This is a recipe I got from a neighbor lady in Terre Haute, IN, when I was about 15 years old. I just love to cook and I love this casserole!!! Its Simple and Easy to make!

2 lbs chicken breasts
2 (10 ounce) cream of chicken soup
14 ounces frozen chopped broccoli
2 (6 ounce) boxes chicken flavor stuffing mix
2 cups shredded cheddar cheese
2 cups water

Steps:

  • Bake Chicken Breast in a 9x13 baking dish at 350* for approximately 35 minutes. Drain fluids from baking pan, cube the chicken into 1 inch squares.
  • Next Combine the soup, Broccoli and Stuffing mix with a cup of water in a bowl until mixed thoroughly.
  • Place cubed chicken into the bottom of the 9x13, smooth stuffing mixture over the chicken, and cover with the shredded cheddar.
  • Bake at 350* for approximately 30 minutes.
  • Let cool for 10 minutes, dip and enjoy!

This delicious broccoli casserole is made extra hearty with prepared stuffing on top. You can also make this a one dish meal by cooked and chopped chicken such as leftover rotisserie.

1 (8 ounce) box Stove Top chicken flavor stuffing
1/4 cup butter (for stuffing mix, see recipe notes)
1 1/2 cups water (for stuffing mix, see recipe notes)
2 (10 ounce) packages frozen broccoli, thawed and drained
1 1/2 cups shredded sharp cheddar cheese
1 (10.5 ounce) can cream of mushroom soup

Steps:

  • Preheat oven to 350 degrees F. Spray 2 quart casserole dish with nonstick cooking spray.
  • Prepare stuffing according to package directions using the butter and water.
  • In a large bowl, combine the broccoli, shredded cheese and cream of mushroom soup. Pour broccoli mixture into casserole dish. Spoon stuffing mixture over the top.
  • Bake for 30-35 minutes or until heated through.

1 cup shredded Cheddar cheese
2 eggs, beaten
1 onion, minced
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup mayonnaise
10 ounces dry bread stuffing mix
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cook broccoli according to package instructions. Lightly grease a large baking dish.
  • In a bowl, mix the cheese, eggs, onion, cream of mushroom soup, and mayonnaise.
  • Arrange the cooked broccoli in the prepared baking dish. Pour cheese sauce over broccoli. Spread stuffing mix over the sauce. Drizzle butter over all.
  • Bake 30 minutes in the preheated oven, until bubbly and lightly browned.

2 eggs, beaten
1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup mayonnaise
10 ounces dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Cook broccoli in a large pot of salted boiling water until just slightly tender. Drain.
  • In a large bowl, combine eggs, onion, mushroom soup and mayonnaise.

1 (10 oz.) package chopped broccoli, thawed
1-1/2 cups chicken broth
1 tablespoon butter
1 (6 oz.) box stuffing (use Kraft stove top)
salt & pepper to taste
3/4 cup shredded cheddar cheese

Steps:

  • Thaw broccoli in the microwave for about 4 minutes. Make sure broccoli is well-thawed.
  • Preheat oven to 350 degrees.
  • Simmer thawed broccoli for a few minutes in chicken broth. Lightly salt and pepper the broccoli as it cooks.
  • Add the stuffing mix to the pan with the cooked broccoli and stir through.
  • Stir in 1/2 cup of cheese.
  • Cover and let sit for about 4 minutes.
  • Pour mixture into a casserole dish and bake uncovered for 10-15 minutes. Add 1/2 cup of cheese to the top and put back into the oven to melt.

1/2 cup butter
1 (8 ounce) package Pepperidge Farm stuffing (granular texture, not bread cubes)
1 (10 ounce) can condensed cream of chicken soup
1 (10 ounce) can condensed cream of mushroom soup
4 ounces grated parmesan cheese
4 ounces grated cheddar cheese
paprika

Steps:

  • Cook broccoli in 1 1/4 cups water, no salt. Do not drain.
  • Add all other ingredients.
  • Pour into greased casserole dish.
  • Sprinkle generously with paprika, then the cheeses.
