STUFFED PASTA SHELLS
You will probably have sauce left over and it is delicious even with ordinary pasta.

- Pre-heat oven to 350° (180° celsius)
- Start the sauce first, in a medium pot add olive oil, tomato puree, onion, carrot, water, salt and basil leaves (cut in half), stir and cook on medium heat, half covered till thickened, for approximately 30 minutes, stirring occasionally, once thickened add the cream, stir to combine and cook for about 1 minute, turn off heat.
- Cook pasta shells in boiling salted water till al dente. Drain and set aside.
- While sauce is cooking, in boiling salted water (1 inch of water (2 1/2 centimeters) cook spinach till very tender, drain, and let cool, once the spinach is cool, squeeze out excess moisture, then finely chop the spinach. Place cut spinach in a medium size bowl, add ricotta, egg, pinch of salt and nutmeg and then the parmesan cheese, mix gently together.
- In a medium size baking pan spread 1 1/2 to 2 ladles of sauce on the bottom, fill shells with ricotta mixture (I used about a heaping teaspoon and a bit per shell) and place in pan,( the mixture fills 24 shells and they fit perfectly in the pan, I used a an 11x7 " (28x18 cent.)). Top the shells with sauce, but don't cover completely, then sprinkle with the 2 tablespoons of parmesan cheese (or more or less, how desired), bake in pre-heated oven for 20 minutes. Serve immediately and Enjoy!

- Heat oil in large skillet set over medium-high heat. Crumble in ground chicken, season with salt and cook, stirring occasionally, for 5 to 8 min. until browned. Stir in Onion & Celery Mix, garlic and tomato paste and cook, stirring occasionally, for 3 to 5 min. until vegetables soften.
- Pour in tomatoes and bring to a boil then reduce heat to medium-low and simmer for 20 to 25 min. or until thickened. Stir in fresh basil and transfer half of the sauce (2 cups/ 500mL) into a greased 9 x 13 in. (3 L) baking dish.
- Meanwhile, cook the shells according to package directions. Stir ricotta with 3/4 cup (175 mL) Parmesan cheese, mozzarella cheese and goat cheese until combined. Stir in 2 tbsp (30 mL) chives, garlic and salt until blended.
- Divide cheese filling between cooked shells (about 1 tbsp/15 mL per shell) and arrange in prepared baking dish. Spoon reserved Bolognese sauce over top. Sprinkle with remaining 1/4 cup (60mL) Parmesan cheese, cover with foil and bake at 400°F (200°C) for 20 min. Remove foil and continue to bake, uncovered, for 10 min. or until filling is golden and bubbling. Garnish with remaining chives before serving.

- Preheat the oven to 375 degrees F. Coat a 9"x13" baking pan with cooking spray.
- Spread 1 1/2 cups of the marinara sauce in an even layer in the bottom of the pan.
- Place the ricotta cheese, 1 1/2 cups of mozzarella cheese, Italian seasoning, egg, salt, pepper and parmesan cheese in a bowl. Stir to combine.
- Fill each shell with the ricotta mixture and place in the baking dish.
- Spoon the remaining marinara sauce over the shells, then sprinkle the other 1 1/2 cups of cheese over the top.
- Cover the dish with foil. Bake for 20 minutes. Uncover the pan, then bake for an additional 10 minutes or until cheese is melted and starting to brown.
- Sprinkle with parsley, then serve.

