WARM TOASTED MARSHMALLOW S'MORES BARS
Grand Prize-Winning Recipe 2006! Mmm! Irresistible warm, gooey marshmallows, milk chocolate and graham crackers are baked into a delicious bar cookie.

- Heat oven to 375°F. In large bowl, stir together cookie mix and crumbs. Stir in melted butter until soft dough forms. Press into ungreased 13x9-inch pan.
- Bake 18 to 20 minutes or until set. Immediately sprinkle chocolate chips over crust. Let stand 3 to 5 minutes or until chocolate begins to melt. Spread chocolate evenly over crust.
- Set oven control to broil. Sprinkle marshmallows over melted chocolate. Broil with top 5 to 6 inches from heat 20 to 30 seconds or until marshmallows are toasted. (Watch closely; marshmallows will brown quickly.) Cool 10 minutes. For bars, cut into 6 rows by 4 rows. Serve warm. Store any remaining bars tightly covered.

- Place 2 candy bars on each of 4 cookies; place on grill rack. Grill, uncovered, over medium-hot heat for 1 to 1-1/2 minutes or until bottoms of cookies are browned., Meanwhile, using a long-handled fork, toast marshmallows 6 in. from the heat until golden brown, turning occasionally. Remove marshmallows from fork and place over candy bars; top with remaining cookies. Serve immediately.

- Preheat oven to 350°.
- While the oven is preheating make the cookie dough. Cream together the butter and sugar until light and fluffy.
- Scrape the sides, add in the eggs, vanilla extract and almond extract. Beat until mixed.
- Scrape the sides and add in the flour, & baking powder. Mix until thoroughly combined.
- Scoop out 1/4 cup of dough and roll into a ball. Repeat with remaining dough.
- Flatten the cookie dough by gently pressing the bottom of a drinking glass or measuring cup down on the center of the cookie dough.
- Repeat with remaining dough. The cookies will spread so make sure to leave room. I tend to only put 6 cookies per pan.
- Bake at 350° for 9-11 minutes or until the centers of the cookies have puffed up and are no longer glossy.
- Allow them to cool on the cookie sheet.
- While the cookies are cooling, make the frosting.
- Cream the butter until smooth. Slowly add in the powdered sugar, almond extract and milk until smooth and creamy.
- Add 4 drops of neon pink food coloring, if desired.
- Spread on the still slightly warm cookies, this will melt the frosting slightly which will give it the nice smooth finishing look.
- Once the cookies have completely cooled, chill in the fridge until ready to serve. These cookies are served chilled.

- Preheat oven to 350°F (177°C). Line an 8×8 or 9×9 square baking pan with parchment paper, leaving enough overhang on the sides to easily remove the bars when they have cooled. Set aside.
- In a large bowl using handheld or stand mixer fitted with a paddle attachment, cream the butter and brown sugar together on medium-high speed. Beat for about 2 minutes until smooth and combined, then add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed. Set aside.
- Toss the flour, graham cracker crumbs, and baking powder together until combined. With the mixer running on low, slowly add the dry ingredients into the wet ingredients. Mix until combined.
- Press 2/3 of the graham cookie dough into prepared pan. Spread the marshmallow creme on top. This will be tricky since the marshmallow creme is so sticky, but do the best you can to get an even layer. (Sometimes I spray the bottom of a spatula with nonstick spray to spread it around.) Sprinkle the marshmallow creme with chocolate chips. Mold the remaining cookie dough into flat pieces and layer on top of the chocolate chips. You won’t have enough dough to make one single layer, so some chocolate chips will be exposed. That’s ok.

- Place the chocolate on top. Heat your marshmallow over the fire until it begins to brown all over. Place the warm marshmallow on top of one of the chocolate and cracker. Top with the other prepared cracker. Allow the s’more to cool and melt the marshmallow and chocolate somewhat before eating.
- Microwave on medium high until the chocolate appears to be somewhat melting. Or, if not using the microwave method, heat the marshmallow until they start to brown. You can either allow the warmed marshmallow heat them chocolate or you can warm those on their cracker.
- With the melted chocolate on one cracker and the softened marshmallow(s) on the other cracker, make a sandwich. Enjoy!
