BACON WRAPPED CHEESY STUFFED JALAPEñOS
Halved jalapeños stuffed with cream cheese, shredded cheese, paprika, and garlic and wrapped up with crispy bacon. If you like spicy, you will love these!

- Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
- Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
- Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.
BLUEZY'S STUFFED JALAPENOS WITH BACON
One of my favorite recipes! I love jalapenos and make these when nothing else hits the spot. Topped with sour cream or ranch dressing and chopped fresh chives, this is a great appetizer or snack. Serve with homemade sangria. Also great on the grill.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Place bacon in a skillet over medium heat, working in batches, and cook until bacon is translucent and still flexible, about 2 minutes per side. Set bacon aside.
- Trim membranes from jalapeno pepper halves to reduce heat. Rinse peppers and set aside.
- Place whipped cream cheese and Cheddar cheese into a bowl and mix until well blended; stir in Worcestershire sauce. Spoon cheese mixture into a pastry bag fitted with a large tip. Pipe the cheese filling generously into the pepper halves. Top each filled pepper with a precooked bacon strip and arrange onto prepared baking sheet.
- Bake in the preheated oven until cheese filling is bubbling and the bacon strips are lightly browned, 8 to 14 minutes. Serve hot.

STUFFED JALAPENOS TOPPED WITH BACON
This is a great appetizer and a hit at any party! They get eaten up quickly. You can't tell how hot a jalapeno is, no matter how good you clean them. It's fun to watch people as they take a bite, wondering if the pepper will "bite back" at them. I always make 38 peppers...mostly I double the recipe. I grow jalapenos in my garden, and when they are ready, I get my chili grill out and go to town! I will tell you, this recipe does take time to make. Usually, I will clean the jalapenos and place in a covered bowl in the fridge overnight. The next day I make the stuffing and cook them. You MUST wear rubber gloves to clean them! Believe me, I found out the hard way. First time I made them, I woke up in the middle of the night with my hands burning! If you do not heed my warning, soak your hands in a bowl of milk until the pain goes away. I cook my jalapenos in a chili grill so they cook upright. My grill holds 38 peppers. If you have any extra filling, freeze it. Next time you want to make peppers, you have the stuffing! I have tried different filling combination's, and this one seems to be the party favorite. Feel free to add your own filling ideas as there are a million possibilities.

- TO CLEAN THE PEPPERS-.
- Use jalapenos that are large and straight. Put on your rubber gloves and cut the tops off. To clean the inside I have found that a grapefruit knife works the best.Core out the seeds and scrape the inside. Try to get all the seeds out, especially at the tip. If there are any left inside, you will know it. Place them in the chili grill.
- Fry up the sausage, drain good, and while it's still hot, mix in the cream cheese, garlic, onions, cilantro and shredded cheese. Mix well.
- Poke a tiny hole in the bottom of the chili to let the grease out.
- Put in a pastry bag and squeeze it into the jalapenos.
- Cut bacon strips in thirds and lay on top of the chili. Secure with a toothpick. The toothpick holds the bacon and also stops the jalapeno from falling through when its cooked.
- TO COOK IN THE OVEN --
- Bake in oven (put a flat pan underneath to catch the drips)
- ON THE GRILL --
- cook with indirect heat (need a temp gauge)
- For spicier ones....cook 325° for 30 minutes.
- For not too spicy peppers...cook 325° for 45 minutes. The longer you cook them, the milder they get. Don't cook at a higher temp or the stuffing will cook out of them. When the bacon is done, the peppers are done.
BACON-WRAPPED STUFFED JALAPENOS
Sunday is grill-out day for my husband, Cliff, and these bacon-wrapped stuffed jalapenos are one of his specialties. We usually feature them at our annual Daytona 500 party. They disappear from the appetizer tray in no time.

- Make a lengthwise cut in each jalapeno, about 1/8 in. deep; remove seeds. Combine the sausage and cheese; stuff into jalapenos. Wrap each with a piece of bacon; secure with toothpicks., Grill, covered, over indirect medium heat for 36-40 minutes or until a thermometer reads 160°, turning once. Grill, covered, over direct heat for 1-2 minutes or until bacon is crisp.
