CHEESY BACON-STUFFED SLIDERS
These easy baked pepper jack and bacon-stuffed sliders are sure to become a family favorite.

- Heat oven to 350°F. Line 15x10x1-inch pan with foil.
- In large bowl, mix beef, salt and pepper until well blended. Shape into 12 patties, 1/4-inch thick. Place 2 cheese quarters and 2 bacon quarters onto centers of 6 patties; top with remaining patties. Firmly pinch edges to seal. Place on pan.
- Bake 20 to 25 minutes or until instant-read thermometer inserted in center of beef part of patties reads 165°F. Remove from oven; top each burger with 2 cheese quarters. Return to oven; bake 1 to 2 minutes longer or until cheese is melted.
- Meanwhile, in medium bowl, mash avocado with fork. Add dressing; mix until well blended.
- Place 1 burger on bottom half of each toasted bun. Top each burger with tomato slice, about 1 tablespoon avocado mixture and bun top.

RAVIOLI STUFFED SLIDERS

- Cook the onions in the butter with some salt until very, very browned.
- Add the garlic and cook one minute.
- Add the can of tomatoes with the juices. Simmer and cook about 15 minutes.
- Add the ketchup to the sauce and blend until smooth.
- Meanwhile, boil your ravioli according to package instructions.
- To make the burgers, grab a handful of beef and press it onto a plate until very thin. Put one of the ravioli on the beef and wrap the beef around it. Try and press out any air but be gentle and careful not to break the ravioli. There will be rips, but just work to fill them in and remove any excess beef from the sides of the burger. Don't worry about getting it perfect.
- Grill the burgers until browned and cooked through. Top with cheese and serve on a bun with some of the sauce.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and set aside.
- Place the peppers cut-side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.
- While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. Stir in the tomato, and cook for 5 minutes. Spoon in the cooked rice, and stir until heated through. Remove from heat, mix in the feta cheese, and spoon the mixture into the pepper halves.
- Return to the oven for 5 minutes. Serve immediately.

- Preheat the grill.
- To make the jam:
- Heat the olive oil in a skillet over medium heat. Add the onions and sauté until they begin to turn golden and soften. Add a few tablespoons of water and cook until evaporated. Add 1 tablespoon of vinegar and stir to avoid sticking. Add the remaining water and cook until evaporated. Add the remaining vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper. Cook until evaporated, stirring constantly. Turn off the heat and set aside. (The mixture should be soft and broken down, like a lumpy jam.)
- To make the patties:
- Divide the beef into 12 equal pieces and form into patties approximately 1/4 inch thick. Place the cheese cubes on the center of six of the patties and place the remaining patties on top. Pinch the sides to form a tight seal.
- Grill the burgers over medium heat for 3-4 minutes. Turn the burgers over and cook an additional 3 minutes or until done.
- Place the burgers on the roll with lettuce, if desired, and top with the jam. Place the top of the roll on the burger and serve immediately.

- Peel and shred enough of the apple to measure 1/3 cup. In a large bowl combine the 1/3 cup apple, oil, garlic, pepper, fennel seeds, salt, thyme, and nutmeg. Add ground pork; mix well.
- Shape a scant 1/4 cup pork mixture into a ball and use your finger to make a deep indentation in top. Fill indentation with 1 to 2 teaspoons cheese; press pork mixture to enclose filling. Reshape pork mixture into a ball and flatten into a 2 1/2-inch-diameter patty. Place on a baking sheet. Repeat with remaining pork mixture and cheese. Cover and chill for 1 to 4 hours.
- For a charcoal grill, grill patties on the rack of a covered grill directly over medium coals for 10 to 12 minutes or until done (160°F), turning once halfway through grilling. Fold remaining ends to completely enclose apple mixture, leaving space for steam to build. Grill apple packet alongside patties for 10 to 12 minutes or until fennel is tender.
