BAKED APPLE WITH CRISP TOPPING
Steps:
- Preheat oven to 350 degrees F.
- Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.

STUFFED WHOLE APPLE CRISP
This recipe was given to me by caterer Cyndy Totten who attends our church. This is a delicious and different way to make apple crisp. This method makes it possible to be a dish for one or more persons. I am posting the recipe as if you were making it for only one person. Increase the number of servings by simply increasing the number of apples and increasing the amount of the other ingredients by the number of servings you are making.

- Cut apples in half horizontally. Use a melon baller or small spoon to scoop out the flesh of each apple half, leaving about 1/8-inch-thick shell. Remove and discard the seeds and core; reserve the flesh. Place the apple halves in the prepared baking pan.
- Finely chop the apple flesh; transfer to a medium bowl. Add 2 teaspoons brown sugar, vanilla, 1/4 teaspoon cinnamon and 1 pinch of salt. Stir well. Divide among the apple halves (about 1/4 cup each).
- Combine flour, oats, pecans, the remaining 2 teaspoons brown sugar, remaining 1/4 teaspoon cinnamon and remaining pinch of salt in a medium bowl. Using your fingers or a pastry blender, cut the butter into the dry mixture until it resembles small pebbles. Mound about 1/4 cup topping onto each apple. Bake until the apples are tender and the tops are browned, 20 to 30 minutes. Let cool for at least 10 minutes before serving.

- Preheat oven to 400 degrees. First, prepare the crumble topping. In a medium bowl whisk together flour, oats, brown sugar, sugar, salt, and cinnamon. Cut in the butter with a pastry knife, or two forks, or with your hands until mixture is crumbly. Set aside.
- Peel and chop 4 of the apples. Add chopped apples, butter, brown sugar, and cinnamon to a medium sauce pan and sauté over medium heat for 8-10 minutes or until apples are tender. Remove from heat.
- Chop the tops off of the remaining 4 apples and use a spoon to scoop out the flesh. Discard the flesh or save it for another recipe.(See Note) You don't need to get every little bit out, just enough to make a "bowl" for the filling.
- Fill scooped-out apples with apple filling from the sauce pan. Top with a generous amount of crumble topping.

- Remove a 1/2-inch slice from tops of the apples. With a melon baller remove core, stopping about 1/2 inch from the bottom of the apple. Arrange the prepared apples in a 13x9x2-inch baking dish (3-quart rectangular) and brush with 1 tablespoon of the orange juice. (If necessary, remove a thin slice from the bottoms of the apples so they sit flat in the baking dish; brush with some orange juice.)
- In a medium bowl combine oats, brown sugar, almonds, flour, cinnamon and nutmeg. Stir in butter until combined. Fill and top apples with oat mixture. (At this point, apples can be covered and refrigerated up to 24 hours.)
- When ready to bake, pour remaining orange juice around the apples and cover with foil. Bake in a 350 degree F oven for 50 minutes. Remove foil; bake for 10 to 15 minutes more or until tender. Cool about 30 minutes. Transfer to a platter or plates and drizzle with honey. Serve with yogurt. Makes 8 servings.

- Preheat oven to 350º. In a small bowl combine walnuts, pecans, sugar, salt, cinnamon, cardamom, and oats. Add butter cubes and toss to combine.
- Peel the top third of each apple and, using a melon baller, scoop out the stem and enough of the core so that the walls of the apple are about 1/2 in. thick. Take care, however, not to break through the bottom of the apple, or the filling will leak out when baking. Make the hole a bit wider at the top.
- Put the filled apples in a 2-qt. baking dish. Pour cider into the pan around the apples, cover the dish with foil, and bake 45 minutes. Remove foil and bake, basting every 15 minutes, for an additional 30 to 45 minutes, until apples are easily pierced with a sharp knife (they may split open a bit at the bottom). Serve apples drizzled with the sauce from the pan and with a scoop of vanilla ice cream alongside.

- Core and slightly hollow out the apples beyond the cored center. (Don’t go too far or the apple will lose its shape when baked). Place the apples in a baking dish.
- Add the softened butter to the mixture, mixing gently with your fingers until thoroughly incorporated.

- Core each apple, leaving the bottom of the apple intact. Use a small melon baller or spoon to scoop out a little bit of the top and inside flesh to form a cavity. Alternately: Halve each apple lengthwise and use a melon baller or small spoon to scoop out the core and form a cavity.
- For the filling: combine flour, brown sugar, cinnamon, salt, nuts, and oats. Add the butter, and stir to combine. The mixture should hold together if you gather clumps and press them together.
- Divide the filling between the prepared apples. I used between 3-4 tablespoons of filling per apple (this will depend on the size of your apples, and how large of a cavity you created). Place the filled apples in a baking dish, and fill the bottom of the baking dish with about an inch of water.
