HARIBO GOLD-BEARS GUMMY CANDY HACK
The nearly 100-year-old German candy recipe can be hacked with Jell-O and a few other ingredients. This recipe makes one flavor, but can be repeated for every flavor you want to include in the finished product.

Steps:
- Combine Jell-O, unflavored gelatin and citric acid in a medium microwave-safe bowl and stir to combine.
- Add the corn syrup and water, and stir gently with a soup spoon until all of the ingredients are blended together. Stirring too fast may add air bubbles to the mixture, so keep it slow and sweeping. Let the mixture sit for 5 minutes so that the gelatin can bloom.
- Stir the candy syrup gently again, then microwave it on high for 30 seconds. Stir it again, then zap it for another 15 seconds. Repeat heating it for 15 seconds 3 more times for a total heating time of 1 1/2 minutes. If air bubbles begin to form on the surface of the gelatin, stop heating and stir gently. You don't want any bubbles in the syrup if you can help it. Let the mixture sit for 10 minutes. Give the solution a gentle stir every couple of minutes and you should see it become clearer over time.
- Spray the bear molds lightly with oil spray.
- Pour the candy syrup into a measuring cup with a spout, then carefully pour the liquid into the bear molds. Don't fill each bear all of the way to the top. Leave a little room in each mold.
- Let the candy sit for 30 minutes, then put the molds into your refrigerator for another 30 minutes.
- When the candy is firm push each piece out of the molds and arrange them on a baking sheet or in a large storage container so that they are each standing upright. Let them sit this way for 48 hours, then lay them on their backs for 24 hours. This process will help the bears dehydrate so that they are chewy like the originals. Depending on your climate, your gummy bears may have shrunken enough after 72 hours. If not, leave them out for another day or two, until they are chewy. Toss them around every so often as they dry out. When they are chewy enough for you, seal them up in an air-tight covered container or zip-top bag. Keep them stored in a sealed container and they should last for a couple weeks.

Steps:
- **Wash your strawberries, slice the greens off and puree in a blender. Measure 2 cups of the puree and place in a medium-sized bowl.
- Stir in the lemon juice, stevia and food coloring.
- It helps to have another person help you here. Have one person spread open a nut milk bag over a large bowl while you pour the strawberry mixture inside. Tie the bag closed and squeeze the bag to get as much liquid out as you can. You should get 1¾ cup (or 334g) of the mixture after straining.
- Pour the mixture into a nonstick saucepan, sprinkle the gelatin overtop and let it sit for 5 minutes. Stir it together and smush any big clumps of gelatin, don't worry about the small ones, they'll dissolve.
- Place the pan over medium-high heat and stir occasionally, until it comes to a light boil. Stir constantly when the mixture boils harder. When you can't stir the bubbles away, keep it on the heat for ~30 seconds and then remove from the heat. Let the mixture sit for a few minutes so the foam/bubbles have a chance to go away, then carefully scoop the mixture into gummy bear molds.
- Let the molds cool on the counter for about an hour, then place them in the fridge. Refrigerate until firm. To store, place gummy bears in an airtight container and refrigerate.
SUGAR-FREE SOUR GUMMIES RECIPE
Steps:
- Get 2 small microwave safe bowls or cups and a small spoon. A coffee cup and regular eating spoon should work just fine.
- Add the gelatin and Snappin Green Apple packets to one of the bowls/cups. Stir the powders together.
- Then, add half the water to the opposite bowl/cup. Microwave for about 20-30 seconds until the water is hot. Carefully remove from microwave and set aside.
- Next, prepare your gummy bear molds for pouring these homemade sour gummy bears and have your squeezer within reach.
- Add the remaining half of the room temperature water to the powdered mixture. Be ready to stir quickly as the mixture will start to stiffen quickly.
- Once the mixture is blended evenly into a paste, pour the hot water over the paste and stir until a thin syrupy mixture is formed. If needed, microwave for about 10 seconds to help get any clumps out.
- Now use your squeezer to fill the gummy bear molds. Refrigerate for 15-20 minutes. The time needed to set will depend on how hot the mixture is before placing it in the mold. However, this sugar-free sour gummies recipe will set quickly once it has been refrigerated.
- Once the gummy bears have set, unmold the bears and eat up! If you have extra gummy bears, you can place them in a container and store them in the refrigerator for a few days.

HOMEMADE SUGAR-FREE GUMMY BEARS
A great alternative for anyone watching their sugar intake but craving some chewy gummy candies! The best part is the flavor possibilities are limitless! Yum! I make these in gummy bear molds, but they can be made using any kind of candy mold. They can be stored at room temperature, but they retain a better gummy texture when stored in the fridge.

- In a small saucepan heat 1 1/2 cups of water with a 1/2 cup of sugar substitute. You need to heat this just enough for the sugar substitute to dissolve in the water. Be sure to taste it and add more sugar substitute if it’s not sweet enough for your taste buds.
- Put a 1/2 cup water in a microwave-safe container and bring it to a boil using the microwave. (or you can use the stove top for this part too)
- Pour 5 tbs of Great Lakes Unflavored Gelatin into the hot water and mix it quickly. I found it easy to use my Nutri Ninja blender for this part because it starts to thicken pretty fast.
