AUTHENTIC CORNISH PASTIES



Authentic Cornish Pasties image

A flaky pastry crust filled with savory meat and vegetables, the Cornish Pasty is English comfort food at its best!

3 1/2 cups (450 grams) all-purpose flour
1 teaspoon salt
5 ounces (140 grams) unsalted butter (, very cold, diced)
5 ounces (140 grams) lard (, very cold)
How to Render Lard ((click link to learn how to make it yourself. It's super easy and much cheaper than store-bought!))
2/3 cup (155 ml) ice cold water
1 pound (450 grams) beef skirt steak or sirloin (, cut into small cubes)
1 pound (450 grams) firm, waxy potato
8 ounces (225 grams) rutabaga (, peeled and diced in 1/4 inch cubes, or slice them according to personal preference )
7 ounces (195 grams) yellow onion (, chopped)
salt and pepper to taste
unsalted butter ((for cutting in slices to lay inside the pasties))
all-purpose flour ((for sprinkling inside the pasties))
1 large egg (, lightly beaten)

Steps:

  • To Make the Shortcrust Pastry: Place the flour and salt in a food processor and pulse a few times until combined. Add the cold butter and lard and pulse a few more times until the mixture resembles coarse crumbs. Add the water a little at a time, pulsing between additions, until the mixture begins to come together. DO NOT over-mix the dough or the pastry crust will be tough and won't be flaky. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 3 hours before using (this is crucial). (Can be refrigerated for a few days or frozen for up to 3 months.)
  • To Make the Cornish Pasties: Preheat the oven to 350 degrees F.Cut it into 6 equal pieces (rolling the dough into a log and then cutting makes this easier). Wrap and keep the other 5 pieces chilled in the fridge while you're working on one at a time. Roll the dough out on a lightly floured work surface to a 8 inch circle that's about 1/8 inch thick. You can use an 8-inch plate as your guide and cut the dough around it to form your circle.
  • Layer the filling (see note at end): Put layer of potatoes down the center of the pastry circle, leaving about 3/4 inch space on the top and bottom edges of the pastry dough. Lightly sprinkle with salt and pepper. Next add a layer of rutabagas, onions and finally the beef, adding a light sprinkling of salt and pepper between each layer. Lay a couple pats of butter on top of the beef and sprinkle a little flour over the filling.
  • Wet the tips of your fingers and lightly moisten the edges of the pastry dough. For this next part work gently so that the filling doesn't puncture through the dough. If this happens, patch up the hole with some of the scrap pieces of pastry dough. Bring the sides up and seal the pasty down the middle. Turn the pasty onto its side and crimp the edges in traditional Cornish fashion (see blog post pictures as a visual).
  • Assemble the remaining pasties and lay them on a lined baking sheet. Use a sharp knife to cut a slit in the center of each pasty. Lightly brush each pasty with the beaten egg mixture.
  • Bake the Cornish pasties on the middle rack for 40-50 minutes until golden in color. Remove from the oven and let them sit for about 10 minutes (they will be very hot inside) before eating. They can be reheated in the oven (recommended for a crispier crust) or microwave. NOTE: Depending on how full you stuff the pasties you may have leftover filling. No worries, just fry it up together or add it to soup and enjoy it as a separate meal.

450 grams all purpose flour (3 1/2 cups)
4 grams salt (1 teaspoon)
13 grams granulated sugar (1 tablespoon)
100 grams beef suet (1/2 cup chopped into pea size pieces and frozen)
100 grams shortening (1/2 cup)
30 grams turmeric powder (2 tablespoons)
230 grams ice cold water
450 grams all purpose flour (3 1/2 cups)
4 grams salt (1 teaspoon)
13 grams granulated sugar (1 tablespoon)
220 grams unsalted butter (1 cup or ( 2 butter sticks))
30 grams turmeric powder (2 tablespoons)
230 grams ice cold water
450 grams lean ground beef (1 lb)
1 large size yellow or red onion finely chopped
60 grams fresh escallion (scallions 3 stalks finely chopped)
25 grams Scotch bonnet pepper (1 pepper or use any hot pepper)
50 grams breadcrumbs (1/2 cup)
3 grams salt (3/4 teaspoon)
4 grams paprika (1 teaspoon)
2 grams black pepper (1/2 teaspoon)
2 grams thyme (1 teaspoon)
2 grams all spice (1/2 teaspoon)
60 grams unsalted butter (4 tablespoons or 1/4 cup)
250 grams one cup water
30 grams Olive oil (2 tablespoon
8 grams Garlic minced (2 cloves)

Steps:

