STUFFING IN A BUNDT PAN

- For the stuffing: Preheat the oven to 350 degrees F. Add the butter to a large saute pan and allow to melt over medium heat. Once melted, add the onions, carrots and celery. Season with salt, pepper and red pepper flakes and stir to combine. Allow the vegetables to saute until softened, 3 to 5 minutes. Add the sausage, sprinkle again with salt and pepper and break up the sausage with a wooden spoon while it browns, 7 to 10 minutes. Once the sausage is cooked through, turn off the heat.
- While the sausage is cooking, prepare the stove top stuffing according to package directions. Turn off the heat and set aside to cool slightly.
- Spray a bundt pan with cooking spray and set aside.
- Add the stuffing to a large bowl. Add the sauteed veg and the lightly beaten eggs to the stuffing and toss to combine. Evenly pour the stuffing into the prepared pan and press down.
- Bake until browned on top, 25 to 30 minutes. Remove from the oven and set aside to cool briefly.
- For the creamy mashed potatoes: Add the potatoes to a pot and cover with water. Season with salt and turn the heat to high. Once the potatoes come to a boil, cook until fork tender, about 10 minutes. Drain and pass the potatoes through a potato ricer into a bowl. Stir in some of the heated cream until the consistency is thick, creamy and pourable, adding cream as needed. Season with salt and pepper and stir in the butter.
- For the cranberry sauce: Add the cranberries, sugar, orange zest and orange juice to a saucepan. Turn the heat to medium and cook until the cranberries have burst and the sauce thickens, about 20 minutes. Season with salt, remove from the heat, strain and set aside.
- To serve: Loosen the stuffing from the sides of the pan with a butter knife. Top the pan with a cake stand and flip to invert. Remove the pan. Garnish with the creamy mashed potatoes, cranberry sauce, fried onions and chives. Slice, plate and drizzle with gravy.

- In a medium sized bowl add stuffing mix and 1 cup of hot water. Let the stuffing sit for 5 minutes. Meanwhile, in another medium sized bowl mix 1 package of brown gravy mix with 1 cup cold water. Add in ground beef and egg, mix well (this is easiest to do with your hands, gross, I know) After the stuffing has sat for 5 minutes, incorporate the stuffing mix into the ground beef mixture. Grease a bundt pan with non stick spray and then press the ground beef mixture into the pan. Bake at 350°F for 45 to 55 minutes or until no longer pink inside. Once baked, let rest for 5 minutes or so and then invert onto a plate. Serve with mashed potatoes and brown gravy in the center of the meatloaf.

- Preheat oven 350°. Coat inside of bundt pan with cooking spray. Place warm water, onion soup mix and dry stuffing mix in a bowl. Mix well. Let sit for 5 minutes to allow bread time to absorb water. Add eggs and ground beef. Mix well. Best to get it blended by using your hands and incorporating it all together. Place evenly into bundt pan. You can also put into muffin tins to make individual loafs. Bake 1 hour or until no longer pink inside. Remove and allow to rest 5 minutes before cutting into.

- 1. Preheat oven 350 degrees. Coat a bundt pan with cooking spray.
- 2. Place stuffing mix, onion soup mix and water in bowl let sit until water is absorbed. Add eggs and beef. Pour into bundt pan and bake for 1 hour.
- 3. Meanwhile make the potatoes by peeling them and boiling them and mashing them with butter and milk.
- 4. When meatloaf is done turn out onto a serving plate. Fill whole with potatoes and ladle gravy over top

- Preheat oven to 350 deg. Coat the inside of a Bundt Pan with Cooking Spray Place warm water, onion soup mix and dry stuffing mix into a bowl and mix well. Let it sit awhile to absorb all the water. Add eggs to Ground Beef and mix well. The best way I've found to do this is to use your hands and incorporate it all together. Place Ground Beef mix to the Bundt Pan. (You could also use Muffin Tins to make individual loaves. Bake for 1 hour or until the Beef is no longer pink inside. Remove and allow to rest for 5 minutes. Garnish the Meatloaf by piling Mashed Potatoes in the center hole of the loaf. You could smother the entire presentation with Gravy of your choosing. Mushroom gravy is my favorite. (but the kids love ketchup)

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan.
- Place loaf pan on a rack in an oven-roasting pan. Bake for 1 hour, or until done. Cook until internal temperature measures 160 degrees F (70 degrees C); the meat should be well done, with no trace of pink. Remove from oven, and allow to rest for 10 minutes before serving.
- While the meatloaf is resting, prepare the gravy. In a medium saucepan, melt butter or margarine over medium heat. Add mushrooms and onions; cook and stir until tender. Add beef broth; simmer for 5 minutes, stirring occasionally. Combine water and cornstarch in a small cup; stir into broth. Cook and stir for 1 minute, or until thickened.
