3 Tbsps xylitol (or Stevia sugar substitute)
1 Tbsp Baking powder
0.25 tsp salt
0.5 tsp ground cinnamon
2 large eggs
1.25 cups milk
0.5 tsp vanilla extract
3 Tbsps butter (melted)
4 small, eating Apple (peeled and sliced)
vegetable oil (for frying)

Steps:

  • Stir together the flour, xylitol, baking powder, salt and cinnamon in a mixing bowl.
  • Whisk together the eggs, milk and vanilla, then whisk in the butter to make a thick batter.
  • Put some flour on a plate and dredge the apple slices until lightly coated, shaking off any excess flour.
  • Heat a little oil in a frying pan and cook 3 apple slices for 2-3 minutes until lightly browned.
  • Ladle about 2 tablespoons of the batter over each apple slice. Cook, until bubbles appear on the surface of the pancakes and the undersides are golden brown.
  • Add more oil to the frying pan, as needed and turn over the pancakes. Cook until golden on the underside.
  • Repeat with the remaining apples and batter. Serve immediately or keep warm in a low oven.

1/4 cup plus 2 tablespoons granulated sugar
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
3/4 cup whole milk
2 large eggs, room temperature
2 tablespoons melted unsalted butter
1/2 teaspoon pure vanilla extract
2 sweet apples, such as Rome, McIntosh, or Gala, peeled, cored, and cut into 1/4-inch pieces (about 3 cups)
Safflower oil, for frying
Confectioners' sugar, for dusting

Steps:

  • In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, whisk together milk, eggs, butter, and vanilla. Gently fold milk mixture into flour mixture until just combined. Fold in apples.
  • Meanwhile, heat 2 inches of oil in a medium heavy-bottomed pot over medium-high heat until a thermometer registers 350 degrees. Set a wire rack in a rimmed baking sheet.
  • Working in batches, drop heaping tablespoons of dough into oil. (A small ice cream scoop works especially well for creating uniform-size fritters.) Cook, turning once, until puffed and golden, 3 to 4 minutes. Transfer to rack with a slotted spoon. Let cool slightly, dust with confectioners' sugar, and serve.

1 apple, peeled and chopped
½ cup chopped pecans
½ cup butter, melted
¾ cup brown sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix white sugar and cinnamon together in a large resealable bag; add biscuits and seal. Shake bag until biscuits are coated in cinnamon-sugar.
  • Arrange half the apples and half the pecans in a round formation in an 8x8-inch pan; top with half the coated biscuits. Arrange half the remaining apples and pecans in a second layer and top with coated biscuits.
  • Melt butter in a saucepan over medium heat; dissolve brown sugar and vanilla extract in the melted butter. Pour butter-sugar mixture over biscuit mixture.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.

3/4 teaspoon ground cardamom
2 Honeycrisp or other firm sweet-tart apples, peeled, cored, sliced into scant 1/4"-thick rings (8-10 rings per apple)

Steps:

  • Fit a wide heavy pot with candy thermometer. Pour in oil to a depth of 2" and heat over medium-high until thermometer registers 375ºF.
  • Meanwhile, whisk flour, 1/4 cup sugar, 3/4 tsp. cinnamon, and 1 1/4 tsp. salt in a large bowl. Add beer in a slow, steady stream, whisking until smooth.
