This lighter version of French toast casserole eliminates the sugar and butter, yet still tastes great. Make it the night before and pop it in the oven in the morning for fuss-free breakfast morning prep!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Line bottom of prepared baking dish with bread cubes. Beat eggs, milk, 2 tablespoons sweetener, 1 teaspoon cinnamon, and vanilla extract together in a bowl; pour mixture over bread cubes. Let stand 10 minutes (or refrigerate up to overnight if desired).
- Combine remaining 2 tablespoons sweetener with remaining 1 teaspoon cinnamon; sprinkle mixture over the casserole.
- Bake in the preheated oven until casserole is set and topping is crunchy, 30 to 40 minutes.

Delicious and decadent, simple spin on French toast. Got the idea from a bed and breakfast in the south. Add additional ingredients; we like blueberries and cream cheese, cinnamon apples, nuts, and dried fruit!

Steps:
- Grease a 9x12-inch baking dish.
- Stir 1 cup brown sugar and butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
- Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
- Preheat oven to 450 degrees F (230 degrees C). Remove and discard plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture.
- Bake in the preheated oven until browned and bubbling, about 30 minutes.

FRENCH TOAST CASSEROLE
French Toast Casserole is perfect for prepping the night before and popping in the oven for a weekend or holiday brunch! An overnight French toast bake with cinnamon, vanilla and maple syrup and crispy cinnamon sugar topping.

Steps:
- Lightly grease a 9x9" pan.
- Cut or tear bread into 1" cubes and place in pan -- it will be full and that's okay!
- In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon and vanilla. Pour over bread in pan, doing your best to evenly distribute the mixture over the bread.
- Using a spatula, press the bread down into the liquid the best you can.
- Cinnamon Sugar: In a small bowl, combine sugar and cinnamon. Sprinkle over bread.
- Cover and refrigerate at least 2 hours or overnight.
- Cover (with foil or a lid) and bake at 350 degrees F for 40 minutes. Remove cover and bake another 15-20 minutes until set in the middle and top is slightly crispy.
- Glaze: stir together powdered sugar and milk and drizzle over French toast, or serve with syrup, fruit, whipped cream or yogurt as desired.

SUGAR FREE FRENCH TOAST CASSEROLE

- Prepare the baking dish by coating it with nonstick spray. Then set the baking dish aside. Tear the bread into bite sized pieces (about 1 ½"). Then place the pieces into the baking dish. Spread the bread out to cover the entire dish.
- In a large mixing bowl, use a whisk to mix together the eggs, milk, heavy cream, vanilla extract, and brown sugar alternative. Pour this over the bread that is in the large baking dish. Use the backside of a tablespoon to gently press the bread into the bread. Then distribute the strawberry pieces into the bread. Cover the baking dish and refrigerate from a half hour to up to overnight.
- When you are ready to bake your French toast casserole, take the casserole dish out of the refrigerator, remove the cover, and allow it to get to room temperature.
- Preheat the oven to 350 and bake until it begins to turn golden brown and the eggs are fully cooked (about 30-35 minutes). Allow this to cool for five minutes before serving.

- Melt butter in a 9 x 13 baking dish. (I cut the butter into slices and pop the pan in a conventional oven at 400F or microwave oven for a minute on HIGH until the butter melts. Watch carefully with either method.)
- Add brown sugar to baking dish. Stir into butter until mixed.
- Place 8 slices of bread in the bottom of the baking dish.
- In large bowl, mix eggs, sweetened condensed milk, pumpkin puree, vanilla extract, and pumpkin pie spice, beating well.
- Pour half of the mixture over the bread slices in the baking dish. (If using gluten-free French bread, you can pour all of the mixture over the slices at this point.)
- Add the remaining slices of bread.
- Pour remaining egg mixture over the bread in the baking dish.
- Cover and refrigerate overnight. (Or for 6 to 8 hours. I assemble this casserole in the morning---at least by noon---when we want to enjoy it for "brinner.")
- Bake covered at 350F for 35 to 45 minutes. (Check at 35 minutes.)
- Sprinkle casserole with powdered sugar if you like and serve with maple syrup or honey. We like a mixture of honey and melted butter as our "syrup." Or even a dollop of whipped cream/topping. (I like this dairy-free whipped topping or my homemade whipped cream, especially the cinnamon version.)
SUGAR FREE FRENCH TOAST RECIPES (KETO, LOW CARB)

- In a medium-size bowl, whisk together 1 egg, 2 tablespoons of unsweetened almond milk, ¼ tsp of vanilla extract, and ¼ tsp of cinnamon powder.
