Sugar Free Cranberry Sauce with Rosemary and Ginger image

This gorgeous, delicious sugar free cranberry is simple to make. Low sugar cranberry sauce is the perfect side dish whether it is for Thanksgiving, Christmas or a simple weeknight dinner. This cranberry sauce with pears is sure to be a hit this holiday season! It is super quick and easy cranberry sauce recipe to make and does not include any refined sugar. Once you try this recipe, you'll never look at store-bought cranberry sauce the same.

12 oz. fresh cranberries
2 medium ripe pears (peeled and diced)
2 t. fresh ginger (peeled and grated)
3 T. fresh rosemary leaves (finely diced)
1/4 cup sugar free maple syrup
¾ c. water
salt

Steps:

  • Add cranberries, pear, ginger, rosemary leaves, sugar free maple syrup, and water to a medium saucepan. Cook over medium-high heat, stirring occasionally, until the mixture starts to boil and the cranberries burst open, approximately 5 minutes.
  • Reduce heat to medium-low and simmer for another 5-10 minutes. While cooking, mash the cranberries and pears with a wooden spoon. Season with a pinch of sea salt and stir to combine.
  • Remove from heat and allow sauce to cool for 15-20 minutes before checking the consistency. Add a little water if the sauce is too thick. Taste and add more maple syrup for a sweeter sauce, if desired.
  • Optional: For a smoother sauce, blend one-half of the cranberry mixture in a food processor or blender until smooth. Stir puree back into the remaining sauce before serving.
  • Serve immediately or chill before serving. Enjoy!

I use this for my diabetic friends who come on Thanksgiving and Christmas. I got this recipe from an Equal recipe card somewhere.

2/3 cup water
2 cups fresh cranberries or 2 cups frozen cranberries
1 cup Equal sugar substitute (or 24 packets Equal sugar substitute or 7 1/4 teaspoons Equal sugar substitute)

Steps:

  • Combine water and cranberries in a medium saucepan. Bring just to boiling; reduce heat.
  • Boil gently, uncovered, over medium heat 8 minutes, stirring occasionally (skins will pop).
  • Remove from heat mash slightly.
  • Stir in Equal; cover and chill.

200g cranberries, fresh or frozen
100g golden caster sugar
large rosemary sprig
4 tbsp gin

Steps:

  • Tip the cranberries, sugar and rosemary into a pan with about 100ml water. Cook over a low heat for about 15 mins, stirring occasionally, until all the cranberries have burst and the sauce has thickened to a syrupy consistency. Fresh cranberries thicken the sauce more readily than frozen, so it may take a little longer, but be careful not to let the sauce become a jam.
  • Scoop out the rosemary and stir through the gin. Cook for 1 min more, then leave to cool. Will keep, covered, in the fridge for three days.
