Steps:
- Melt mozzarella & cream cheese in the microwave. I do about 45 seconds, remove from microwave and stir and pop back in for another 45 seconds.
- Add in almond flour and egg until combined.
- Place dough on parchment paper. Top with the second piece of parchment paper and roll out until it's about 1/4" thick.
- Use a round cookie or biscuit cutter. I used a 3" for this recipe for a smaller tuna ball. You can use a larger one if you prefer.
- In a medium size bowl mix together tuna, cream cheese, and chopped green onions.
- Grab a piece of the fat head dough that's been cut out into a circle. Using a teaspoon, put filling onto the dough. Pinch the ends of the dough together and pinch together to ensure the filling isn't going to come out. Roll in the palm of your hand until the dough looks smooth.
- Place seam side down on the baking sheet and repeat the process until the filling is gone. You will need to reroll the extra fat head dough a second time.
- Bake in the oven at 350° for 20 minutes and golden brown.
- Serve with a side of tartar sauce!

- Cook and drain pasta shells as directed on package; pat dry.
- Rinse frozen peas with cold water to separate; drain and pat dry. Mix yogurt and mayonnaise in medium bowl. Stir in remaining ingredients except paprika. Gently fold in peas.

STUFFED TUNA STEAKS
An Asian flavor that is very unique and delicious. This is one of those recipes that looks fancy but is actually quite easy to prepare. I used pre-bagged mixed greens, found near the bagged salads in the grocery store. You can make this in your broiler or on the grill!

Steps:
- Preaheat your grill or broiler.
- Mix together all the ingredients except the tuna and greens.
- Use a sharp, thin-bladed knife to make a small incision on any side of the tuna steak, creating a pocket, being careful not to cut through to the other side.
- You can also make a small cut and then either wiggle the knife around gently or just start slowly easing the inside apart to create a large pocket.
- Place the tuna in the soy mixture, covering each side.
- Remove tuna from liquid, letting excess sauce drip off.
- Toss the greens with the sauce, drenching it in the liquid.
- Stuff the tuna pocket with the greens and seal the opening with toothpicks.
- Grill or broil the tuna, turning once, about 5 minutes per inch of thickness, or however well-done you like your tuna.