- To make the bolognese, heat the oil in a wide ovenproof pan over a medium heat. Fry the onion, celery and carrot with some seasoning for 20 mins until soft and lightly golden. Tip in the beef mince, turn up the heat and fry, stirring regularly, for another 10 mins until the mince browns. Add the garlic, fry for a minute, then pour in the wine and bubble for a few mins more, scraping the pan to release any bits. Stir through the purée, bay leaves and tomatoes, with a canful of water. Simmer for 1½ hrs, covered for the first hour, then remove the lid and bubble until the tomatoes have broken down. Season with salt, pepper, the sugar and balsamic vinegar.
- Tip the pasta shells into a large heatproof bowl with a pinch of salt, and pour over a kettle of boiled water. Cover and leave to soften for 15-20 mins - they need to retain some firmness so you can fill them.
- Heat the oven to 200C/180C fan/gas 4 and drain the pasta. Use a fork to mash the mascarpone with the mozzarella, chopped basil, garlic and some black pepper in a bowl.
- The bolognese should be a little wetter than you'd like as the pasta shells will absorb some of the liquid as it bakes. Remove from the heat, giving it a final stir. Using a teaspoon, fill the pasta shells with some of the mascarpone mixture, pressing the mix in with your index finger. Nestle the shells into the sauce, filled-side up. Bake for 20-30 mins until the top is golden and bubbling, and the pasta is tender. Grate over some parmesan and finish with a few basil leaves.

- Preheat oven to 400 degrees F. Bring a large pot of salted water to a boil for the shells. Brown sirloin for the sauce in oil in a large saute pan over medium-high heat. Spoon off fat, add onion, celery, and carrot, and cook until soft, 5 minutes. Stir in tomato paste and garlic; cook 2 minutes, then add wine.
- Simmer until wine is reduced by half, then stir in tomatoes, milk, salt, basil, oregano, and pepper flakes. Cook 15 minutes, stirring occasionally; finish with mascarpone. Spoon 1/4 cup sauce into each of 8 individual ovenproof casserole dishes (or spread 2 cups sauce in one 3-qt. baking dish). Set dishes aside.
- Cook shells just until pliable, about 8 minutes (they will finish cooking in the oven). Drain, then plunge into ice water to stop the cooking; drain again and set aside.
- Combine ricotta , part-skin mozzarella, parmesan, parsley, eggs, and salt in a large bowl; stuff mixture into shells. Arrange shells in the prepared dishes on top of sauce, cut side down. Spoon remaining sauce over shells, top with fresh mozarella, and bake until cheese is melted and sauce is bubbly, 25-30 minutes. Let shells rest 10 minutes before serving.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 1/2 cups cooking water, then drain the pasta and rinse under cold water; set aside.
- Meanwhile, heat the olive oil in a large ovenproof skillet over high heat. Add the beef and cook, breaking up the meat, until browned, 5 minutes. Add the garlic; cook 1 minute. Reduce the heat to medium; add the crushed tomatoes, tomato paste, 1 cup of the reserved cooking water and 1/2 teaspoon salt. Let simmer while you stuff the shells, about 5 minutes, adding more cooking water if the sauce gets too thick.
- Preheat the broiler. Mix the ricotta, roasted peppers, egg white, 1 tablespoon each parsley and shredded cheese, 1/2 teaspoon salt and a few grinds of pepper in a bowl. Stuff 1 tablespoon of the mixture into each shell; arrange in the skillet seam-side up. Top with the remaining 2 tablespoons shredded cheese; broil until bubbling, 5 minutes. STUFFED PASTA SHELLS WITH HEARTY CABERNET BOLOGNESE SAUCE

- Hearty Cabernet Bolognese Sauce: In a large skillet, cook and stir sausage and onion over medium heat until sausage is browned. Stir in mushrooms and garlic and cook 3-5 min. more until mushrooms are tender, stirring occasionally. Remove skillet from heat. Stir in wine, scraping up any browned bits from the bottom of the pan. Return skillet to heat. Add drained tomatoes, tomato sauce, Italian seasoning, salt and pepper. Bring to boiling. Reduce heat and simmer, covered, 20 min. If desired, stir in whipping cream. Sprinkle with remaining 1/2 C. provolone before serving. Tips for cooking pasta shells: Use 3 qt. of water for every 4-8 oz. of pasta. Add about 1 T. kosher or sea salt to help bring out pasta's flavor. During first two minutes of cooking, gently stir shells so they don't stick together or to bottom of pan. Sauces can slide right off pasta coated in oil, so avoid using when cooking pasta. Test pasta's doneness a minute or two before the end of the cooking time recommended on the package. Rinse one shell under running water until cool enough to handle and give it a taste. It should have a firm and chewy texture - al dente. When pasta is done, rinse and drain as directed in recipe.
