1 (8 ounce) package bow tie pasta
½ pound prosciutto, sliced
2 cups heavy cream
1 ½ cups freshly grated Parmesan cheese
1 (10 ounce) can peas, drained
salt to taste
½ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes; drain.
  • Lightly grease a skillet with cooking spray. Cook the prosciutto in the skillet over medium heat until just brown, 3 to 5 minutes. Remove from heat, drain excess fat and set prosciutto aside on paper towels.
  • Meanwhile, heat the cream in a saucepan over medium-low heat. Slowly stir in 1 1/2 cup Parmesan cheese in small amounts. When all the cheese has been melted, stir in the peas and prosciutto. Allow to heat for 2 minutes more. Pour over drained pasta and toss lightly. Season with salt to taste and sprinkle with 1/2 cup Parmesan cheese.

2 tablespoons butter
1/4 cup onion, chopped
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can condensed chicken broth
1/4 cup parmesan cheese, grated
1/4 teaspoon ground pepper
1/2 cup heavy cream
16 jumbo pasta shells
1 (16 ounce) container small curd cottage cheese
1 (10 ounce) package frozen peas, thawed
1/4 lb prosciutto or 1/4 lb boiled ham, finely chopped
1/4 teaspoon ground pepper

Steps:

  • Preheat oven to 350 degrees.
  • Make creamy tomato sauce: in a large saucepan, melt butter. Saute onion until tender, about 3 minutes. Stir in tomato sauce, condensed chicken broth, Parmesan cheese, and pepper. Simmer, uncovered, for about 20 minutes, or until sauce is slightly thickened. Add cream; simmer 5 minutes longer, whisking occasionaly. Set aside.
  • Meanwhile, cook shells according to package directions until al dente; drain well. Place shells in a single layer on a flat surface until ready to fill.
  • Make filling: in a medium bowl, combine cottage cheese, peas, prosciutto, and pepper until well blended.
  • Carefully fill each shell with about 1/4 cup cheese mixture.
  • Spoon 2 cups of creamy tomato sauce in bottom of 13x9x2-inch baking dish. Arrange shells in dish. Spoon remaining sauce over shells.
  • Bake 30 minutes or unil sauce is bubbly.

10 oz. ricotta cheese (fresh )
8 oz. frozen petite peas (defrosted)
8 oz. Prosciutto di Parma (roughly chopped)
1 shallot (medium)
4 tablespoons Parmigiano-Reggiano (freshly grated)
Salt and pepper (to taste)
12 oz. San Marzano tomatoes (crushed)
3 garlic cloves (sliced)
1/2 cup fresh basil leaves (torn)
Salt (to taste)

Steps:

  • In a large pot of salted boiling water, add the pasta shells and cook until they just start to become soft, about 6 or 7 minutes.
  • Drain and drizzle with olive oil to avoid the shells sticking. Cover with plastic wrap and set aside.

12 uncooked jumbo pasta shells
4 ounces pancetta, finely chopped
1 teaspoon olive oil
1 package (6 ounces) fresh baby spinach
2 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1 carton (15 ounces) part-skim ricotta cheese
2 tablespoons grated Parmesan cheese
1 large egg yolk, beaten
1/4 teaspoon pepper
1 jar (15 ounces) roasted garlic Alfredo sauce
½ cup shredded mozzarella cheese

Steps:

  • Cook pasta shells according to package directions; drain and rinse with cold water., Meanwhile, cook pancetta in oil in a large skillet over medium heat until crisp. Remove to paper towels, reserving drippings. Saute the spinach, garlic and pepper flakes in drippings until spinach is wilted., Transfer spinach mixture to a small bowl. Add ricotta, Parmesan cheese, egg yolk and pepper; mix well. , Spread 1/2 cup Alfredo sauce into a greased 11x7-in. baking dish. Spoon ricotta mixture into pasta shells; place in baking dish. Pour remaining sauce over shells., Cover and bake at 375° for 25 minutes. Sprinkle with mozzarella cheese. Bake until cheese is melted, 10-15 minutes longer. Top with pancetta.

24 uncooked jumbo pasta shells (about 6 oz)
1 jar (26 oz) tomato-basil pasta sauce
3 cups shredded mozzarella cheese (12 oz)
1 cup cottage cheese
1 cup chopped prosciutto (4 1/2 oz)
1 box (9 oz) frozen spinach, thawed, squeezed to drain
2 tablespoons chopped fresh basil leaves, if desired

Steps:

  • Heat oven to 375°F. Cook and drain pasta as directed on package. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1/3 cup of the pasta sauce over bottom of baking dish.
  • In medium bowl, mix 1 cup of the mozzarella cheese, the cottage cheese, prosciutto and spinach. Spoon scant 2 tablespoons mixture into each shell. Arrange filled shells in baking dish. Pour remaining pasta sauce over stuffed shells. Sprinkle remaining 2 cups mozzarella cheese evenly over sauce.
  • Cover dish with foil. Bake 30 to 40 minutes or until thoroughly heated. Sprinkle with basil.

3 cups conchiglie (small shell pasta)
1/3 cup olive oil
14 ounces tomato sauce, plain
14 ounces peas (do not drain)
3 garlic cloves, thinly sliced
1/2 tablespoon dried oregano
1/2 tablespoon dried parsley
sea salt
cracked black pepper
1/2 cup parmesan cheese, grated

Steps:

  • Bring a stick pot of heavily salted water to a boil and add pasta. Cook until al dente; about 6-mins.
  • In the meantime, heat oil in large skillet. Add garlic slices, stirring constantly so they don't burn. Once a light-golden brown, spoon out garlic and set aside.
  • Slowly, add tomato sauce to pan, taking care not to splatter yourself with the popping hot oil. Add, peas with their liquid, herbs and salt and pepper to taste; stirring occasionally. Cook for about 6-mins.
  • Once pasta is cooked to perfection, scoop out of water and transfer directly into sauce. Fold pasta into sauce. Remove from heat. Fold in about half the cheese.
  • Garnish with additional cheese.
  • Enjoy!
