STUFFED HOT DOGS
Another recipe from my mom. I believe she once told me she got this from the mother of one of her dearest friends. When she would fix this for supper, my brothers and I thought we were getting a special meal. She would serve her baked beans with it. We loved it when we could come in the house and smell the hot dogs cookin'. Its...

Steps:
- 1. There is no amounts listed, as it depends on how many you make. You can easy make one hot dog or a whole pack.
- 2. Preheat oven to 350° degrees. Spray pan, suitable for the oven.
- 3. Take the number of hot dogs you wish to fix. Using a knife, cut from one end of the hot dog to the other, BEING CAREFUL NOT to cut completely through. Place the on the prepared pan.
- 4. Take the left over potatoes, or instant if that's what you use, and spoon into the "opened" hot dog, to the top~~and little more if you like.
- 5. Top each "stuffed" hot dog with 1/2 slice American cheese.
- 6. Put in preheated oven. Cook until cheese is bubbly.
- 7. Note: The hot dogs can be pre-boiled or even cooked for maybe 30 seconds(+/-) in the microwave prior to cutting. You can also warm the potatoes in the microwave prior to using, also. This will speed up the oven cooking time and will ensure all is equally cooked and the cheese not over cooked. These can also be "cooked" in the microwave or toaster oven, with pretty good results. In fact, I will often put some in the microwave. If you use the microwave for the final cooking, you can leave out the "pre-cook" and "pre-warm" steps suggested. Enjoy...

STUFFED HOT DOGS
Mom used to make this all the time when we were growing up. It is still one of my favorite dishes I eat at least once a month to this day. I especially love to eat them cold the next day. Note: If using baked beans instead of the Pork & Beans you don't need to add mustard & sugar.

- Split the hot dogs lengthwise without cutting all of the way through to create a pocket for the cheese.
- Stuff a strip of cheese into the pocket of each hot dog. Tightly wrap each hot dog with a strip of bacon, securing each end of the bacon with a toothpick.
- Fire up. Prepare a grill for indirect cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill’s charcoal grate in order to create direct and indirect cooking zones. Adjust the grill vents to bring the temperature to about 400°F on the indirect side. Add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 400°F on the indirect side.

- Place a strip of cheese deep within the pocket of each hot dog. Top with sauerkraut and onions. Encapsulate the cheese at the ends with the sauerkraut mixture as well, so that no cheese is exposed, otherwise, it will drip out when cooking.
