/4 cup Besti Powdered Erythritol
3 tbsp White vinegar ((or apple cider vinegar for paleo))
1 tsp Sea salt
3/4 tsp Onion powder
1/2 tsp Garlic powder
1/4 tsp Paprika
1/8 tsp Ground cloves
1/8 tsp Mustard powder

Steps:

  • Whisk all ingredients in a small saucepan, until smooth.
  • Simmer for about 30 minutes over low heat, with a cover, until the ketchup thickens (reduces) to your desired thickness. (Time will vary widely depending on the size of your pan.) Stir occasionally while simmering. Taste, and adjust salt and sweetener if needed.
  • For the best consistency, puree the ketchup in a high-power blender for at least 30 seconds, until smooth. (This step is optional, but recommended for texture.)

12 oz tomato paste
16 oz tomato puree
1 tbsp olive oil
2 tsp salt
1 onion, minced
1/2 tsp mustard
1/3 tsp cloves
1 tsp oregano
1/2 tsp onion powder
1/2 tsp garlic powder
pepper, to taste
3 cloves garlic, mashed and minced
1/3 cup apple cider vinegar
1/3 cup red wine or balsamic vinegar

Steps:

  • Heat oil in a medium saucepan over medium heat. Add garlic and cook until fragrant. Add onion and salt, and cook until onion is softened. Pour in vinegars and bring to a boil. Add the tomato and tomato paste, and bring to another boil, stirring frequently.
  • Add in the rest of the ingredients, stir well and reduce heat to medium-low. Bring to a gentle simmer, and let cook, uncovered, until desired thickness is reached, stirring occasionally. I cooked mine for about an hour, though if I had time I would have let it reduce further. It depends on the size on the pot you're using. Taste the sauce to make sure you're happy with the flavour, and then remove from heat and let cool about 20 minutes.
  • Add the sauce to a blender, and blend until smooth. This ketchup will last for about 2 weeks in the fridge (if you haven't eaten it all by then). Makes about 2 cups.

2.5 ounces tomato paste (70 grams)
1 tablespoon apple cider vinegar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground cloves (optional)
1/8 teaspoon ground allspice (optional)
1/8 teaspoon ground cinnamon (optional)
1/8 teaspoon spanish paprika (optional)
1/4 teaspoon sea salt crystals (or to taste)
1 tablespoon Sukrin Gold (optional)

Steps:

  • In a sauce pan over low heat, pour tomatoes, tomato paste, apple cider vinegar and spices. Stirring regularly for 10 to 15 minutes.
  • Using a stick blender (immersion blender), purée whole tomatoes. Add sea salt to taste and opt to add Sukrin Gold. Continue over low heat and stir regularly until sauce thickens, about 5 to 10 minutes.
  • Cool and transfer in an airtight container. Store in the refrigerator for 1 to 2 weeks.

2 tbsp apple cider vinegar
1 garlic clove (mashed)
1/4 tsp Dijon mustard
1/4 tsp onion powder
1 pinch ground allspice
1 pinch cinnamon
salt and pepper (to taste)
1 tbsp golden erythritol (optional ***see notes)

Steps:

  • Combine all ingredients, cook on a low heat for 30 minutes.

  • For the ketchup, add all ingredients to a medium size pot and mix well. Bring to a slow simmer, place a lid on the pot, and cook for 30 minutes. Stir the ketchup every 5 minutes and give it a taste after 15 minutes. You may want more monk fruit to make it sweeter, or more vinegar, but trust me, the balance of flavors should be right. After 30 minutes, remove the lid and let cook another 15 minutes. The texture should be slightly looser than ketchup and will thicken after it cools. Carefully blend the ketchup using a hand blender or blender, this will whip some air into it and make the ketchup smooth.
  • While the ketchup is cooking, preheat oven to 400F convection or 425F bake. Peel & slice the potatoes into medium thick fries. Take a look at the video to see how I did it. Cover the fries with cold water and use your hands to rinse the starch out. Do this 2 times, the more starch that releases the crispier the fries will be.
  • Dry the fries using a towel and toss in a large bowl along with 2 tablespoons of avocado oil and 1.5 teaspoons of salt. Mix well and transfer to a baking sheet in one even layer. Bake for 20 minutes then flip the fries. Cook another 15-20 minutes until the fries are deep golden brown.
  • Serve the fries with the ketchup and enjoy! Transfer leftover ketchup to an airtight container, allow to cool, and store in the fridge for 3 weeks, or freeze for 6 months. Enjoy!
