This recipe was given to me by my aunt in Texas, where they like everything hot! Now, my family wants it for holidays, barbeques, or just by itself.

2 (15.25 ounce) cans whole kernel corn, drained
1 (8 ounce) package cream cheese
¼ cup butter
10 jalapeno peppers, chopped
1 teaspoon garlic salt

Steps:

  • In a medium saucepan combine corn, cream cheese, butter, jalapeno peppers and garlic salt. Cook over medium heat for about 10 minutes or until heated through, stirring constantly after cream cheese begins to melt.

1 pkg. (8.5 oz.) corn muffin mix
2 eggs
2 green onions, thinly sliced
1 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Heat oven to 350ºF.
  • Mix butter and cream cheese in large bowl until blended. Add next 5 ingredients; mix well.
  • Pour into 2-qt. casserole sprayed with cooking spray; top with cheddar.
  • Bake 50 to 55 min. or until knife inserted in center comes out clean. Let stand 10 min. before serving.

This 25 minute Mexican Street Corn Soup is inspired by the delicious flavors of elote - but with a Midwestern spin! It's loaded with tons of flavor that comes from a handful of simple ingredients - sweet corn (canned, frozen or fresh all work well!), a few key spices, heavy cream, and a splash of lime juice. Garnish with fried tortilla strips and plenty of Cotija cheese for an easy dinner your family will love!

2 tablespoons olive oil
1 small yellow onion, diced
6 cloves garlic, thinly sliced
1.5 teaspoons chili powder
1.5 teaspoons ground cumin
1/2 teaspoon paprika
1/4 teaspoon ground coriander
4 (15 oz.) cans corn kernels, drained
32 oz. vegetable broth
1/2-1 cup heavy cream
2 tablespoons lime juice
Kosher salt
fresh cracked pepper
fried tortilla strips
sliced jalapeno
fresh chopped cilantro
sour cream
cotija cheese
paprika
lime wedges

Steps:

  • Heat oil in a large pot over medium-high heat.
  • Add onion along with a couple pinches of salt and pepper. Cook for 3-4 minutes, stirring frequently.
  • Add garlic, chili powder, cumin, paprika, coriander, and a couple more pinches of salt and pepper. Cook for 1 minute, stirring frequently.
  • Add corn and cook, stirring occasionally, for 5 minutes on medium-high heat.
  • Add half the corn mixture to a blender along with the vegetable broth. Blend until smooth and creamy.
  • Pour blended soup back into the pot and stir to combine. Simmer for 5 minutes.
  • Stir in heavy cream and lime juice and season to taste with salt and pepper.
  • Garnish with your favorites and enjoy!

2 tablespoons mayonnaise
1 tablespoon lime juice
1 ½ teaspoons chili powder
4 ears sweet corn, shucked and kernels cut off
¼ cup chopped cilantro
3 tablespoons cotija cheese

Steps:

  • Whisk mayonnaise, lime juice, and chili powder together in a bowl until evenly combined. Set aside.
  • Heat a large cast iron skillet over medium-high heat. Add corn and cook for 5 minutes without stirring. Toss around with a spatula and cook until corn has started to brown, about 3 minutes more. Remove from heat.
  • Add reserved mayonnaise mixture and stir until evenly combined. Add cilantro and stir again. Transfer to serving plates and sprinkle cotija cheese over the top.

Mexican Corn is an essential and important ingredient in the Mexican Gastronomy. We use it to make drinks, tortillas, soups, breads, cakes, snacks, and an endless number of main dishes using corn as their main ingredient. But this recipe is a simple way to eat corn.

4 Corn ears with the husk still on them.
Add water as needed
2 teaspoon salt (for water.)
1/4 cup mayonnaise
1/4 cup Mexican cream or sour cream
1 lime
1/2 cup Cotija cheese*
1 teaspoon ground piquin pepper (chili powder or cayenne pepper powder)
salt to taste

Steps:

  • Fill a large saucepan or pot with water and add the 2 teaspoons of salt. Mix and turn heat to medium-high. Just make sure it is big enough for all your corn to fit properly. My pot only fits 3.
  • Cut the ends of the corn and remove some of the outer husks, leave the rest of the husk on the corn, the husk gives them some extra flavor, and this is the way they are cooked in Mexico.
  • Once the water is boiling, place the corn in the pot to cook.
  • Lower the heat to medium and cover the pot with the lid. After 5 minutes (see notes above) check the corn for doneness. If they are tender remove from pot and pull out the husks the hot corn, carefully.
  • To serve, spread cream and mayo, or mix them before spreading, add a few drops of lime juice, sprinkle with cheese, chili powder and salt to taste. Enjoy!

1 (1 ounce) package taco seasoning mix
½ (14.5 ounce) package nacho-flavor tortilla chips
2 cups shredded Cheddar cheese
½ (15 ounce) can kidney beans, drained
½ cup ranch-style salad dressing
1 chopped tomato
1 cup chopped lettuce
¼ cup chopped green onion

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
  • Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.
