ALICE'S FONDANT FILLING FOR CHOCOLATES
Recipe handed down from my mother-in-law. There are many variations of flavor included at bottom of recipe.

Steps:
- Combine ingredients in heavy saucepan. Boil until it reaches a soft ball stage. Pour into buttered dish to cool.
- After mixture is cooled, pour on clean surface and beat with wooden paddles until light and airy. Just as mixture "turns" mix in flavoring until thoroughly blended inches.
- Refrigerate to cool completely. Form into balls. Dip in desired chocolate.
- Variations:.
- Peppermint (peppermint extract to taste).
- Maple Walnut (maple flavoring to taste and finely chopped walnuts).
- Orange (orange extract to taste--a few drops to 1/2 teaspoon).
- Cherry (Maraschino cherries drained and quartered--pat dry).
- Cherry-almond (as above but add almond extract to taste).
- Almond (almond extract with a sliced almond on top of finished chocolate).
- Coconut (fine coconut plus vanilla).
- Rum (rum extract plus 1-2 teaspoons butter).

PERFECT DIPPING CHOCOLATE
Use only shortening for this, do not use butter, margarine or oil! Tips for dipping chocolate on bottom!

Steps:
- Remove the chilled candy from the refrigerator about 10 minutes before coating (dipping cold centers can result in cracked coating).
- Place the chocolate chips and shortening in a 2-cup measuring bowl.
- Place the bowl into a larger bowl which contains very warm water (about100-110F) the water should reach only halfway up the 2-cup bowl with the chocolate (DO NOT LET EVEN 1 DROP WATER MIX WITH CHOCOLATE!).
- Stir mixture constantly with a small spatula until the chocolate is melted and the mixture is smooth (this should take about 16-18 minutes, do not rush the melted process).
- If necessary replace the water with more very warm water.
- remove the 2-cup bowl with melted chocolate from the water and continue to stir until all the chocolate is cooled slightly (about 2-3 minutes).
- Set one candy onto a two-pronged fork, then completely dip candy into melted chocolate.
- Gently tap the fork against side of the bowl to remove any excess melted chocolate.
- Place onto baking sheet lined with waxed paper.
- Repeat with remaining candy.
- If the chocolate becomes too thick for dipping, place the bowl containing the chocolate into the bowl with warm water until desired consistancy.
- TIPS ON HOW TO WORK WITH DIPPING CHOCOLATE.
- Avoid all types of moisture when melting the chocolate, any steam or drops of moisture can cause the mixture to :seize" or become very firm, crumbly and grainy, if this occurs it can be corrected by stirring in 1 teaspoon shortening for each 2 ounces of melted chocolate.
- Chocolate can also be melted over low heat in a double boiler.
- Store the chocolate tightly wrapped in a cool dry place, do not refrigerate.

THE BEST DIPPING/COATING CHOCOLATE EVER!
The most wonderful chocolate in which to dip almost anything! My Mom gave me this recipe years and years ago. I can't believe how many things I can find to dip into it, besides my fingers! The addition of the food-grade paraffin gives beautiful snap and finished gloss when your chocolate project is completed.

Steps:
- Chop the paraffin into small pieces.
- Melt the paraffin in the microwave, or on top of a double-boiler. (This takes quite a while, so be patient.).
- When the paraffin is melted, add the chocolate.
- Stir all together.
- If using the microwave, continue heating for 1-minute intervals, using 50% power, until everything is well-blended. Be sure to stir your mixture between 1-minute heatings. If using a double-boiler, stir the chocolate/paraffin mixture constantly until fully mixed.
- Dip marshmallows, nuts, dried fruit, cookies, pretzels, or whatever you like.
- Fresh fruits should be at the peak of ripeness. After rinsing your fresh fruit, you need to be sure it's patted completely dry. (Chocolate will not cling to wet fruit.).
- After dipping, place on a waxed-paper lined cookie-sheet and allow to harden. 15 minutes to 1 hour, depending on ambient temperature.

These chocolaty, fudgy mini cakes are the French version of chocolate molten cakes. Make sure you serve them with a cold glass of milk or a hot cup of java.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 ramekins and set aside.
- Combine chocolate chips and butter in a microwave-safe bowl. Microwave on high for 30 seconds. Stir and microwave at 15-second intervals until almost melted. Remove from the microwave and stir until chocolate is completely melted and thoroughly combined. Set aside.
- Combine sugar, egg, vanilla extract, and salt in a separate bowl. Pour into chocolate mixture and whisk until combined. Add flour, stirring until combined. Divide batter evenly between both ramekins.
- Bake in the preheated oven until set, 12 to 14 minutes. Cool on a wire rack for 10 minutes before inverting onto a serving plate.

SUAK'S FONDANT AND DIPPING CHOCOLATE

- 1. Add ingredients for Dipping Chocolate into a 2 quart double boiler, which will have hot water in bottom of it to aid in melting the chocolate and wax; it would burn otherwise.
- 2. This will take several hours on very low heat to melt everything. *Do not use microwave for melting chocolate. Plan ahead for this step. Keep melted chocolate on an extremely low burner in double boiler with water in bottom always, during the whole dipping process. As the amount of chocolate is used up along with the parafin wax, just simply add more chocolate and wax then wait for your newly added ingredients to melt. Continue dipping process after melted. **Hint: use a very large needle or a candy dipper stick for dipping. You don't want to leave a huge hole in candy after you dip so the smaller the hole, the smaller the patch you will need to take care of.
- 3. Back to Step 1 the confectionery sugar mixture. Simply mix the three ingredients together well, wrap and refrigerate overnight. Take whatever portion of sugar mixture you will want to use for a particular flavor you have chosen. My personal favorite is coffee. I use instant coffee granules (make sure they are finely ground or expresso powder). Add a few drops of water and form a paste. You will now start working or kneading your flavor into the portion you have cut off. After you completely work in your flavor(s), form candy into balls - you choose your size. Place on a tray (don't let fondant get too warm). Go to the dipping station. Have a tray ready with waxpaper to place the finished product on for drying. *When dipping try to let the chocolate drip off your needle or dipping stick as much as possible before placing on waxpaper. Don't forget to touch up pin hole from dipping stick with a dab of melted chocolate.
- 4. I live in Alaska so I take complete advantage of our climate in the winter months by putting my freshly made candy outside in covered containers right after I dip them. This cools them down and sets the chocolate wonderfully. By the way, this candy freezes very well and is good for many months in an airtight container!
- 5. Having fun containers are the end result of showing off your chocolates so be creative with purchased candy boxes, gift giving dishes covered with style etc.!
