Stuffed Poblano Peppers are loaded with southwest seasoned ground beef, rice, veggies, and cheese for a satisfying dinner with just a little bit of a kick! Everybody raves about this twist on classic stuffed peppers!

4-6 poblano peppers
2 tablespoons olive oil, divided
1 medium onion, chopped
1 pound lean ground beef
1 teaspoon kosher salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon chipotle chili powder
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
1 cup cooked rice
1 cup black beans, rinsed and drained
1 cup frozen corn
1 (15-ounce) can fire roasted tomatoes
1 1/2 cups grated Mexican cheese blend
1/4 cup fresh cilantro, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Slice the poblano peppers in half and remove the seeds and membrane. Rub with 1 tablespoon of the olive oil. Arrange on a baking sheet and roast for 10-12 minutes until softened.
  • While the peppers are baking, heat the remaining olive oil in a large skillet and saute the onion and garlic until soft, about 5 minutes.
  • Add the ground beef and spices, cooking and breaking up with a spoon until the meat is cooked through and browned.
  • Add the cooked rice, beans, corn and half of the cheese. Stir well, then divide evenly between the roasted poblano pepper halves. Sprinkle with the remaining cheese.
  • Bake for 10 minutes until heated all the way through and the cheese is melted on top. Sprinkle with chopped cilantro and serve.

Stuffed Poblano Peppers With Cream Cheese image

A recipe for earthy poblano peppers that have been roasted and stuffed with cream cheese and white cheddar cheese along with a mixture of seasonings, then grilled or baked until the insides are nice and gooey. One of my favorite stuffed pepper recipes.

4 poblano peppers
1 bit olive oil or 1 a cooking spray
8 ounces cream cheese, softened
4 ounces shredded white cheddar cheese
1 tablespoon spicy chili powder
1 teaspoon garlic powder
1/2 tablespoon ground cumin
1 lime, juice of
1 teaspoon chopped cilantro (to garnish)

Steps:

  • Get a grill going good and hot, to about medium-high heat.
  • Lightly oil the poblano peppers and set them on the grill. Close the lid. Flip the poblanos a few times throughout as you grill, about 10 minutes or so, until the poblano skins are nicely charred. Remove from heat and cool. Set them into a sealable baggie and allow them to steam. Cool, then remove and peel off the skins. (Alternatively, you can either oven roast or flame roast the poblano peppers. See the post discussion.).
  • Slit the poblanos up the side and open. Scoop out the insides.
  • In a mixing bowl, combine cream cheese, cheddar cheese, garlic powder, chili powder, cumin, and salt and pepper. Mix well.
  • Stuff the cheese into the poblano peppers and set them back onto the grill over indirect heat. Close the lid and cook about 10 minutes to allow the cheeses to melt. Alternatively, you can bake the cream cheese stuffed poblano peppers for 10 minutes or so in an oven at 375 degrees.
  • Remove and set onto serving plates. Squeeze lime juice over them and garnish with chopped cilantro.
  • Serve and enjoy!

1 cup crab cake mixture, reserved from Crab Cakes OR see recipe below
1/4 cup sour cream
1 (4-ounce) can diced green chiles
2 tablespoons chopped fresh cilantro leaves
4 poblano or green bell peppers, halved and seeded
1/2 cup shredded Monterey Jack cheese
12 ounces fresh lump crabmeat (or an equal amount of canned lump crabmeat)
2 tablespoons lowfat sour cream
2 1/4 teaspoons oats (regular or quick-cooking)
2 1/4 teaspoons seasoned dry bread crumbs
3/4 teaspoon Dijon mustard
1/2 teaspoon crab boil seasoning (recommended: Old Bay)
1/4 teaspoon dried oregano
Pinch ground black pepper
1/2 teaspoons olive oil

Steps:

  • Preheat oven to 400 degrees F. Coat a shallow roasting pan with cooking spray.
  • In a medium bowl, combine crab cake mixture, sour cream, green chiles, and cilantro.

4 poblano peppers
6 ounces cheddar cheese (shredded)
6 ounces mozzarella cheese (shredded)
Oil as needed

Steps:

  • Heat grill to medium heat and lightly oil the grates.
  • Grill the poblano peppers about 10-15 minutes, flipping often, until skins are blackened and charred. Set them into a plastic bag and seal, allowing them to steam and cool.
  • Once cooled, peel away the charred skins. They should come away easily. You do not have to achieve a perfect peel.
  • Slit each poblano pepper from stem to tip and scoop out the innards.
  • Stuff each poblano pepper with 1.5 ounces each of cheddar cheese and mozzarella cheese.
  • Set back onto the grill over indirect heat and cook about 6-8 minutes, or until cheese is nice and melted.
  • Serve!

I stuff these poblano peppers with a creamy ground beef mixture, but you can stuff these versatile peppers with chicken or cheese or vegetables. I scrape all the seeds out to remove most of the heat and then get creative with what goes inside. A simple bake in the oven.....and deliciousness is served.

3 poblano peppers
1 tbsp olive oil
1 lb ground beef
½ cup yellow onion (small dice)
2 tbsp taco seasoning (or 1 packet)
4 oz cream cheese (softened)
½ cup cheddar cheese (shredded)

Steps:

  • Preheat oven to 350*
  • Slice open the poblano peppers keeping the stem and top intact. Scrape all seeds out of the peppers and discard seeds. Place peppers in a casserole dish side by side and open side up. Bake for 15 minutes.
  • Thoroughly wash your hands with soap and warm water. Trust me!
  • In a large skillet over medium heat add the olive oil. Add diced onion and saute to soften for 3-5 minutes. Add ground beef and break into small pieces with a heavy wooden spoon. Brown ground beef for 5-7 minutes.
  • Once the ground beef is fully cooked and broken into small bits add in the taco seasoning and softened cream cheese to the skillet mixture. Mash the cream cheese into the beef, onion and taco seasoning. Mix all ingredients together until fully combined and creamy.
  • Turn heat off the stove top. Spoon the creamy ground beef mixture equally into the roasted and slightly soft poblano peppers. Sprinkle the shredded cheddar cheese equally over the stuffed peppers.
  • Bake the stuffed peppers in a 350* for 15 minutes. Once your peppers are fully cooked through, turn the oven to broil and watch the peppers for 1-2 minutes under the broiler.
  • Serve and enjoy.

1/2 Cup Black Beans
1/2 Canned or Frozen Corn Kernels (Drained)
2 Cups Salsa Verde (Red salsa is fine also)
4 Ounces Cream Cheese (Softened)
1 teaspoons Chili Powder
1 teaspoon Smoked Paprika

  • On medium heat, roast the poblano peppers over a flat griddle. Alternate sides every few minutes. They will become blistered all around. Place them in a large bowl and cover the bowl with plastic wrap immediately when done. By covering them in the bowl while they are hot, steam builds up inside and allows the skin to loosen up and peel off much easier.
  • In a large sauté pan, on medium heat, sauté the garlic and onion for about a minute. Add the mushrooms and sauté them with the onion and garlic for about 7 to 10 minutes. Turn off the heat and let the mushrooms cool while you prepare the peppers.
  • Peel the skin off then make one opening with a knife (from top to bottom) in the middle of the peppers. Remove the seeds if you don’t want them to be spicy. Place them in a baking dish lined with parchment paper.
  • Combine the breadcrumbs, mushrooms and cheese. Fill each pepper with the stuffing, making sure you don’t stuff them so much that they start to tear underneath. Return them to the baking dish with parchment paper.
