My husband and I are crazy about stuffed portabello mushrooms and have tried many recipes from Zaar. Last night, we came up with a version that does not cover up the taste of the mushroom. We love this with our grilled steak. Grilling the mushrooms for a short period of time really made a difference for us in this recipe. Hope you enjoy. Prep time is estimated.

4 large portabella mushrooms
2 tablespoons butter
1 -2 garlic clove, chopped
4 ounces of softened cream cheese
4 slices bacon, cooked and crumbled (I cooked mine in the microwave for about 3-4 minutes)
1/2 cup mozzarella cheese, grated
1/3 cup parmesan cheese, grated
1/4-1/3 cup Italian seasoned breadcrumbs

Steps:

  • Preheat oven to 350 degrees.
  • Preheat and grease outside grill to medium heat.
  • Wash and remove stem from mushrooms.
  • Melt one tablespoone of butter and brush on the smooth side of the mushrooms and let sit for 1-2 minutes.
  • Mix the cream cheese and bacon together.
  • Saute garlic in 1 tablespoon of butter over medium heat until tender, about 2 minutes.
  • Add to cream cheese and bacon mixture.
  • Grill mushrooms over medium heat, stem side down for 5 minutes; turn and grill for another 3-4 minutes.
  • Remove and let cool for about 3-5 minutes.
  • Brush any remaining butter on the rough side of the mushroom (If you don't have any left, don't worry about it).
  • Divide the cream cheese mixture evenly on the mushrooms and spread with your fingers.
  • Top with the Mozzarella cheese and Parmasan cheese.
  • Sprinkle with Italian Bread Crumbs.
  • Bake in the oven for 15 to 20 minutes or until the cheese is melted and the bread crumbs are slightly browned.
  • Enjoy.

These Stuffed Portabella Mushrooms are one of my most popular recipes. Perfect for any weeknight. Pair with a side salad for a complete meal. Leftovers can be enjoyed up to three days in the fridge. Relatively easy recipe.

4 large portabella mushrooms
3 TBLS olive oil
1/2 lb. ground country sausage
2 slices bread
3/4 C heavy whipping cream
1/2 tsp kosher salt
1/2 tsp black pepper
4 TBLS whipped Philadelphia cream cheese
1/2 C Parmesan cheese, freshly grated
1 shallot, minced
1 C mushroom stems, chopped
1/4 tsp crushed red pepper flakes
1 1/2 C chopped spinach, chopped
8 oz. Fontina cheese, crumbled
1 tsp fresh parsley, chopped

Steps:

  • Heat oven to 375°.
  • Heat up one tablespoon of the olive oil in a pan. Add the sausage and break apart.
  • As the sausage is browning, add the heavy whipping cream to a bowl. Tear the bread into tiny pieces and add to the cream. Season with kosher salt and black pepper. Allow the bread to soak while you work on the remaining ingredients.
  • Wipe the mushrooms with a paper towel to clean. With a spoon, scoop out the insides to form a well.
  • Chop up the stems and insides to make one cup. Reserve.
  • Once the sausage is browned, add in the minced shallot and reserved chopped mushroom stems.
  • Season with kosher salt, black pepper and crushed red pepper. Allow to sauté for about two to three minutes.
  • Add the spinach to the sausage mixture. Mix. Remove from heat.
  • Add the Parmesan cheese and cream cheese to the bread mixture. Combine well.
  • Add the sausage mixture to the cheese. Combine until uniform.
  • Brush the outside of the mushrooms with a touch of olive oil. Place top down onto a non-stick baking sheet.
  • Fill the mushrooms with the sausage/cheese mixture. Use it all.
  • Top each with a generous amount of fontina cheese crumbles.
  • Bake for 20 minutes.
  • Turn on broiler. Broil for a few minutes to brown the cheese.
  • Remove from oven. Garnish with fresh chopped parsley.
  • ENJOY!

1 cup cashews
2 tablespoons olive oil, plus extra for brushing
4 cloves garlic, minced
1 cup cooked brown rice (or grain of choice)
1 can lentils, drained and rinsed
1/4 cup breadcrumbs
1/2 cup vegetable broth
1 teaspoon dried basil
1 tablespoon fresh thyme leaves plus extra for garnish
6 portobello mushrooms, stems and gills removed
1 tomato, sliced in thin rounds
Sea salt
Freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In large skillet, sauté the onions and cashews with 2 tablespoons olive oil over medium high heat. Season with salt and pepper to taste, and sauté until onions are soft and lightly browned. Add garlic and let cook a few more minutes.
  • In a large bowl combine onion mixture, brown rice, lentils, breadcrumbs, vegetable broth, basil and thyme. Mix together and season to taste with salt and pepper. (The stuffing can be made up to three days in advance and stored covered in the refrigerator.)
  • Brush both sides of mushroom caps lightly with olive oil and place top-side down on an oiled sheet pan. Stuff mushrooms with about 1/2 cup lentil cashew stuffing, then press one tomato slice on top of the stuffing. (The mushrooms can be stuffed and assembled on a baking tray the day before you plan to bake and serve them.)

