EASY RHUBARB CRISP
Growing up in Alaska, we had rhubarb growing out of our ears. This recipe is a great way to use it, and people will devour it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix flour, brown sugar, oats, butter, and cinnamon together in a bowl until crumbly. Press 1/2 of the oat mixture into the bottom of prepared baking dish. Sprinkle rhubarb over oat mixture.
- Combine white sugar, water, cornstarch, and vanilla extract in a saucepan over medium heat; cook and stir until thick and clear, about 5 minutes. Pour sugar mixture over rhubarb. Sprinkle remaining oat mixture over rhubarb.
- Bake in the preheated oven until crisp is lightly brown and bubbling, about 1 hour.

SUE'S RHUBARB PLATZ
When I moved to Winnipeg over 20 years ago, I adopted a lady from my church as my "Winnipeg Mom". This is her recipe. She was an excellent cook and enjoying baking. This fruit square is really good warm with whipped cream or ice cream, but can also be served cold. Other fruit in season can be used in place of rhubarb and in winter you can used fruit like dried apricots.

- Mix 2 cups flour, 1 cup sugar, baking powder and rub in the butter to make a meal appearance.
- Beat together 1 cup milk, eggs and almond flavoring.
- Mix these two mixtures together.
- May be lumpy.
- Spread into a 10 x 15 inch pan and cover with fruit.
- Mix together the remaining flour, sugar and melted butter.
- Sprinkle crumbs on top of the fruit.
- Bake at 350 deg. for 40 minutes. Do not overbake.
- Cut into 20 squares.

- First you are going to mix your salt and flour together. Next add your shortening or unsalted butter if using instead. The traditional recipe calls for shortening and it does create a lighter crust. The butter adds a bit more flavour but its not as flaky. I would use shortening next time and add 1-2 tsp sugar to the dough.
- Mix until the flour and butter forms clumps. Now you are going to add your cold water. Starting with 5 tsp of cold water continue to add 1 tsp at a time, working with your hands until the dough comes together.
- Next you are going to layer your fruit over the pie crust in the bottom of your pan. I chose peaches today but we made one with thinly sliced apples yesterday that was also amazing. Layer your fruit and sprinkle generously with sugar.
