SUBWAY BREAD COPYCAT RECIPE
Ever fancied a Subway soft Italian roll at home? What makes Subway's bread rolls the perfect rolls for a sandwich are that they are always soft and chewy with a lightly crisp crust. Top tip! If you fancied a cheesy roll instead of the plain Italian style Subway bread roll, sprinkle grated cheddar cheese, with a touch of garlic salt over the dough before you put the rolls in to bake.

Steps:
- Combine the yeast, warm water, olive oil, with sugar and salt then stir until the yeast mixture is nicely combined. Let the mixture stand for around 10 minutes. Then add 1 cup of flour and mix with a dough hook for approximately 5 minutes. Add the flour continuously and slowly whilst mixing until the dough is soft. Let the dough mix for a further 7-8 minutes until it is lightly sticking to the bowl. Next, empty the dough onto a floured worktop and knead the mixture until soft and smooth. Once soft, place the dough in a bowl, cover the bowl with cling film and leave it to rise for approximately half an hour. Once the dough has risen, divide it into 4 balls, and roll each ball into a long loaf. Place each loaf onto a baking tray lined with a baking sheet, leaving at least a couple of inches gap between the loafs. Once again cover the loafs with cling film or plastic film and leave to rise. Wait until the loaves have doubled in size, approx an hour. Preheat the oven to 350 degrees Fahrenheit, 175 degrees Celsius or gas mark 4. Bake the loaves for 23-25 minutes, until very light brown. - In a stand mixer mixing bowl, combine yeast, 1/2 c. warm water, and sugar. Stir until well combined and let stand for about 10 minutes until nice and foamy.
- In a separate mixing bowl, combine flour and vital wheat gluten. Add 1 c. warm water to the yeast mixture (in the stand mixer bowl) and add flour/wheat gluten mixture until combined.
- Attach the bowl to the stand mixer and with the bread hook attachment, mix dough for about 3-4 minutes, adding a little flour if necessary- keeping it a little sticky.
- You want the dough to be sticky enough that it sticks to the bottom of the bowl a little bit, but not the sides.
- After 3-4 minutes, cut up 3 Tbsp. of cold butter into little cubes and add to the mixing bowl and add 1 Tbsp. salt. Mix an additional 5-6 minutes until butter is mixed in to the dough, pull the bread down off the hook if needed throughout the mixing process. Again, you want the dough to be slightly sticky and stretchy.
- Place dough in a large greased bowl and roll around a little to get it greased all around. Cover and allow to rise in a warm place for about an hour.
- Punch dough down and divide into 3 equal pieces (flour your hands if the dough is too sticky for easier handling). Roll out each piece into a 12" long loaf.. The dough should be the same thickness all the way across. Place on a non-stick baking sheet (I used a silicon baking mat) or a bread form pan. Cover and allow to rise 40-60 minutes, until dough doubles in size.
- Preheat oven to 350 degrees.
- Bake in oven for 12-25 minutes (check at 12 minutes) until bread is golden brown. Remove from oven and lightly run a little cold butter over the top(this will soften it up nicely).
- Allow loaves to cool completely, then serve with all your favorite sub sandwich toppings!

- In the bowl of a stand mixer whisk together the yeast and water. Whisk in the sugar, oil, salt, eggs, and the mashed potato flakes if using.
- Add the flour and knead for 6 minutes over low speed. Rest the dough for 10 minutes.
- Transfer dough onto a floured surface and cut into 4 equal pieces. Cut each piece in half again to make a total of 8 pieces. Gently pat and roll into a 12-inch log.
- Spray the tops with water.
- Dredge into the Italian Herb Blend.
- Place rolls onto Silicone Sub Roll Mats and score the tops (3-4 slashes.)
- Allow dough to rise until tripled in size (up to 1 hour if rising in a warm place.)
- Sprinkle the tops with shredded Colby and Monterey Jack Cheese. Bake for 15-18 minutes at 375°F. Cool in molds before removing.

- Dissolve yeast and sugar in 1/2 cup warm water. Let stand for about nine to ten minutes.
- Combine yeast mixture with oil, salt, and two cups of flour. Stir well.
- Gradually stir in 4 cups of flour and remaining water.
- Knead for 10 minutes, adding additional flour as needed.
- Place dough in a lightly-greased bowl.
- Cover with plastic wrap and let rise for about one hour.
- Punch dough down and divide into eight pieces.
- Roll each half into loaf-shapes, about twelve inches long.
- Place loaves onto two large baking sheets lined with parchment paper.
- Cover the eight loaves and allow to rise for about an hour.
- Preheat oven to 350 degrees Fahrenheit.
- Cook for 25 minutes, or until the top of the loaves are golden brown.
- Let the bread cool until room temperature.
- For a delicious oat take on the Subway white bread, sprinkle the tops of the loaves with quick-cooking oats after brushing on the egg white mixture.
- Adapt this recipe to prepare Subway's Honey & Oats bread by adding 1/2 cup of old fashioned oats to the bread dough before rising.
- If you prefer a hands-off approach, you can mix all of the ingredients in a bread machine and cook on a light setting according to the manufacturer's instructions.
- Add a bit more flavor by sprinkling a mixture of shredded cheddar cheese, garlic salt, and Italian seasoning over the dough before baking.
- Recreate Subway's Parmesan Oregano bread by mixing together Parmesan cheese, oregano, and garlic salt and sprinkling it over the unbaked dough.
- You can also make two loaves of bread from this recipe instead of eight individual sub rolls.

CLOSEST THING TO SUBWAY'S ITALIAN HERBS & CHEESE BREAD
At least this is the closest one you'll be able to find. Most likely. It's not going to look like they're bread, but I heard if you freeze it, let it sit out for a bit, roll it and then put it in regular bread pans in the oven and cook it to about 350 it should turn out closer to it...... - In the bowl of your stand mixer, add the water, yeast, sugar, salt, and olive oil. Let the mixture stand for 5 minutes.
- Add 1 cup of flour and mix with the dough hook for 3 to 5 minutes. Add an additional cup of flour and mix until well combined. Continue adding the flour, 1/4 cup at a time, until a soft dough is formed. The dough should still stick to the bottom of of the bowl, but pull away from the sides. Let the dough mix for around 8 minutes total.
- When the dough has come together but is still sticking a bit to the bottom of the bowl, turn it out onto a lightly floured surface and knead until smooth. The dough should be very soft. Shape the dough into a ball and return it to the bowl. Cover the bowl with plastic wrap and allow the dough to rise for a half hour.
- After the dough has risen, turn it out onto a clean surface and divide it into 4. Roll each piece of dough into a long skinny loaf that is about 9 to 10 inches long.
