SUGAR-FREE CRANBERRY GELATIN SALAD

- In a 3-qt. microwave-safe dish, combine cranberries and apple juice concentrate; cover with waxed paper. Microwave on high for 6 to , 7-1/2 minutes or until most of the berries have popped. Immediately stir in gelatin powder until dissolved. Cool for 10-15 minutes. Add remaining ingredients; mix well. Pour into a 2-qt. ring mold coated with cooking spray. Refrigerate until firm, about 3 hours. Unmold onto a serving plate just before serving.

- Combine the gelatin and boiling water; stir until gelatin is dissolved. Mix in cranberry sauce and pineapple.
- Transfer to glass serving dishes. Sprinkle with chopped nuts. Chill until set and serve.

"CRANCRACK" CRANBERRY SALAD
This was my mothers recipe, and named by my son because it is so addictive. By replacing the Jell-O® with sugar-free Jello-O®, using no-sugar-added pineapple, and your choice of sugar substitute, this turns into a reduced-carb recipe. If you don't have a grinder, use a blender and water to grind the cranberries, then drain.

- Process cranberries and orange in a food processor until finely ground.

- place the chopped cranberries and splenda in a cake pan and mix well. Push the berries to one end of the pan. Place the covered pan in the frig, tilting the end with the berries up. Leave in the frig overnight, carefully take from the frig and pour juice out or scoop berries out into a bowl. Mix in the pineapple, grapes, walnuts, and whipped topping. Chill for about an hour, mix in banana and serve.

My Aunt "T" gave me this simple recipe because she made it for all the family get togethers and I had nothing to make on year. We used "sugar free" as her husband is a diabetic and he ate this as his dessert. I am sure there is a lot of room for other combo's here too.

- Mix the 3 gelatins with 3 cups boiling water.
- Chill in the refrigerator until the consistency of egg whites.
- Add the cranberries, pineapple (drained), celery, and pecans.