12 large portobello mushrooms, stemmed and gills removed
6 tablespoons balsamic vinegar
1/2 cup extra-virgin olive oil, divided
Sea salt, preferably gray salt and freshly ground black pepper
1 cup fresh bread crumbs
1 cup grated Parmesan
4 tablespoons freshly chopped parsley leaves
4 tablespoons freshly chopped basil leaves
12 (1/2-inch) slices fresh mozzarella, roughly 1 to 1 1/2-ounces per slice

Steps:

  • Preheat oven to 425 degrees F.
  • Toss the portabellas in the balsamic vinegar, 1/4 cup of olive oil, gray salt and pepper, to taste. Arrange the mushrooms on a baking sheet and roast in the oven for about 10 minutes. Remove from the oven and let cool to room temperature.
  • While the mushrooms are cooling mix together the bread crumbs, Parmesan, herbs and the remaining 1/4 cup olive oil.
  • Place 1 slice (2 if the mushrooms are large) of mozzarella in the cupped side of each mushroom. Distribute the bread and herb mixture evenly over the mushrooms and return to the oven to roast for 5 to 6 minutes or until the mozzarella is molten and the bread and herb topping a nice golden brown. Serve either hot or at room temperature and enjoy.

5 large portabella mushrooms
1/2 lb raw shrimp (cleaned and roughly chopped)
1 cup seasoned bread crumbs
3 tablespoons cream cheese (softened)
1 red bell pepper (finely diced)
1 onion (finely diced)
1/2 cup butter
1/2 cup shredded parmesan cheese
1 cup shredded cheddar cheese, divided into two half cups
1 teaspoon Old Bay Seasoning
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon garlic powder
nonstick cooking spray

Steps:

  • Preheat oven to 325 degrees F.
  • Remove stems from mushroom caps and dice stems, set aside.
  • Carefully scrape away the dark gills from the bottoms of the mushroom caps and discard.
  • Melt butter in a large skillet over medium heat.
  • Add shrimp, onion, chopped stems and bell pepper to skillet, sauteing until shrimp is pink and other ingredients are softened, being careful not to overcook the shrimp (shrimp will get rubbery if overcooked).
  • Remove mixture from heat and place in a large mixing bowl (do not drain liquid).
  • Add cream cheese to mixture and stir well.
  • Then add all other ingredients, except mushroom caps and one half cup shredded cheddar cheese, and mix well.
  • Spray an 8x11 glass baking dish with non-stick cooking spray.
  • Carefully stuff the mushroom caps with stuffing mixture and place into baking dish.
  • Evenly spread remaining half cup of cheddar cheese over stuffed caps.
  • Place dish into preheated oven, and bake for apx. 45 minutes to one hour.

I absolutely love mushrooms! I would eat them every single day if I could. My hubby makes fun of me and says they are a staple of life for me. So true! Anyway stuffed mushrooms are one of my favorite things to make. There are so many possibilities. Here is just one of many.

6 large portabella caps, cleaned
1 lb bob evan's premikum cuts of pork, ground
1 can(s) (11 oz) of green giant southwestern corn
1 pkg old el paso low sodium taco seasoning
1 tsp ground cumin
spicy brown mustard
wasabi paste, optional this is the surprise!
1 c kraft triple cheese (has philly cream cheese in it)

Steps:

  • 1. Take a paper-towel,gently wipe the dirt off the mushrooms. Don't wash them in water as they will absorb the moisture and get soggy. Take a spoon and scoop out the remaining stem and the membrane until nice and clean. The membrane is dark brown and is under the cap. Set aside.
  • 2. Brown you ground pork until done, mix in the taco seasoning and cumin, add just a touch of water not much just enough to help you mix the seasoning into the meat, then add the can of southwestern corn, and cook until the veggies are warm about 5 minutes or so, add a heaping 1/2 cup of cheese and stir until melted and mixed into the meat and veggie mixture well.
  • 3. Now turn each cap upside down so you can start to fill them. Place a dollop of the spicy brown mustard in the center of each cap, take your spoon and spread evenly around the underside of the mushroom, next sprinkle about a 1/2 tablespoon of the cheese, now take your wasabi paste and just put a little dot of it in the center of the mushroom (maybe about 1/4 of a teaspoon but you can use more or less, and fill each cap with your meat and veggie mixture. Top with remaining cheese. You can use more or less of the cheese.
  • 4. Put the mushrooms on a foil lines pan and just spray a little cooking spray over the foil, place filled mushrooms in pan, cover with more foil and bake for 20 to 25 minutes until tops are brown. Enjoy. I served with a nice garden salad.
  • 5. Note: You can eliminate the wasabi paste, but it truly gives the mushroom a nice flavor that is not horrible over the top with heat. Just a nice little burst and the spicy mustard makes it so full of flavor. My husband ate 3 of them!

These amazing stuffed portobello mushrooms are topped with marinara sauce, spinach, and crispy goat cheese medallions. A delicious and easy vegetarian main course that is sure to be a crowd pleaser! Substitute gluten free breadcrumbs to make gluten free. Note: While you can adjust this recipe to work for any size portobello mushroom, I recommend finding large portobello mushrooms that are roughly 4-inches wide and have slightly deeper caps for filling. This will make them easier to stuff.

