FROSTED SOFT SUGAR COOKIES

Super SOFT sugar cookies that just melt in your mouth!! To make things even better, they're topped with the BEST sugar cookie frosting!

1/2 cup unsalted butter
1/2 cup canola or vegetable oil
1/2 cup granulated sugar
1/2 cup confectioners' sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/3 cup butter, softened
2 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt, optional and to taste
2 1/2 to 3 tablespoons milk or cream, or as needed for consistency
food coloring, optional (I used 3 drops red food coloring to make pink)
sprinkles, for decorating

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) add the butter, oil, sugars, and beat on medium-high speed until creamed and combined, about 4 minutes.
  • Add the egg, extracts, and beat until combined.
  • Add the flour, baking soda, cream of tartar, salt, and beat on low speed until just combined.
  • Using a 2-tablespoon cookie scoop, or your hands, form approximately 20 equal-sized mounds of dough, roll into balls, and flatten about halfway.
  • Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 7 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.
  • Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I use a half-sheet pan and bake 8 cookies per sheet) and bake for about 8 minutes (if your cookies are smaller than mine, reduce baking time) or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake. Cookies firm up as they cool.
  • Allow cookies to cool on baking sheet for about 9 to 10 minutes before serving. I let them cool on the baking sheet and don't use a rack. While cookies are cooling, make the frosting.
  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) add the butter, sugar, vanilla, optional salt, and beat on medium-low speed until creamy.
  • Slowly add the milk or cream, as necessary, to achieve desired frosting consistency.
  • Optionally add the food coloring as desired.
  • Add a generous dollop of frosting to each cookie and add sprinkles to taste.

This is the frosting I like to use for my soft sugar cookies, "Recipe#286412". It uses heavy whipping cream and I like to add green or red food coloring to it when I make the cookies for Christmas. It should make enough to frost about 4-5 dozen cookies, depending on how thick of layer you use on each cookie and how big the cookies are. Update: 12/21/2009: I have changed the recipe to increase the amount of whipping cream. I agree with the other reviewer that more is needed but be sure to add the whipping cream gradually and then add the rest if needed.

1 1/2 cups flour, sifted
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup shortening or 1/2 cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
1 tablespoon cream or 1 tablespoon milk

Steps:

  • Before making, consider doubling it, since we always do!
  • Cream the butter, then add sugar, egg, and cream.
  • Mix together the dry ingredients, then add to wet ingredients.
  • Chill thoroughly in fridge (usually an hour).
  • Roll out and cut into desired shape.
  • Cook at 400 degrees for 10 minute.

These cookies are good without the frosting, but taste FANTASTIC with the frosting. These can be made for any occasion and are always elegant, yet casual. (depending on how you decorate them) I promise that you will love this recipe just as much as I do. Work best with cookie cutters.

1 cup shortening
1 cup sugar
3 eggs, beaten
1 tablespoon baking soda
2 tablespoons milk
3 cups flour
1/8 teaspoon salt
1 teaspoon vanilla, and or 1 teaspoon nutmeg
3 cups powdered sugar
6 tablespoons butter
1 1/2 teaspoons vanilla
2 -3 tablespoons milk (depending on how thick you like it)

Steps:

  • Cookie directions:.
  • Flour cutting board well.
  • Roll out 1/3 of dough out at a time (if using cutouts).
  • If not using cutouts, roll into small balls and place onto a large cookie sheet.
  • If using cutouts, use cookie cutouts and use a spatula to place on a large cookie sheet.
  • Bake at 350°F for about 8-10 minutes, or until slightly browned.
  • Wait until cooled to put frosting on.
  • Frosting directions:.
  • Mix powdered sugar and butter.
  • Stir in milk and vanilla.
  • Beat until frosting is smooth and of spreading consistency.
  • Yield: frosting makes enough to frost a 9 by 13-inch cake.

1 cup sugar
1/2 lb butter
1 egg
3 cups flour
1/4 teaspoon lemon juice or 1/4 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon salt
1 egg white, slightly beaten
1 1/2 cups confectioners' sugar
1 tablespoon margarine, melted
1/8 teaspoon salt
1/2 teaspoon vanilla
food coloring (optional)

Steps:

  • In a mixer, cream butter and sugar until very smooth.
  • Add egg and beat until light and fluffy.
  • Add flour, lemon juice or vanilla, baking soda and salt; beat until well mixed.
  • Roll out in sections on a pastry cloth, and cut out with cookie cutters.
  • Place on ungreased cookie sheet and bake 7-10 minutes in a preheated oven (350F).
  • For frosting: mix ingredients together until smooth.
  • Frost cookies once cooled.
