SMOKED STUFFED JALAPENO PEPPERS
Smoked stuffed jalapeno peppers are the ultimate taigate appetizer for your next gameday. Cheesy spicy bacony goodness!!

- Put on latex gloves and cut the top half off the pepper leaving the stem on peppers in half. Dice up the top halves of the jalapenos and set aside to mix in with the cheese mixture. Next use a teaspoon to scoop out the seeds and the inner white membrane of the jalapenos.
- Mix the cream cheese, shredded cheddar, Cotija, bbq sauce, dry rub and chives along with the diced jalapeno tops leftover until fully combined.
- Stuff the peppers with the cheese mix and wrap with a full slice of bacon. Secure with a toothpick. Refridgerate for 30 minutes
- Preheat Smoker to 250 Degrees F.
- Place the stuffed jalapeno peppers on the smoker and dust with dry rub. Cook for about 90 minutes until bacon is fully cooked.

Steps:
- Fry the sausage with the onion, rub, garlic and liquid smoke until the sausage is done. Drain well and let cool a bit. mix the sausage in a bowl with the cheese and cream cheese and set aside. Prepare smoker and set / adjust to 250 degrees or preheat oven to 300 degrees. You can either clean the jalapenos by cutting the stem end off and cleaning out the seeds and ribs and standing them in a pepper rack (recommended) or slice them in half lengthwise, removing the seeds and ribs and "canoeing" them. Stuff each pepper until filling is level with top edge of pepper. For vertical peppers lay one piece of bacon over the top of each and fasten with a toothpick and set them in the holes of a pepper roaster. For canoe style, lay a piece of bacon over the top of each and lay out on a baking sheet. Put into smoker and cook for 3-4 hours or bake in oven for 2-3 hours. At end of roasting time turn on broiler and broil long enough to crisp the bacon.

- Wash the jalapeños. Cut off the stems and remove the seeds and veins. Cut the peppers in half lengthwise so they become boats.

- Slice the jalapenos lengthwise. Using a spoon, remove the seeds and membrane. If using bell peppers, quarter them after they are seeded.
- Mix the cream cheese, monterey jack, chipotle powder and minced shallots. Fill the hollowed out portion of the peppers with the cheese mixture.

- Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F and add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F on the indirect side.
- Prep. Cut the tops off of the jalapeños. Remove the seeds and ribs from the interior of the jalapeños with a jalapeño corer. Or use the handle end of a small kitchen spoon to scrape the ribs and seeds from inside the jalapeños.
- Combine the cream cheese and cheddar cheese in a medium mixing bowl and blend well. Stuff the peppers with the cheese mixture.
- Cut the bacon slices in half crosswise. Wrap each one with 1/2 slice of bacon and secure the bacon with a toothpick.