8 large (4-inch wide) portobello mushrooms (stems trimmed (*see notes))
extra virgin olive oil
kosher salt and freshly ground black pepper
1 tablespoon extra virgin olive oil
1 shallot (finely sliced)
6 ounces baby spinach
kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 shallot (finely diced)
½ cup panko breadcrumbs
1 garlic clove (finely minced)
kosher salt and freshly ground black pepper
1½ cups (12 ounces) high-quality store-bought (or homemade) marinara sauce (I recommend Rao's brand (*see recipe notes))
4 ounce goat cheese (cold from the fridge)

Steps:

  • Roast the Portobello Mushrooms: Preheat the oven to 450°F (230°C) with a rack in the center position. Lightly spray or brush a standard sheet pan with olive oil. Distribute the portobello mushrooms, stem side up, on the baking sheet and brush or spray lightly with olive oil. Season with salt and pepper. Roast for 15 to 25 minutes (*this time will vary depending on the size of your mushrooms, check after 10 minutes or so to be sure), or until tender. If any moisture collects in the mushroom caps, carefully drain and discard. Set mushrooms aside on a large plate as you prepare the filling and crispy panko breadcrumb topping.
  • Prepare the Sautéed Spinach: Heat the oil in a large sauté pan over medium-low heat. Add the sliced shallots and sauté for 3 to 4 minutes, stirring frequently, or until soft and translucent. Add the baby spinach, increase the heat to medium-high. Sauté until just wilted, stirring continuously. Season with salt and pepper and set aside.
  • Prepare the Crispy Breadcrumb Topping: Melt the butter in a small sauté pan over medium heat. Once the butter is just beginning to sizzle, add the chopped shallots and a pinch of salt and cook for 1 to 2 minutes, stirring continuously. Add the panko breadcrumbs and minced garlic, and toast for three to four minutes, stirring constantly to prevent the breadcrumbs from burning, or until the breadcrumbs are very light golden in color. Transfer to a shallow bow and season to taste with salt and pepper.
  • Assembly: Reduce the oven temperature to 425°F (220°C). Line the same sheet pan with parchment paper (*note: if you have a baking rack that can be set within a baking sheet, I prefer to place the mushrooms on this, as it helps prevent the mushrooms from sitting in any juice that releases during cooking).
  • Distribute the roasted mushrooms, stem side up, on the sheet pan, in the center of the sheet pan so that they are just touching each other. Fill each mushroom with a large spoonful of marinara sauce. Distribute the sautéed spinach evenly among the mushrooms, spooning it on top of the sauce.
  • Slice the goat cheese into ½-inch thick slices (roughly half an ounce). It may crumble a bit, but do your best to keep it in a roughly round slice. Carefully press the goat cheese slices, on both sides, in the panko breadcrumb topping and place on top of each mushroom. Sprinkle the mushrooms with the remaining breadcrumb mixture.
  • Bake at 425°F (220°C) for 10 to 15 minutes or until heated through and the breadcrumbs are golden brown and goat cheese is just beginning to soften. Be careful to ensure that the breadcrumbs do not burn. Serve immediately.

5 to 10 strands saffron
2 cups white wine
2 cups lobster or crab meat, approximately 2 tails
1 3/4 cups seasoned bread crumbs
1/4 cup Parmesan and pecorino Romano, mixed
1 cup heavy cream
4 to 6 (1/8-inch thick) mozzarella slices

Steps:

  • Preheat oven for 300 degrees F.
  • Using a tablespoon, clean out the gills of portobello mushrooms, leaving only the caps. Chop up the stems and place aside to be later added to the stuffing.
  • Heat a medium saucepan, when hot add saffron, and toast quickly for only a few seconds. Immediately add the wine, and stir gently with a wooden spoon. Let wine and saffron mixture cook for about 2 to 5 minutes or until it begins to steam.
  • Add lobster meat and let simmer about 5 minutes; the meat will acquire an orange tint from the saffron. Stir in bread crumbs, mushroom stems, Parmesan and pecorino Romano, until thick. Add heavy cream and mix well. Spoon stuffing into the mushroom caps and cover with a slice of mozzarella.
  • Place on a baking sheet lined with aluminum foil and sprayed with non-stick spray. Bake for 10 to 15 minutes or until lightly browned.

Steps:

  • Preheat broiler.
  • In a small bowl stir together bread crumbs, Parmesan, parsley, and salt and pepper to taste. Cut off and discard mushroom stems. Put mushrooms, gill sides down, on a baking sheet and brush tops with 1/2 tablespoon oil. Broil mushrooms 2 to 3 inches from heat until golden, about 3 minutes. Turn mushrooms over and season with salt and pepper. Broil mushrooms 3 minutes more. Mound bread-crumb mixture onto mushroom centers and drizzle with remaining 1/2 tablespoon oil.   • Prep the mushrooms: Carefully remove stems from mushrooms, reserve and chop the stems for the stuffing. Place the mushrooms stem side down onto a baking pan. Bake for 10 to 15 minutes until the water leaks out of them. Remove from the oven and using paper towels soak up excess water. Set aside.