  • Set stove to medium low setting and add the lean ground beef into sauce pan with 1 cup of water and 2 tablespoons of olive oil, the meat should be submerged in water completely.
  • Cook and simmer meat for approximately 20-30 minutes. Once the meat has absorbed most of the water.
  • Add in the chopped onions, scallions, salt, black pepper, minced garlic, bonnet or sweet peppers, paprika, thyme, and all spice, and stir till well combined. if you need to add some water to the ground meat do so, you don't want a dry meat, the meat should be juicy.
  • Add in the breadcrumbs slowing and stir to combine mixture. Again just make sure their is enough liquid to absorb the breadcrumb.
  • Add in the butter and combine. Once butter is mixed in, remove beef from heat and set aside.
  • To make pastry
  • In a mixing bowl with a hook attachment add the all purpose flour, salt, sugar, turmeric powder, suet, and shortening, and mix on low speed until a crumble texture is developed. If you not using suet add the butter instead. The mixture should look like breadcrumb consistency.
  • If you don't have mixing machine you can cut in the fat using your fingers or with a fork. A food processor will also work with just 6-8 pulses.
  • Add in the ice cold water and mix until ingredients are well combined and the pastry dough slightly developed.
  • Removed dough from mixing machine and wrap in plastic, place into refrigerator for 30 minutes.
  • Preheat the oven to 365F ( 185C)
  • Remove chilled dough from refrigerator and divide it into 12 equal parts for large patties or 20 equal parts for small patties.
  • Roll eash dough piece into a ball and flatten round using a rolling pin to about 4 mm.
  • For large pieces fill each pastry disc with two to 3 tablespoons of filling around the center of the pastry dough. For smaller patties fill dough with 1 - 1/2 tablespoons of meat filling.
  • Over lap the pastry dough to resemble a half moon crescent and pinch the outer end with a fork to seal the seams.
  • Place the patties onto a lined baking tray and bake in the middle rack for 25-30 minutes or until beef patty is light golden browned.

Recipe video above. This is a recipe for quiche and pie crusts, both of which are made using shortcrust pastry. This is a great, EASY classic quiche crust. Quiche crusts are just made with shortcrust pastry. Made using a food processor, very slightly adapted from this recipe by Emeril Lagasse.Inactive chill time: 1 hour. This is the recipe I've been using for years and years, and it has never failed me! Makes pastry for 1 x 23cm / 9" pie dish or tart tin (serves 8 - 12 people).

1 1/4 cups (185g / 5.6 oz) plain white flour ((all purpose flour))
1/2 tsp salt
100g / 7 tbsp unsalted butter, cold, cut into 1cm/ 1/3" cubes
3 tbsp ice cold water (+ more as required)

Steps:

  • Place flour, salt and butter in a food processor.
  • Pulse 10 times or until it looks like breadcrumbs.
  • With the motor running on low, pour 2.5 tbsp of water into the tube feeder.
  • Turn up to high and blitz for 30 seconds or until it turns into a ball of dough. Initially it will look like breadcrumbs, then it will turn into a ball of soft dough - some random escaped bits is fine. If it doesn't look like its coming together at 20 seconds, add another 1/2 tbsp of water. Don't blitz longer than 30 seconds at most.
  • Form a disc, wrap in cling wrap. If there are escaped crumble bits, that's fine - just press them in. Refrigerate for 1 - 3 hours.
  • Preheat oven to 200C/390F (standard) or 180C/350F (fan forced)
  • Sprinkle work surface with flour, unwrap dough and place on the flour. Sprinkle top with flour, then roll out into a 27cm/11" round.
  • Gently roll the pastry so it wraps around the rolling pin.
  • Unroll it over the quiche pan or pie dish - 23cm / 9".
  • Press the pastry into the edges of the quiche pan, patching up edges if required (if pastry doesn't quite reach top of rim).
  • Roll the rolling pin across the top to cut off the excess pastry.
  • Optional extra "safe measure" refrigeration - 15 minutes. See (Note 2).
  • Place a large piece of parchment paper over the pastry, then fill with baking beads or lots of rice or dried beans to weigh it down. (Note 3)
  • Bake for 20 minutes, then remove from oven.
  • Turn oven DOWN to 180C/350F (or 160C/320F fan).
  • Use excess paper to CAREFULLY remove hot beads, then return to oven for 10 minutes or until base is light golden.
  • Remove from oven and fill with chosen Quiche Filling. Quiche Lorraine, Salmon Quiche, Italian Sausage or your other filling of choice.
  • The pastry will not be 100% cooked, it finishes cooking with the filling. It's cooked enough so the crust will not go soggy.

Steps:

  • sift the flour into abowl, then sprinkle the suet in, season if desired and just mix it in lightly with your hands to distribute it evenly.
  • Now sprinkle in some cold water (you'll find you need more for this pastry than for shortcrust).
  • Begin mixing with around bladed knife, and then use your hands at the end to bring it all together to a smooth elastic dough that leaves the bowl clean.
  • suet crust should be left for 5 minutes, then rolled out immediately. You should always roll it out more quickly than shorcrust, approximately 1/2 inch thick.
