MOMMY'S BANANA BREAD
Absolutely the best banana bread in the universe! The crust on most recipes is dry because the pan is buttered and floured... but the crust becomes the best part when the pan is buttered and cinnamon-sugared!

- Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9x5-inch loaf pan with 2 teaspoons butter. Mix 1 tablespoon of sugar with 1 teaspoon of cinnamon in a small bowl, and pour the mixture into the buttered pan. Swirl and tap the pan to distribute cinnamon-sugar all over the inside of the pan, up to the rim.
- In a bowl, whisk together flour, baking powder, salt, 1 teaspoon of cinnamon, and the nutmeg. In a large mixing bowl, beat 1/2 cup of butter with 1 cup of sugar until creamy; beat in eggs, one at a time, until thoroughly incorporated. Stir in the mashed bananas and milk. Mix in the flour mixture just until thoroughly moistened (a few lumps are fine), and scrape the batter into the prepared loaf pan. Sprinkle the top of the batter with 1 more teaspoon of sugar.
- Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Let cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

A twist on my Mom's Banana Bread this quick bread is easy and full of blueberries then topped with a cinnamon sugar topping!

- Preheat oven to 375°F. Grease a 9x5x3" loaf pan with butter and coat it with sugar. (You do this like you would grease and flour a pan. Grease it first, then add about 2 tablespoons sugar to the pan and move the pan side to side until the bottom and sides are coated with sugar. Do NOT substitute cooking spray for the butter. You can skip the sugaring and just use cooking spray, if you wish.)
- Cream butter and 3/4 cup sugar with a hand mixer. Set aside.
- Add bananas, eggs, milk, vanilla, salt, and baking soda to a blender jar and blend until smooth.
- Pour half the banana mixture into the butter mixture with 1 cup of flour. Mix with hand mixer until just incorporated, then add the remaining banana mixture and flour. Mix until just incorporated. Stir in blueberries. (Make sure that your frozen berries are not overly wet; pat them dry and/or remove any ice crystals or your batter will be too wet.) Pour into prepared pan.
- Combine 1/4 cup sugar and cinnamon in a small bowl. Sprinkle evenly over the top of the batter.
- Bake for 45-50 minutes until a toothpick comes out with just a few crumbs. The edges will be a dark brown and there will be a nice crack down the center.
- Cool completely before removing loaf from pan, but you can cut slices from the pan after it's cooled for about 15-20 minutes.

- Preheat Oven to 350 degrees.
- Combine sugar with melted butter and stir in mashed bananas, eggs, and vanilla.
- Pour flour over banana mixture and sprinkle with baking soda and salt.
- Mix just until no dry spots remain- do not over mix.
- Prepare pans by spraying liberally with cooking spray and coating the sides with sugar by swirling and tapping.
- Fill pans 2/3 of the way full and sprinkle more sugar on top.
- Bake for 30-40 minutes depending on pan size. Bread is done when a toothpick inserted into the middle comes out clean.
- Let cool and invert to remove loaves.

- Reserve a lengthwise half of a banana. Place the rest of the bananas in a medium bowl and use your hands to break them up into smaller chunks. Use a fork or a potato masher to mash these banana chunks until you have a chunky mixture. Set aside.
