SUGAR FREE GREEK YOGURT WHOLE WHEAT WAFFLES
This is my family's favorite healthy Belgian waffle recipe that has whole grain goodness, no sugar, no oil, but isn't lacking in flavor or a fluffy texture. The base can be customized with add-ins such as blueberries, chocolate chips or mashed banana. If you like to meal prep, these waffles freeze and reheat well. I have successfully kept the prepared batter in the fridge overnight, although you may have to thin with water to get the right consistency. ON SERVING SIZE: The serving amount will vary based on the size of waffle iron used."

Steps:
- In a large bowl combine the first five ingredients (flour, baking powder, baking soda, salt, cinnamon) and zest if using; stir to mix.
- In a medium bowl whisk together the yogurt and egg until smooth. Slowly add the milk (I use plant-based), water and vanilla stirring after each addition.
- Pour the wet ingredients into the dry; stir until combined. The batter will be a bit lumpy. Let sit 10 minutes.
- Meanwhile, prepare and preheat your waffle iron as needed.
- After the batter has rested, check the consistency. It will be thick but spreadable.
- Cook the waffles in accordance with your waffle iron. My 7" Belgian uses about 1/2 cup of batter per waffle.
- Top with pure maple syrup, fruit or whatever you fancy and enjoy!

- Beat egg whites: Beat the egg WHITES in a clean bowl with electric beaters until stiff peaks form.Combine batter: Add wet ingredients to dry ingredients and stir just to combine (4-5 stirs should be enough!). Add the beaten egg whites and carefully fold in just until incorporated. Do NOT overmix. Batter will be thick. If it's too thick, add a few extra tablespoons club soda.
- Bake waffles: Cook the waffles according to your waffle iron's instructions. I scoop the batter with a cookie scoop to make less of a mess.
